Celle-ci, je la faisais au Jolant \u2014 mon salon de th\u00e9-restaurant dans le 12\u00e8me arrondissement de Paris \u2014 et je la refais encore aujourd&rsquo;hui dans ma cuisine andorrane, avec exactement les m\u00eames proportions et le m\u00eame plaisir.<\/p>\n\n\n\n<p>Ce qui me plaisait d\u00e9j\u00e0 \u00e0 l&rsquo;\u00e9poque, c&rsquo;est son \u00e9quilibre : la sauce soja apporte le sel et la profondeur umami, la moutarde le caract\u00e8re, le ketchup la rondeur acidul\u00e9e, le miel la caram\u00e9lisation dor\u00e9e. R\u00e9sultat : une peau laqu\u00e9e, une chair qui se d\u00e9tache toute seule, et une sauce nappante qui parfume toute la cuisine pendant la cuisson. Les clients reconnaissaient ce plat avant m\u00eame d&rsquo;\u00eatre assis.<\/p>\n\n\n\n<p>C&rsquo;est une recette de d\u00e9butant au sens technique \u2014 mais de cuisini\u00e8re confirm\u00e9e au sens du go\u00fbt. Et c&rsquo;est exactement ce que j&rsquo;aime.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi cette marinade fonctionne si bien ?<\/h2>\n\n\n\n<p>La cl\u00e9, c&rsquo;est l&rsquo;\u00e9quilibre sucr\u00e9-sal\u00e9-relev\u00e9. Chaque ingr\u00e9dient joue un r\u00f4le pr\u00e9cis :<\/p>\n\n\n\n<p><strong>La sauce soja<\/strong> sale et apporte de la profondeur. Elle p\u00e9n\u00e8tre la chair pendant le temps de repos et \u00e9vite d&rsquo;avoir \u00e0 saler s\u00e9par\u00e9ment.<\/p>\n\n\n\n<p><strong>Le miel<\/strong> caram\u00e9lise \u00e0 la chaleur du four et donne cette belle couleur dor\u00e9e et ce gla\u00e7age l\u00e9g\u00e8rement collant qui fait saliver. C&rsquo;est lui aussi qui contrebalance l&rsquo;amertume de la moutarde.<\/p>\n\n\n\n<p><strong>La moutarde<\/strong> tient la marinade en \u00e9mulsion et apporte du piquant sans agressivit\u00e9 \u2014 surtout si vous choisissez une moutarde \u00e0 l&rsquo;ancienne pour les grains.<\/p>\n\n\n\n<p><strong>Le ketchup<\/strong> peut surprendre, mais il apporte une acidit\u00e9 douce et une rondeur tomat\u00e9e qui arrondit les angles. C&rsquo;est un ingr\u00e9dient honn\u00eate : ne le remplacez pas par de la pur\u00e9e de tomate, le r\u00e9sultat serait trop aust\u00e8re.<\/p>\n\n\n\n<p><strong>L&rsquo;huile d&rsquo;olive et l&rsquo;ail<\/strong> font le liant aromatique. L&rsquo;ail peut \u00eatre press\u00e9 ou en chemise \u2014 en chemise, il confira doucement dans la sauce et deviendra fondant.<\/p>\n\n\n\n<p>Et le temps de repos ? Il est non n\u00e9gociable. Deux heures minimum, la veille si vous pouvez. C&rsquo;est ce qui transforme une volaille ordinaire en quelque chose de vraiment m\u00e9morable.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Version plus relev\u00e9e<\/strong> Ajoutez une cuill\u00e8re \u00e0 caf\u00e9 de gingembre frais r\u00e2p\u00e9 dans la marinade, ou un trait de sauce sriracha. \u00c7a donne une dimension asiatique tr\u00e8s agr\u00e9able, parfaite si vous servez avec du riz jasmin.<\/p>\n\n\n\n<p><strong>Gla\u00e7age encore plus brillant<\/strong> Arrosez les cuisses d&rsquo;un filet de miel suppl\u00e9mentaire pendant les 10 derni\u00e8res minutes de cuisson. La chaleur le caram\u00e9lise imm\u00e9diatement \u2014 le r\u00e9sultat est spectaculaire visuellement.<\/p>\n\n\n\n<p><strong>Version au vinaigre balsamique<\/strong> Remplacez le ketchup par une cuill\u00e8re \u00e0 soupe de vinaigre balsamique et une de concentr\u00e9 de tomates. La sauce devient plus complexe, l\u00e9g\u00e8rement acidul\u00e9e, tr\u00e8s bien avec des l\u00e9gumes r\u00f4tis en accompagnement. Les restes de poulet effiloch\u00e9 se r\u00e9inventent facilement : en garniture d&rsquo;un <a href=\"https:\/\/sommerfoodle.com\/2026\/03\/16\/menu-de-la-semaine-7-recettes-equilibrees-et-faciles\/\" type=\"post\" id=\"3549\">bowl du samedi <\/a>avec du riz et des l\u00e9gumes, en parmentier de poulet, ou en boulettes fa\u00e7on street food. Rien ne se perd.<\/p>\n\n\n\n<p><strong>Choisir le bon poulet<\/strong> Je recommande un poulet fermier Label Rouge. La chair est plus ferme, plus go\u00fbteuse, et elle supporte bien la longue cuisson sans se dess\u00e9cher. Un poulet industriel rendra trop d&rsquo;eau et la sauce sera dilu\u00e9e.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas laisser mariner suffisamment longtemps.<\/strong> Deux heures, c&rsquo;est le minimum. La veille, c&rsquo;est l&rsquo;id\u00e9al. Si vous enfournez directement apr\u00e8s avoir pr\u00e9par\u00e9 la marinade, la chair n&rsquo;aura pas eu le temps d&rsquo;absorber les saveurs \u2014 vous obtiendrez un poulet correct, pas un poulet fondant.<\/p>\n\n\n\n<p><strong>Oublier d&rsquo;arroser pendant la cuisson.<\/strong> Toutes les 20 minutes environ, ouvrez le four et arrosez les cuisses avec le jus de cuisson qui s&rsquo;accumule dans le fond du plat. C&rsquo;est ce qui entretient le gla\u00e7age et \u00e9vite que la peau s\u00e8che ou br\u00fble.<\/p>\n\n\n\n<p><strong>Laisser le plat \u00e0 sec.<\/strong> Le poulet rend du jus en cuisant, qui se m\u00e9lange \u00e0 la marinade pour former la sauce. Mais si votre four est tr\u00e8s chaud ou si la cuisson se prolonge, le fond peut attacher. N&rsquo;h\u00e9sitez pas \u00e0 ajouter deux ou trois cuill\u00e8res \u00e0 soupe d&rsquo;eau chaude si vous voyez que la sauce r\u00e9duit trop.<\/p>\n\n\n\n<p><strong>Utiliser du poulet sorti directement du r\u00e9frig\u00e9rateur.<\/strong> Sortez les cuisses du frigo 20 \u00e0 30 minutes avant d&rsquo;enfourner. Une volaille trop froide cuit de fa\u00e7on in\u00e9gale \u2014 la peau brunit avant que la chair soit cuite \u00e0 c\u0153ur.<\/p>\n\n\n\n<p><strong>Couper la cuisson trop t\u00f4t.<\/strong> Une heure \u00e0 180\u00b0C pour des cuisses de taille standard.
