Une brunoise de courgette crue, un trait de citron, et une cr\u00e8me ricotta-ch\u00e8vre dress\u00e9e \u00e0 la poche \u00e0 douille cannel\u00e9e. Rien de compliqu\u00e9, mais le r\u00e9sultat dans l&rsquo;assiette fait son petit effet.<\/p>\n\n\n\n<p>Depuis que je l&rsquo;ai int\u00e9gr\u00e9e \u00e0 ma cuisine maison, elle est devenue ma solution de secours pour les d\u00eeners improvis\u00e9s en \u00e9t\u00e9. Pas de cuisson, des ingr\u00e9dients du frigo, et une pr\u00e9sentation qui donne l&rsquo;impression d&rsquo;avoir pass\u00e9 du temps alors qu&rsquo;on n&rsquo;en a pas pass\u00e9 du tout.<\/p>\n\n\n\n<p>Pour les amateurs de fromage de ch\u00e8vre, cette recette est une alternative \u00e0 la fameuse <a href=\"https:\/\/sommerfoodle.com\/recipe\/salade-de-chevre-au-miel-vinaigrette-fruits-secs\/\">salade de ch\u00e8vre<\/a>. Ce tartare de courgettes cr\u00e8me de ch\u00e8vre est une entr\u00e9e ou un plat id\u00e9al pour les chaudes journ\u00e9es d&rsquo;\u00e9t\u00e9.<\/p>\n\n\n\n<p>On utilisera, si possible, des produits bio et locaux. Pour le ch\u00e8vre, on optera plut\u00f4t pour du fromage frais que l&rsquo;on mixera avec de la ricotta ou du cream cheese. Le <strong>cream cheese<\/strong> ou fromage \u00e0 la cr\u00e8me, est un fromage frais qui se tartine. Le plus connu est le <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Philadelphia_cream_cheese\">Philadelphia<\/a> mais on trouve des marques distributeurs qui sont parfois moins sal\u00e9es donc \u00e0 privil\u00e9gier.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi cette recette fonctionne si bien<\/h3>\n\n\n\n<p>La courgette crue en brunoise, c&rsquo;est une texture qu&rsquo;on sous-estime. Bien d\u00e9gorg\u00e9e avec du sel et relev\u00e9e d&rsquo;un filet de citron, elle est croquante, l\u00e9g\u00e8re, et elle absorbe parfaitement les herbes fra\u00eeches. Pas de cuisson = pas de perte de texture, pas de rendu d&rsquo;eau incontr\u00f4l\u00e9 dans l&rsquo;assiette.<\/p>\n\n\n\n<p>La cr\u00e8me ricotta-ch\u00e8vre, elle, joue sur le contraste : douce et ferme \u00e0 la fois, elle tient \u00e0 la poche sans couler. Le ch\u00e8vre frais apporte le caract\u00e8re, la ricotta apporte la tenue et la l\u00e9g\u00e8ret\u00e9.<\/p>\n\n\n\n<p>Et c\u00f4t\u00e9 nutrition : courgette et fromages frais sont parmi les alli\u00e9s les plus fiables du r\u00e9gime keto. Glucides quasi nuls, bonnes graisses, prot\u00e9ines. Une entr\u00e9e qui coche toutes les cases sans y penser.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Vous n&rsquo;avez pas de poche \u00e0 douille ?<\/strong> Une cuill\u00e8re \u00e0 soupe suffit pour d\u00e9poser la cr\u00e8me. Ce sera moins graphique, mais tout aussi bon. Vous pouvez aussi la servir en verrine : une couche de brunoise, une cuill\u00e8re de cr\u00e8me par-dessus, quelques brins de ciboulette.<\/p>\n\n\n\n<p><strong>Pour une version plus relev\u00e9e<\/strong>, ajoutez une pointe d&rsquo;ail dans la cr\u00e8me, ou quelques gouttes de Tabasco dans la brunoise.<\/p>\n\n\n\n<p><strong>Pour une version plus fra\u00eeche encore<\/strong>, remplacez la ciboulette par de la menthe cisel\u00e9e et ajoutez quelques zestes de citron vert dans la cr\u00e8me. C&rsquo;est la version que je fais quand il fait vraiment chaud.<\/p>\n\n\n\n<p><strong>Sans emporte-pi\u00e8ce<\/strong>, dressez directement dans des verrines ou des petits bols : l&rsquo;effet est diff\u00e9rent mais tout aussi \u00e9l\u00e9gant pour un ap\u00e9ritif d\u00eenatoire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Ne pas d\u00e9gorger la courgette.<\/strong> C&rsquo;est l&rsquo;\u00e9tape que l&rsquo;on est tent\u00e9e de sauter pour gagner du temps. \u00c0 tort : une brunoise non d\u00e9gorg\u00e9e rend de l&rsquo;eau dans l&rsquo;assiette et d\u00e9trempe tout le montage. Dix minutes avec une pinc\u00e9e de sel, puis on \u00e9ponge soigneusement avec du papier absorbant.<\/p>\n\n\n\n<p><strong>Une cr\u00e8me trop froide sortie du r\u00e9frig\u00e9rateur.<\/strong> Si la ricotta et le ch\u00e8vre sont tr\u00e8s froids, la cr\u00e8me sera trop ferme et difficile \u00e0 travailler \u00e0 la poche. Sortez-les 15 minutes avant de les travailler.<\/p>\n\n\n\n<p><strong>Trop fouetter la cr\u00e8me.<\/strong> On m\u00e9lange ricotta et ch\u00e8vre juste ce qu&rsquo;il faut pour obtenir une texture homog\u00e8ne. Si on insiste, la cr\u00e8me devient granuleuse et perd sa belle tenue.<\/p>\n\n\n\n<p><strong>D\u00e9mouler l&#8217;emporte-pi\u00e8ce trop t\u00f4t.<\/strong> On presse bien la brunoise dans le cercle, on lisse, et on d\u00e9moule doucement en maintenant une l\u00e9g\u00e8re pression avec le doigt sur le dessus pendant le soul\u00e8vement.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p>Une entr\u00e9e qui ne demande pas grand-chose et qui arrive dans l&rsquo;assiette comme si on y avait pass\u00e9 du temps.
