Ce repas a raviv\u00e9 en moi une envie que j&rsquo;avais un peu mise de c\u00f4t\u00e9 : cuisiner des currys maison. Depuis que nous avons r\u00e9duit drastiquement notre consommation de viande \u00e0 la maison, je cherche des alternatives v\u00e9g\u00e9tales qui soient vraiment gourmandes \u2014 pas des compromis. Apr\u00e8s les <a href=\"https:\/\/sommerfoodle.com\/recipe\/steak-daubergine-pane\/\" type=\"recipe\" id=\"3076\">steaks d&rsquo;aubergine<\/a>, <a href=\"https:\/\/sommerfoodle.com\/recipe\/steak-de-chou-fleur-roti\/\" type=\"recipe\" id=\"3115\">de chou fleur<\/a>,<a href=\"https:\/\/sommerfoodle.com\/recipe\/tarte-legumes-du-soleil-crumble-parmesan\/\" type=\"recipe\" id=\"1811\">les tartes aux l\u00e9gumes<\/a>, le curry de l\u00e9gumes coche toutes les cases : g\u00e9n\u00e9reux, parfum\u00e9, r\u00e9confortant, et il s&rsquo;adapte \u00e0 ce qu&rsquo;on a dans le frigo. <\/p>\n\n\n\n<p>Cette semaine j&rsquo;avais du brocoli \u2014 et j&rsquo;en ai profit\u00e9 pour rappeler quelque chose qu&rsquo;on oublie trop souvent : on consomme g\u00e9n\u00e9ralement les fleurs de brocoli et on jette la tige. Quelle erreur. Le c\u0153ur de la tige, une fois \u00e9pluch\u00e9, est tendre et savoureux \u2014 r\u00f4ti au four, en soupe, ou ici en b\u00e2tonnets dans le curry. C&rsquo;est moins esth\u00e9tique que les fleurs, mais tout aussi bon. Et pas de gaspillage.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi ce curry de l\u00e9gumes fonctionne toujours<\/h2>\n\n\n\n<p>La beaut\u00e9 de cette recette, c&rsquo;est qu&rsquo;il n&rsquo;y a pas vraiment de r\u00e8gles. Tu prends les l\u00e9gumes dont tu disposes \u2014 c&rsquo;est l&rsquo;essence m\u00eame de la cuisine anti-gaspi. Brocoli, carottes, courgettes, poivrons, \u00e9pinards, patate douce, pois chiches&#8230; tout fonctionne, \u00e0 condition d&rsquo;adapter le temps de cuisson \u00e0 la texture de chaque l\u00e9gume.<\/p>\n\n\n\n<p>Quelques principes que j&rsquo;applique syst\u00e9matiquement :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>J&rsquo;\u00e9vite les pommes de terre<\/strong> \u2014 je sers le curry avec du riz et j&rsquo;essaie de ne pas doubler les f\u00e9culents. Mais rien n&#8217;emp\u00eache de remplacer le riz par des pommes de terre directement dans le curry.<\/li>\n\n\n\n<li><strong>Les l\u00e9gumes durs en premier<\/strong> \u2014 carottes, brocoli, patate douce. Les l\u00e9gumes tendres (\u00e9pinards, courgettes) en fin de cuisson.<\/li>\n\n\n\n<li><strong>Le lait de coco \u00e0 la fin<\/strong> \u2014 pour qu&rsquo;il ne r\u00e9duise pas trop et garde toute sa rondeur.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter ce curry de l\u00e9gumes ?<\/h2>\n\n\n\n<p><strong>Selon la saison<\/strong> C&rsquo;est l\u00e0 que cette recette brille vraiment. Printemps : petits pois, asperges, \u00e9pinards. \u00c9t\u00e9 : courgettes, poivrons, aubergines. Automne : potimarron, patate douce, champignons. Hiver : brocoli, carottes, chou-fleur. Le m\u00eame curry, quatre versions diff\u00e9rentes tout au long de l&rsquo;ann\u00e9e.<\/p>\n\n\n\n<p><strong>Version plus \u00e9pic\u00e9e<\/strong> Ajoute une cuill\u00e8re \u00e0 caf\u00e9 de p\u00e2te de curry rouge \u00e0 la place du curry en poudre \u2014 le r\u00e9sultat est plus complexe et plus intense. Une pinc\u00e9e de piment de Cayenne pour ceux qui aiment la chaleur.<\/p>\n\n\n\n<p><strong>Version plus douce<\/strong> Remplace la moiti\u00e9 du lait de coco par de la cr\u00e8me de coco \u2014 plus riche et plus sucr\u00e9e. Id\u00e9ale pour les enfants ou ceux qui n&rsquo;aiment pas les plats trop relev\u00e9s.<\/p>\n\n\n\n<p><strong>Version prot\u00e9in\u00e9e<\/strong> Ajoute une bo\u00eete de pois chiches \u00e9goutt\u00e9s en m\u00eame temps que les tomates \u2014 ils absorbent parfaitement les \u00e9pices et apportent des prot\u00e9ines v\u00e9g\u00e9tales pour un plat complet.<\/p>\n\n\n\n<p><strong>Version express<\/strong> Utilise des l\u00e9gumes surgel\u00e9s \u2014 m\u00e9lange de l\u00e9gumes pour wok ou \u00e9pinards surgel\u00e9s. Le r\u00e9sultat est l\u00e9g\u00e8rement moins textur\u00e9 mais tout aussi bon. Temps de cuisson r\u00e9duit \u00e0 15 minutes.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Mettre tous les l\u00e9gumes en m\u00eame temps<\/strong> C&rsquo;est l&rsquo;erreur classique. Les l\u00e9gumes n&rsquo;ont pas tous le m\u00eame temps de cuisson \u2014 les carottes et brocolis ont besoin de 15-20 minutes, les courgettes et \u00e9pinards de 5 minutes maximum. Si tu mets tout ensemble, certains seront trop cuits et d&rsquo;autres croquants.<\/p>\n\n\n\n<p><strong>Ne pas faire revenir les \u00e9pices<\/strong> Les \u00e9pices doivent \u00eatre chauff\u00e9es dans l&rsquo;huile avec les oignons avant d&rsquo;ajouter les l\u00e9gumes et le liquide \u2014 c&rsquo;est ce qu&rsquo;on appelle \u00ab\u00a0faire fleurir\u00a0\u00bb les \u00e9pices. Cette \u00e9tape lib\u00e8re les ar\u00f4mes et donne au curry sa profondeur de go\u00fbt. Un curry o\u00f9 les \u00e9pices sont ajout\u00e9es directement dans le liquide est plat et sans relief.<\/p>\n\n\n\n<p><strong>Mettre le lait de coco trop t\u00f4t<\/strong> Si tu ajoutes le lait de coco en d\u00e9but de cuisson, il r\u00e9duit trop et la sauce devient \u00e9paisse et moins onctueuse. Ajoute-le dans les 10 derni\u00e8res minutes de cuisson pour garder sa rondeur et sa texture cr\u00e9meuse.<\/p>\n\n\n\n<p><strong>Servir sans go\u00fbter l&rsquo;assaisonnement<\/strong> Le curry s&rsquo;\u00e9quilibre avec le sel, un trait de jus de citron et parfois une pinc\u00e9e de sucre si la sauce est trop acide. Go\u00fbte toujours avant de servir et ajuste.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un curry de l\u00e9gumes qui change selon les saisons et selon ce qu&rsquo;on a dans le frigo \u2014 c&rsquo;est la recette du bon sens, celle qu&rsquo;on fait sans r\u00e9fl\u00e9chir une fois qu&rsquo;on a compris la logique.
