Mais quand une amie m&rsquo;a demand\u00e9 un tiramisu pour ses 40 ans en me pr\u00e9cisant qu&rsquo;elle suivait un r\u00e9gime c\u00e9tog\u00e8ne, j&rsquo;ai relev\u00e9 le d\u00e9fi. En tant que p\u00e2tissi\u00e8re, j&rsquo;adapte r\u00e9guli\u00e8rement mes recettes pour les r\u00e9gimes sans gluten \u2014 mais le keto demande un peu plus d&rsquo;attention, notamment sur les textures.<\/p>\n\n\n\n<p>Le probl\u00e8me avec les desserts keto, c&rsquo;est que les substitutions changent tout : la farine d&rsquo;amande ne se comporte pas comme la farine de bl\u00e9, l&rsquo;\u00e9rythritol ne fond pas comme le sucre. Apr\u00e8s plusieurs essais, j&rsquo;ai obtenu un tiramisu cr\u00e9meux, bien mont\u00e9, qui a fait l&rsquo;unanimit\u00e9 \u00e0 table \u2014 y compris aupr\u00e8s des enfants qui ne suivent aucun r\u00e9gime particulier. C&rsquo;est \u00e7a qui m&rsquo;a convaincue : une recette keto r\u00e9ussie ne doit pas se voir.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi ce tiramisu fonctionne sans sucre ni farine<\/h2>\n\n\n\n<p>Le tiramisu est naturellement riche en mascarpone et en cr\u00e8me \u2014 ce qui en fait un dessert d\u00e9j\u00e0 bien adapt\u00e9 au r\u00e9gime c\u00e9tog\u00e8ne. Les deux substitutions principales sont simples :<\/p>\n\n\n\n<p><strong>La poudre d&rsquo;amande<\/strong> remplace la farine dans le biscuit. Elle apporte du moelleux et une l\u00e9g\u00e8re saveur noisette qui se marie tr\u00e8s bien avec le caf\u00e9 et le cacao. Ce biscuit est d&rsquo;ailleurs r\u00e9utilisable pour d&rsquo;autres desserts keto \u2014 je l&rsquo;utilise aussi dans mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/framboisier-sans-sucre\/\">framboisier sans sucre<\/a>.<\/p>\n\n\n\n<p><strong>L&rsquo;\u00e9rythritol<\/strong> remplace le sucre. C&rsquo;est l&rsquo;\u00e9dulcorant que je pr\u00e9f\u00e8re pour cette recette : il n&rsquo;a pas de go\u00fbt parasite contrairement \u00e0 la st\u00e9via, et il supporte bien la cuisson. Son seul d\u00e9faut \u2014 il se dissout moins facilement que le sucre. Pour la cr\u00e8me, je le fais fondre \u00e0 feu doux dans la cr\u00e8me liquide avant de monter le tout. Pour le biscuit, je le fouette longuement avec les jaunes d&rsquo;\u0153ufs jusqu&rsquo;\u00e0 ce que le m\u00e9lange blanchisse.<\/p>\n\n\n\n<p>\u00c0 \u00e9viter absolument : les \u00e9dulcorants liquides dans la cr\u00e8me ou dans le biscuit. Ils modifient la texture et emp\u00eachent la cr\u00e8me de monter correctement.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter pour un tiramisu keto r\u00e9ussi<\/h2>\n\n\n\n<p>C&rsquo;est l\u00e0 que l&rsquo;exp\u00e9rience fait la diff\u00e9rence \u2014 j&rsquo;en ai fait quelques-unes avant d&rsquo;arriver au bon r\u00e9sultat.<\/p>\n\n\n\n<p><strong>Ne pas sous-fouetter les blancs en neige.<\/strong> Le biscuit keto tient uniquement gr\u00e2ce aux blancs \u2014 sans farine pour structurer la p\u00e2te, des blancs mal mont\u00e9s donnent un biscuit plat et dense. On fouette jusqu&rsquo;\u00e0 obtenir des becs fermes, pas souples.<\/p>\n\n\n\n<p><strong>Ne pas imbiber trop g\u00e9n\u00e9reusement le biscuit.<\/strong> La poudre d&rsquo;amande absorbe beaucoup plus vite que le biscuit cuill\u00e8re classique. Un passage rapide au pinceau suffit \u2014 si le biscuit est trop imbib\u00e9, il se d\u00e9sint\u00e8gre au montage.<\/p>\n\n\n\n<p><strong>Laisser refroidir le biscuit compl\u00e8tement avant le montage.<\/strong> Un biscuit encore ti\u00e8de fait fondre la cr\u00e8me au mascarpone. Patience \u2014 au moins 30 minutes \u00e0 temp\u00e9rature ambiante, ou 10 minutes au r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<p><strong>Ne pas monter la cr\u00e8me dans un bol ti\u00e8de.<\/strong> Le mascarpone et la cr\u00e8me liquide doivent \u00eatre tr\u00e8s froids, et le bol id\u00e9alement pass\u00e9 au cong\u00e9lateur 5 minutes avant. Une cr\u00e8me qui tranche ou qui reste liquide, c&rsquo;est presque toujours une question de temp\u00e9rature.<\/p>\n\n\n\n<p><strong>Respecter le temps de repos.<\/strong> 4 heures minimum au r\u00e9frig\u00e9rateur, une nuit c&rsquo;est encore mieux. Le tiramisu a besoin de ce temps pour que les saveurs se d\u00e9veloppent et que la cr\u00e8me se tienne parfaitement \u00e0 la d\u00e9coupe.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes et adaptations<\/h2>\n\n\n\n<p><strong>Version sans caf\u00e9 :<\/strong> remplacez le caf\u00e9 par du th\u00e9 matcha dilu\u00e9 ou du jus de fruits rouges sans sucre ajout\u00e9. La version fruits rouges est particuli\u00e8rement appr\u00e9ci\u00e9e des enfants.<\/p>\n\n\n\n<p><strong>Version plus l\u00e9g\u00e8re en mati\u00e8res grasses :<\/strong> remplacez la moiti\u00e9 du mascarpone par du fromage blanc entier. La texture sera un peu moins dense mais toujours cr\u00e9meuse.<\/p>\n\n\n\n<p><strong>\u00c9dulcorant de substitution :<\/strong> si vous n&rsquo;avez pas d&rsquo;\u00e9rythritol, le xylitol fonctionne bien. La st\u00e9via est possible mais son pouvoir sucrant est beaucoup plus \u00e9lev\u00e9 \u2014 utilisez-en tr\u00e8s peu et go\u00fbtez au fur et \u00e0 mesure. Pour le sirop au caf\u00e9, j&rsquo;utilise de l&rsquo;\u00e9rythritol liquide ou quelques gouttes de st\u00e9via liquide \u2014 pas d&rsquo;aspartame dont je pr\u00e9f\u00e8re \u00e9viter l&rsquo;usage au quotidien.<\/p>\n\n\n\n<p>Si vous aimez les desserts keto bien faits, jetez un \u0153il \u00e0 mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/cake-marbre-cetogene\/\">cake marbr\u00e9 c\u00e9tog\u00e8ne<\/a> \u2014 m\u00eame logique de substitution, m\u00eame r\u00e9sultat bluffant.
