Et invariablement, il en reste. Deux, trois galettes qui attendent au r\u00e9frig\u00e9rateur sans destination claire.<\/p>\n\n\n\n<p>C&rsquo;est comme \u00e7a que j&rsquo;ai commenc\u00e9 \u00e0 faire des chips de bl\u00e9 noir. Une id\u00e9e n\u00e9e d&rsquo;un fond de pile, et devenue depuis un incontournable de l&rsquo;ap\u00e9ro \u00e0 la maison.<\/p>\n\n\n\n<p>Ces chips sont sans gluten, v\u00e9ganes dans leur version originale, et ne demandent pratiquement aucun travail. Dix minutes au four, quelques \u00e9pices, et vous avez quelque chose de vraiment original \u00e0 proposer avec le houmous ou les rillettes de poisson.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Deux fa\u00e7ons de les pr\u00e9parer<\/h2>\n\n\n\n<p>Si vous avez des galettes en surplus, c&rsquo;est la recette parfaite pour ne rien gaspiller. Une ou deux galettes suffisent pour une belle poign\u00e9e de chips.<\/p>\n\n\n\n<p>Si vous partez de z\u00e9ro, pas de probl\u00e8me :<a href=\"https:\/\/sommerfoodle.com\/recipe\/pate-a-galettes-de-sarrasin\/\" type=\"recipe\" id=\"1565\"> la p\u00e2te \u00e0 galettes <\/a>se pr\u00e9pare la veille sans aucune technique particuli\u00e8re. Je vous propose deux versions dans la fiche recette ci-dessous : la recette traditionnelle bretonne (juste farine, eau et sel, enti\u00e8rement vegane) et ma version personnelle avec \u0153ufs et lait, un peu plus riche et plus facile \u00e0 travailler \u00e0 la po\u00eale.<\/p>\n\n\n\n<p>Si vous \u00eates press\u00e9s, les galettes toutes pr\u00eates du commerce fonctionnent tr\u00e8s bien. Choisissez-les bio et sans additif, on en trouve facilement en grande surface ou en magasin bio.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi ces chips m\u00e9ritent leur place \u00e0 l&rsquo;ap\u00e9ro<\/h2>\n\n\n\n<p>Le sarrasin a un go\u00fbt l\u00e9g\u00e8rement rustique, avec une petite note de noisette, qui s&rsquo;accorde bien avec tout ce qui est cr\u00e9meux : <a href=\"https:\/\/sommerfoodle.com\/recipe\/houmous\/\" type=\"recipe\" id=\"3185\">houmous<\/a>, <a href=\"https:\/\/sommerfoodle.com\/recipe\/caviar-daubergine-maison\/\" type=\"recipe\" id=\"1821\">caviar d&rsquo;aubergine<\/a>, guacamole, rillettes de poisson. La texture fine des chips fait un beau contraste avec les dips onctueux.<\/p>\n\n\n\n<p>Et puis il y a l&rsquo;argument pratique : elles se conservent 5 \u00e0 7 jours dans une bo\u00eete herm\u00e9tique \u00e0 temp\u00e9rature ambiante. Vous pouvez les pr\u00e9parer bien \u00e0 l&rsquo;avance, les glisser dans un sachet transparent pour en faire un cadeau DIY, ou simplement avoir toujours quelque chose \u00e0 grignoter sous la main.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes d&rsquo;assaisonnement<\/h2>\n\n\n\n<p>La base neutre du sarrasin s&rsquo;adapte \u00e0 beaucoup de directions. Quelques id\u00e9es pour changer de la fleur de sel classique :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Paprika fum\u00e9 + ail en poudre<\/strong> pour une version plus relev\u00e9e<\/li>\n\n\n\n<li><strong>Cumin + coriandre<\/strong> pour un accord avec le houmous<\/li>\n\n\n\n<li><strong>Herbes de Provence + zeste de citron<\/strong> pour une version fra\u00eeche et l\u00e9g\u00e8re<\/li>\n\n\n\n<li><strong>Parmesan r\u00e2p\u00e9 + romarin<\/strong> pour une version plus gourmande (qui ne sera plus vegane)<\/li>\n<\/ul>\n\n\n\n<p>L&rsquo;astuce : assaisonnez apr\u00e8s avoir badigeonn\u00e9 d&rsquo;huile, et pas avant, pour que les \u00e9pices adh\u00e8rent bien \u00e0 la surface.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Trop d&rsquo;huile.<\/strong> C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente. Un exc\u00e8s d&rsquo;huile d&rsquo;olive ramollit les chips au lieu de les croustiller. Un simple passage de pinceau suffit, l\u00e9ger et r\u00e9gulier.<\/p>\n\n\n\n<p><strong>Les sortir trop t\u00f4t du four.<\/strong> \u00c0 la sortie du four, les chips semblent encore un peu souples. C&rsquo;est normal : elles croustillent en refroidissant sur la plaque. Laissez-les reposer 5 minutes avant d&rsquo;y toucher.<\/p>\n\n\n\n<p><strong>Utiliser des galettes encore humides.<\/strong> Si vos galettes de sarrasin sortent du r\u00e9frig\u00e9rateur, \u00e9pongez-les l\u00e9g\u00e8rement avec du papier absorbant avant de les d\u00e9couper. L&rsquo;humidit\u00e9 r\u00e9siduelle allonge le temps de cuisson et nuit au croustillant.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ces chips ont une fa\u00e7on de dispara\u00eetre tr\u00e8s vite une fois pos\u00e9es sur la table.
