The Flan Pâtissier, the authentic parisian custard tart, is one of those simple, timeless desserts that everyone at home can agree on. In my house, it’s a family favorite—the one my children ask for again and again. Personally, I love it best for breakfast, served chilled with a hot cup of coffee or tea.
A Unique, Addictive Texture
What makes this flan so special is its texture: creamy and melting, yet firm enough to hold its shape. It’s almost addictive! This is the kind of cake you can eat with your fingers, grabbing a thick slice for a quick, indulgent snack without any need for fancy plates or ceremony.
Homemade Goodness (and Budget-Friendly!)
When made at home with everyday pantry staples, this custard tart—baked in a flaky puff pastry—is generous, satisfying, and very economical. It’s significantly more affordable than buying it at a Parisian bakery! Plus, it’s the perfect ally for busy mornings: you can easily prepare it in advance, and it keeps perfectly in the fridge for several days.
Variations: Make it Healthy or Keto
If you’re looking for a high-protein or healthier version, this recipe is incredibly versatile:
- The « Healthy » Twist: Replace part of the milk with Skyr or Greek yogurt and skip the pastry crust.
- Gluten-Free & Keto: Without the crust, it becomes naturally gluten-free. You can even make it Keto-friendly by replacing the sugar with Erythritol.
One Recipe, Endless Flavors
This classic base is a blank canvas. While vanilla is the traditional choice, feel free to experiment with:
- Orange Blossom or Lemon zest
- Chocolate or Coconut
Simple, generous, and adaptable, this homemade flan is a must-have for your daily routine.

-
Heat the milk with the scraped vanilla pod.

Meanwhile, whisk the eggs with the sugar and cornflour.
-
Pour the hot milk (after removing the pod) over the mixture, mix well and pour the mixture back into a saucepan and cook over low heat until you obtain a pastry cream.
-
Preheat the oven to 180°C (350°F). Line a deep-sided tart tin with puff pastry or shortcrust pastry. Pour in the custard mixture and bake for 45 minutes. If the custard is browning too quickly, cover it with aluminum foil.

Once out of the oven, let it rest for 4 hours in a cool place.
