Petite, j&rsquo;enviais la fille des boulangers car j&rsquo;imaginais qu&rsquo;elle pouvait manger des pains \u00e0 chocolat \u00e0 volont\u00e9. Tant et si bien que le premier m\u00e9tier que j&rsquo;ai souhait\u00e9 exercer \u00e9tait le m\u00e9tier de boulang\u00e8re. D\u00e9couvrez mon parcours qui m&rsquo;a permis d&rsquo;ouvrir un salon de th\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Un parcours scolaire sans faute :<\/h2>\n\n\n\n<p>El\u00e8ve plut\u00f4t studieuse et consciencieuse avec une ann\u00e9e d&rsquo;avance, mon parcours scolaire semble sans embuche. Lorsqu&rsquo;arrive la question de l&rsquo;orientation, c&rsquo;est une autre paire de manches. Il y a une trentaine d&rsquo;ann\u00e9es, devenir : p\u00e2tissi\u00e8re, cuisini\u00e8re ou boulang\u00e8re ne me vient m\u00eame pas \u00e0 l&rsquo;esprit. A l&rsquo;\u00e9poque , ces m\u00e9tiers sont \u00ab\u00a0r\u00e9serv\u00e9s\u00a0\u00bb aux \u00e9l\u00e8ves en difficult\u00e9. Je ne le r\u00e9alise pas encore mais la p\u00e2tisserie est une passion. Mon cours pr\u00e9f\u00e9r\u00e9 au coll\u00e8ge \u00e9tait le cours de cuisine de Mme Cloche en 6\u00e8me (au lyc\u00e9e Paul Bert de St Mand\u00e9). Et oui ! Les cours de travaux manuels comprenaient des cours de cuisine. Les activit\u00e9s manuelles me d\u00e9tendais, et je pense qu&rsquo;elles canalisaient mon stress et mes angoisses (qui n&rsquo;\u00e9taient pas encore exacerb\u00e9s). <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L&rsquo;amour de la p\u00e2tisserie :<\/h2>\n\n\n\n<p>A la maison, le petit plaisir de la semaine \u00e9tait le g\u00e2teau du dimanche. Avec mes fr\u00e8res et soeurs nous pouvions choisir notre petit g\u00e2teau individuel que mon papa allait chercher chez le boulanger. Personnellement, j&rsquo;avais un petit faible pour la religieuse au chocolat, ce qui sera \u00e0 l&rsquo;origine de mon obsession pour la p\u00e2te \u00e0 choux. Je pense que d\u00e8s l&rsquo;\u00e2ge de 13 ans j&rsquo;ai tent\u00e9 la p\u00e2te \u00e0 choux. J&rsquo;ai mis quelques ann\u00e9es avant de la ma\u00eetriser. Il n&rsquo;y avait pas encore internet et l&rsquo;acc\u00e8s aux recettes professionnelles \u00e9tait compliqu\u00e9. Je me rappelle avoir \u00e9t\u00e9 chez Gibert Jeune pour trouver un livre de CAP boulangerie et p\u00e2tisserie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le d\u00e9clic :<\/h2>\n\n\n\n<p>Bac en poche, je me lance dans le droit. Comme aimait \u00e0 le rappeler ma maman : \u00ab\u00a0le droit m\u00e8ne \u00e0 tout\u00a0\u00bb et ce n&rsquo;est pas aujourd&rsquo;hui que je vais la contredire. Malgr\u00e9 un double DEUG pass\u00e9 brillamment, je commence \u00e0 me renseigner pour changer de voie et devenir boulang\u00e8re. Entre temps, je rencontre mon futur mari. Mon changement d&rsquo;orientation ne devient plus une priorit\u00e9, voir ne devient plus un sujet. Apr\u00e8s un DEA en droit priv\u00e9, un mariage et 3 enfants, je r\u00e9ponds \u00e0 une annonce d&rsquo;\u00e9mission t\u00e9l\u00e9vis\u00e9e. L&rsquo;\u00e9mission s&rsquo;appelle \u00ab\u00a0<a href=\"https:\/\/www.senscritique.com\/serie\/Oui_Chef\/24899856\">oui chef<\/a>\u00a0\u00bb et r\u00e9v\u00e8lera un certain Cyril Lignac. Je suis convoqu\u00e9e pour participer au casting et je passe toutes les \u00e9tapes except\u00e9es la derni\u00e8re. J&rsquo;avais \u00e9t\u00e9 pourtant transparente sur le sujet. D\u00e8s le 1er jour de casting j&rsquo;avais bien compris que je n&rsquo;\u00e9tais pas forc\u00e9ment \u00e0 l&rsquo;aise avec l&rsquo;exposition m\u00e9diatique. Cette exp\u00e9rience a \u00e9t\u00e9 toutefois, une r\u00e9v\u00e9lation !! <\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Mon projet : ouvrir un salon de th\u00e9<\/h2>\n\n\n\n<p>Avant tout, m\u00e8re de famille et \u00e9pouse, je souhaitais concilier ma vie professionnelle et ma vie personnelle . je vais ouvrir un salon de th\u00e9. A l&rsquo;\u00e9poque, j&rsquo;ignore si c&rsquo;est encore le cas aujourd&rsquo;hui, un CAP p\u00e2tisserie \u00e9tait obligatoire pour produire et vendre des p\u00e2tisseries. En glanant des informations ici et l\u00e0, je d\u00e9cide dans un premier temps de passer mon CAP en candidate libre. En cas d&rsquo;\u00e9chec je m&rsquo;inscrirai dans une \u00e9cole. Je travaille dans un coll\u00e8ge \u00e0 mi-temps, ce qui me laisse du temps pour m&rsquo;entrainer. Je crois que mes enfants ont beaucoup appr\u00e9ci\u00e9 cette ann\u00e9e d&rsquo;\u00e9tude m\u00eame s&rsquo;il y a eu quelques loup\u00e9s. Apr\u00e8s une ann\u00e9e intensive en pains au chocolat, tartes et entremets je r\u00e9ussis \u00e0 d\u00e9crocher mon CAP. Je suis tellement fi\u00e8re et je sens que mes parents le sont, malgr\u00e9 les quelques r\u00e9ticences du d\u00e9but.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L&rsquo;aboutissement d&rsquo;un r\u00eave :<\/h2>\n\n\n\n<p>CAP en poche, mon projet se concr\u00e9tise mais suis-je vraiment pr\u00eate ? J&rsquo;ai effectu\u00e9 des stages de quelques jours dans plusieurs p\u00e2tisseries pour pr\u00e9parer mon examen mais aurai-je la condition physique et mentale sur la dur\u00e9e ? Avant de me lancer je souhaitai avoir une v\u00e9ritable exp\u00e9rience pour conna\u00eetre toutes les facettes du m\u00e9tier : responsable rayon boulangerie Monoprix pendant 1 an, 3 ans dans un restaurant-salon de th\u00e9 parisien. Enfin, je me sens pr\u00eate. Apr\u00e8s 6 mois de recherche, mon associ\u00e9 (mon frangin pr\u00e9f\u00e9r\u00e9) et moi, trouvons un local qui nous convient dans le 12\u00e8me \u00e0 Paris. Il a fallu quelques petits travaux, l&rsquo;\u00e9laboration de la carte et en Ao\u00fbt 2016, nous avons pu ouvrir \u00ab\u00a0Le Jolant\u00a0\u00bb. Des soupes, des  tartes, un plat du jour diff\u00e9rent chaque jour, des p\u00e2tisseries et un brunch au top, le marathon commence. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Bilan de l&rsquo;ouverture de mon salon de th\u00e9 :<\/h2>\n\n\n\n<p>Le rythme est tr\u00e8s soutenu, 70 heures par semaine, travail le week-end. Vive le m\u00e9tier passion o\u00f9 l&rsquo;on ne compte pas ses heures pour un salaire minimum !!! Exp\u00e9rience \u00e9puisante mais gratifiante, formatrice mais tr\u00e8s stressante et exp\u00e9rience unique et in\u00e9dite : le COVID. Nous nous \u00e9tions fix\u00e9s des objectifs que nous avons atteint en 2 ans et beaucoup de retours positifs, notamment sur ma <a href=\"http:\/\/sommerfoodle.com\/recipe\/tarte-aux-fruits-meringuees\/\">fameuse tarte au citron<\/a>. Je suis tr\u00e8s heureuse d&rsquo;avoir \u00e9t\u00e9 au bout de mon r\u00eave. Si je ne l&rsquo;avais pas fait, je l&rsquo;aurai regrett\u00e9. Ouvrir mon salon de th\u00e9 m&rsquo;a permis d&rsquo;apprendre beaucoup sur moi, mes capacit\u00e9s et surtout mes limites. Apr\u00e8s 6 ans, l&rsquo;aventure a pris fin volontairement : l&rsquo;envie de quitter Paris, de vivre de nouvelles exp\u00e9riences et de reprendre un rythme de vie raisonnable.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Mon conseil :<\/h2>\n\n\n\n<p>Suivez votre petite voix int\u00e9rieure mais pr\u00e9parez-vous ! Je ne regrette absolument pas cette exp\u00e9rience. Si vous voulez vous lancer dans cette aventure, rencontrez des gens du m\u00e9tier, faites des stages.
