Pas le plus spectaculaire visuellement \u2014 mais celui qui dispara\u00eet le plus vite. Sa texture est \u00e0 mi-chemin entre le fondant classique et le moelleux : dense, humide, intens\u00e9ment chocolat\u00e9, avec une cro\u00fbte l\u00e9g\u00e8rement craquante en surface. Il a ce go\u00fbt de fait-maison qu&rsquo;on ne retrouve pas dans les versions industrielles.<\/p>\n\n\n\n<p>Ce que j&rsquo;aime dans cette recette, c&rsquo;est qu&rsquo;elle se fait en un seul r\u00e9cipient \u2014 pas de robot, pas de batteur, pas de vaisselle en pagaille. Id\u00e9ale un soir de semaine quand l&rsquo;envie de chocolat est l\u00e0 mais le temps, non.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que le fondant baulois ?<\/h2>\n\n\n\n<p>Le fondant baulois est une sp\u00e9cialit\u00e9 de La Baule, en Loire-Atlantique. C&rsquo;est un g\u00e2teau au chocolat tr\u00e8s dense et humide, cuit \u00e0 basse temp\u00e9rature pour garder un c\u0153ur fondant. Il se distingue du moelleux classique par sa texture plus compacte et son go\u00fbt chocolat tr\u00e8s prononc\u00e9 \u2014 il ne contient quasiment pas de farine, ce qui lui donne son caract\u00e8re unique.<\/p>\n\n\n\n<p>Il ne faut pas le confondre avec le fondant au chocolat coulant (qui a un c\u0153ur liquide) \u2014 le fondant baulois est uniform\u00e9ment fondant, de la cro\u00fbte jusqu&rsquo;au centre.<\/p>\n\n\n\n<p>Si tu aimes les desserts au chocolat fondants, jette aussi un \u0153il \u00e0 mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/fondant-au-chocolat-vegan-et-sans-gluten\/\">fondant au chocolat v\u00e9gane et sans gluten<\/a> pour une version sans beurre ni \u0153uf, ou \u00e0 ma <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/tarte-chocolat-au-lait-noisettes-caramelisees-2\/\">tarte chocolat au lait noisettes caram\u00e9lis\u00e9es<\/a> pour une version plus festive.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter le fondant baulois ?<\/h2>\n\n\n\n<p><strong>Version moins sucr\u00e9e<\/strong> R\u00e9duis le sucre de 20% et utilise un chocolat \u00e0 70% de cacao minimum. Le go\u00fbt chocolat est plus intense et moins \u00e9c\u0153urant \u2014 c&rsquo;est ma version pr\u00e9f\u00e9r\u00e9e.<\/p>\n\n\n\n<p><strong>Version avec caramel<\/strong> Incorpore deux cuill\u00e8res \u00e0 soupe de <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/caramel-beurre-sale\/\">caramel au beurre sal\u00e9<\/a> dans la p\u00e2te avant d&rsquo;enfourner. Le mariage chocolat-caramel est parfait et apporte une note sal\u00e9e tr\u00e8s agr\u00e9able.<\/p>\n\n\n\n<p><strong>Version sans gluten<\/strong> Remplace la farine par de la f\u00e9cule de ma\u00efs dans les m\u00eames proportions \u2014 la texture est quasi identique car la quantit\u00e9 de farine est d\u00e9j\u00e0 tr\u00e8s faible dans cette recette.<\/p>\n\n\n\n<p><strong>Version individuelle<\/strong> Verse la p\u00e2te dans des ramequins individuels et r\u00e9duis le temps de cuisson \u00e0 20-25 minutes. Plus pratique pour servir et visuellement plus \u00e9l\u00e9gant pour un d\u00eener.<\/p>\n\n\n\n<p><strong>Version plus intense<\/strong> Ajoute une cuill\u00e8re \u00e0 caf\u00e9 de caf\u00e9 soluble dans la p\u00e2te \u2014 il ne se sent pas directement mais il renforce le go\u00fbt chocolat de fa\u00e7on spectaculaire. Et pour encore plus de gourmandise, mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/entremet-au-chocolat-sans-sucre\/\">entremet au chocolat sans sucre<\/a> pousse le concept encore plus loin.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter pour un fondant baulois r\u00e9ussi<\/h2>\n\n\n\n<p><strong>Cuire \u00e0 temp\u00e9rature trop \u00e9lev\u00e9e<\/strong> C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente. Le fondant baulois cuit \u00e0 basse temp\u00e9rature \u2014 entre 150\u00b0 et 160\u00b0C maximum. Une temp\u00e9rature trop \u00e9lev\u00e9e donne un g\u00e2teau sec et craquel\u00e9, pas fondant. R\u00e9siste \u00e0 la tentation de monter le four pour acc\u00e9l\u00e9rer la cuisson.<\/p>\n\n\n\n<p><strong>Trop cuire<\/strong> Le fondant baulois doit sembler encore l\u00e9g\u00e8rement tremblotant au centre quand tu sors du four \u2014 il va continuer \u00e0 cuire hors du four et se figer en refroidissant. Si tu attends qu&rsquo;il soit compl\u00e8tement ferme au centre, il sera trop sec \u00e0 la d\u00e9gustation.<\/p>\n\n\n\n<p><strong>Le couper chaud<\/strong> Laisse-le refroidir compl\u00e8tement avant de couper \u2014 id\u00e9alement 2 heures \u00e0 temp\u00e9rature ambiante ou toute une nuit au r\u00e9frig\u00e9rateur. Chaud, il s&rsquo;effondre \u00e0 la d\u00e9coupe. Froid, la tranche est nette et la texture parfaite.<\/p>\n\n\n\n<p><strong>Ne pas utiliser un bon chocolat<\/strong> Le fondant baulois n&rsquo;a que tr\u00e8s peu d&rsquo;ingr\u00e9dients \u2014 la qualit\u00e9 du chocolat fait toute la diff\u00e9rence. Utilise un chocolat de couverture ou un chocolat p\u00e2tissier \u00e0 60-70% de cacao minimum. Le chocolat de supermarch\u00e9 bas de gamme donne un r\u00e9sultat plat et sans relief.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un g\u00e2teau au chocolat qui ne demande qu&rsquo;un seul r\u00e9cipient et qui dispara\u00eet en quelques minutes \u2014 c&rsquo;est la d\u00e9finition du fondant baulois.
