J&rsquo;ai longtemps gard\u00e9 en m\u00e9moire ces quatre-quarts industriels en barres, omnipr\u00e9sents dans les go\u00fbters d&rsquo;enfance \u2014 pratiques, mais pas franchement m\u00e9morables. Certains restent de bonne composition, comme ceux de <a href=\"https:\/\/www.bonne-maman.com\/blogs\/recipe\/quatre-quarts-pur-beurre\">Bonne Maman<\/a>, mais ce n&rsquo;est pas ce que je cherche \u00e0 reproduire.<\/p>\n\n\n\n<p>Ce qui m&rsquo;a r\u00e9concili\u00e9e avec le quatre-quarts, c&rsquo;est la version \u00e0 l&rsquo;huile d&rsquo;olive. Sans beurre, la texture change \u2014 elle devient plus l\u00e9g\u00e8re, plus humide, et le g\u00e2teau se conserve bien mieux plusieurs jours. L&rsquo;huile d&rsquo;olive apporte un parfum d\u00e9licat qui dispara\u00eet presque \u00e0 la cuisson, laissant juste une rondeur en bouche qu&rsquo;on n&rsquo;a pas avec un g\u00e2teau au beurre classique.<\/p>\n\n\n\n<p>C&rsquo;est devenu le g\u00e2teau que je pr\u00e9pare en 10 minutes quand j&rsquo;ai des \u0153ufs \u00e0 \u00e9couler, quand les enfants rentrent \u00e0 l&rsquo;improviste, ou quand je veux quelque chose de simple \u00e0 emporter pour une randonn\u00e9e en Andorre.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi remplacer le beurre par de l&rsquo;huile d&rsquo;olive ?<\/h2>\n\n\n\n<p>La substitution beurre \u2192 huile d&rsquo;olive dans un quatre-quarts n&rsquo;est pas seulement une question de l\u00e9g\u00e8ret\u00e9. Elle change vraiment le g\u00e2teau :<\/p>\n\n\n\n<p><strong>La texture est plus moelleuse.<\/strong> L&rsquo;huile reste liquide \u00e0 temp\u00e9rature ambiante, contrairement au beurre qui fige. Le r\u00e9sultat : un g\u00e2teau qui reste tendre m\u00eame apr\u00e8s deux ou trois jours \u2014 ce que le beurre ne permet pas toujours.<\/p>\n\n\n\n<p><strong>La conservation est meilleure.<\/strong> Un quatre-quarts \u00e0 l&rsquo;huile d&rsquo;olive se conserve facilement 4 \u00e0 5 jours \u00e0 temp\u00e9rature ambiante, envelopp\u00e9 dans du film alimentaire. Pratique pour le pr\u00e9parer la veille d&rsquo;un pique-nique ou d&rsquo;un voyage.<\/p>\n\n\n\n<p><strong>Le go\u00fbt est plus neutre, donc plus adaptable.<\/strong> Le beurre a une saveur prononc\u00e9e qui oriente le g\u00e2teau. L&rsquo;huile d&rsquo;olive, surtout une huile douce et fruit\u00e9e, laisse plus de place aux ar\u00f4mes qu&rsquo;on ajoute \u2014 zestes d&rsquo;agrumes, vanille, fleur d&rsquo;oranger.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter pour un quatre-quarts r\u00e9ussi<\/h2>\n\n\n\n<p><strong>Ne pas sous-fouetter les \u0153ufs avec le sucre.<\/strong> C&rsquo;est l&rsquo;\u00e9tape cl\u00e9. Il faut fouetter jusqu&rsquo;\u00e0 ce que le m\u00e9lange blanchisse et double de volume \u2014 au moins 3 \u00e0 4 minutes au batteur \u00e9lectrique. C&rsquo;est ce qui donne la l\u00e9g\u00e8ret\u00e9 au g\u00e2teau, pas la levure.<\/p>\n\n\n\n<p><strong>Ne pas utiliser une huile d&rsquo;olive trop forte.<\/strong> Une huile fruit\u00e9e et douce convient parfaitement. Une huile de premi\u00e8re pression \u00e0 froid tr\u00e8s poivr\u00e9e ou am\u00e8re va dominer le go\u00fbt du g\u00e2teau. Si vous n&rsquo;avez que \u00e7a sous la main, m\u00e9langez moiti\u00e9 huile d&rsquo;olive, moiti\u00e9 huile de tournesol.<\/p>\n\n\n\n<p><strong>Ne pas ouvrir le four avant 35 minutes.<\/strong> Le four est la tentation num\u00e9ro un \u2014 r\u00e9sistez. Un courant d&rsquo;air fait retomber la p\u00e2te avant qu&rsquo;elle ne soit fix\u00e9e. On attend que les bords soient bien dor\u00e9s.<\/p>\n\n\n\n<p><strong>Ne pas oublier l&rsquo;astuce du bomb\u00e9.<\/strong> Avant d&rsquo;enfourner, d\u00e9poser un fin filet de beurre mou au centre de la p\u00e2te sur toute la longueur du moule. Pendant la cuisson, \u00e7a cr\u00e9e une ligne de fuite qui permet au g\u00e2teau de s&rsquo;ouvrir r\u00e9guli\u00e8rement et de former le beau bomb\u00e9 caract\u00e9ristique des cakes maison. Sans \u00e7a, le g\u00e2teau se fissure de fa\u00e7on al\u00e9atoire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment personnaliser ce quatre-quarts<\/h2>\n\n\n\n<p>La p\u00e2te de base est volontairement neutre \u2014 c&rsquo;est sa force. Quelques d\u00e9clinaisons faciles :<\/p>\n\n\n\n<p><strong>Version citron :<\/strong> ajoutez le zeste d&rsquo;un citron non trait\u00e9 dans la p\u00e2te. \u00c0 la sortie du four, imbibez le g\u00e2teau encore chaud avec un sirop citron (50ml de jus de citron + 50g de sucre chauff\u00e9s ensemble). Le r\u00e9sultat est fondant et parfum\u00e9.<\/p>\n\n\n\n<p><strong>Version orange-fleur d&rsquo;oranger :<\/strong> zeste d&rsquo;orange + une cuill\u00e8re \u00e0 soupe de fleur d&rsquo;oranger dans la p\u00e2te. Parfait pour le petit-d\u00e9jeuner avec un th\u00e9.<\/p>\n\n\n\n<p><strong>Version p\u00e9pites de chocolat :<\/strong> ajoutez 100g de p\u00e9pites de chocolat noir dans la p\u00e2te juste avant d&rsquo;enfourner. Les enfants valident syst\u00e9matiquement.
