Les deux id\u00e9es ont fusionn\u00e9 naturellement \u2014 et le r\u00e9sultat m&rsquo;a vraiment surprise. Le mac &amp; cheese, c&rsquo;est mon plat doudou. Chaud, cr\u00e9meux, fondant \u2014 exactement ce qu&rsquo;il faut quand les temp\u00e9ratures baissent et qu&rsquo;on a besoin de r\u00e9confort. Mais la version classique, avec sa cr\u00e8me \u00e9paisse et son fromage en quantit\u00e9, laisse souvent une sensation de lourdeur. L&rsquo;id\u00e9e ici, c&rsquo;est de garder tout le plaisir en all\u00e9geant la sauce : le potimarron mix\u00e9 remplace une grande partie du fromage et apporte cette texture velout\u00e9e qu&rsquo;on cherche, avec une belle couleur dor\u00e9e en prime.<\/p>\n\n\n\n<p>Il existe plusieurs fa\u00e7ons de faire cette sauce. La plus rapide consiste \u00e0 m\u00e9langer directement de la pur\u00e9e de potimarron avec de la cr\u00e8me et du fromage. Moi, je pr\u00e9f\u00e8re la version b\u00e9chamel \u2014 un peu plus de technique, mais une sauce nettement plus onctueuse et \u00e9quilibr\u00e9e.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi le potimarron est la base id\u00e9ale pour all\u00e9ger le mac &amp; cheese ?<\/h3>\n\n\n\n<p>Le potimarron a une qualit\u00e9 rare parmi les l\u00e9gumes d&rsquo;automne : sa chair mix\u00e9e est naturellement velout\u00e9e, presque cr\u00e9meuse, sans avoir besoin d&rsquo;ajouter de mati\u00e8res grasses. Sa douceur sucr\u00e9e se marie parfaitement avec le fromage fondu, et sa couleur orang\u00e9e dor\u00e9e imite visuellement le cheddar \u2014 ce qui donne l&rsquo;illusion d&rsquo;une sauce tr\u00e8s fromag\u00e9e alors qu&rsquo;elle est beaucoup plus l\u00e9g\u00e8re.<\/p>\n\n\n\n<p>C\u00f4t\u00e9 nutrition, c&rsquo;est une star : riche en b\u00eata-carot\u00e8ne, en fibres et en vitamines, il transforme ce qui pourrait \u00eatre un plat coupable en quelque chose de vraiment nourrissant.<\/p>\n\n\n\n<p>Pour la cuisson du potimarron, deux options : au four pour plus de go\u00fbt (la chair caram\u00e9lise l\u00e9g\u00e8rement et concentre les saveurs), ou \u00e0 l&rsquo;eau si tu es press\u00e9. Si tu choisis la cuisson \u00e0 l&rsquo;eau, \u00e9goutte-le tr\u00e8s soigneusement avant de mixer \u2014 une chair trop humide dilue la sauce. Pour la version r\u00f4tie, tu peux suivre ma recette de <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/legumes-rotis\/\">l\u00e9gumes r\u00f4tis au four<\/a> en adaptant le temps selon la taille de tes morceaux.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Choisir le bon fromage<\/strong> Le fromage \u00e0 fondre est le seul ingr\u00e9dient sur lequel je ne fais pas de concession. Cheddar pour rester dans l&rsquo;esprit original, comt\u00e9 pour une note plus affin\u00e9e, emmental pour la douceur \u2014 les trois fonctionnent. \u00c9vite les fromages trop forts comme le roquefort qui domineraient le potimarron, ou les fromages trop secs qui ne fondent pas bien dans la b\u00e9chamel.<\/p>\n\n\n\n<p><strong>Ajouter des prot\u00e9ines<\/strong> Pour un plat plus complet, tu peux incorporer des lardons revenus, du jambon coup\u00e9 en d\u00e9s ou des noix de cajou grill\u00e9es pour une version v\u00e9g\u00e9tarienne enrichie. Ajoute-les directement dans le plat \u00e0 gratin avant d&rsquo;enfourner.<\/p>\n\n\n\n<p><strong>Version sans gluten<\/strong> Remplace la farine de la b\u00e9chamel par de la f\u00e9cule de ma\u00efs (ma\u00efzena) \u2014 m\u00eame quantit\u00e9, m\u00eame r\u00e9sultat. Utilise des p\u00e2tes sans gluten de riz ou de ma\u00efs. Le reste de la recette ne change pas.<\/p>\n\n\n\n<p><strong>Gratiner ou pas ?<\/strong> Le passage sous le gril 10 minutes est ce qui donne cette cro\u00fbte dor\u00e9e caract\u00e9ristique. Si tu veux encore plus de croustillant, ajoute une poign\u00e9e de chapelure sur le dessus avant de gratiner. Pour une version plus douce sans cro\u00fbte, sers directement apr\u00e8s avoir m\u00e9lang\u00e9 p\u00e2tes et sauce \u2014 c&rsquo;est moins spectaculaire mais tout aussi bon.<\/p>\n\n\n\n<p>Pour d&rsquo;autres id\u00e9es de plats v\u00e9g\u00e9tariens r\u00e9confortants \u00e0 base de courge, va voir ma <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/soupe-potimarron\/\">soupe de potimarron<\/a>.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Ne pas bien \u00e9goutter le potimarron cuit \u00e0 l&rsquo;eau.<\/strong> C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente. Un potimarron trop humide rend une sauce liquide qui ne nappe pas les p\u00e2tes correctement. Apr\u00e8s cuisson \u00e0 l&rsquo;eau, laisse-le dans une passoire 5 minutes minimum, et presse l\u00e9g\u00e8rement avec une spatule pour \u00e9liminer l&rsquo;exc\u00e8s d&rsquo;eau avant de mixer.<\/p>\n\n\n\n<p><strong>Faire une b\u00e9chamel trop \u00e9paisse.<\/strong> La b\u00e9chamel va \u00eatre allong\u00e9e avec la pur\u00e9e de potimarron \u2014 si tu la fais trop \u00e9paisse au d\u00e9part, le m\u00e9lange final sera collant et difficile \u00e0 travailler. Vise une consistance de cr\u00e8me anglaise plut\u00f4t que de b\u00e9chamel classique.<\/p>\n\n\n\n<p><strong>Ajouter le fromage sur feu trop fort.<\/strong> Le fromage fondu \u00e0 feu vif devient filant et granuleux. Hors du feu ou sur feu tr\u00e8s doux, il se fond parfaitement dans la b\u00e9chamel et la rend lisse et cr\u00e9meuse.<\/p>\n\n\n\n<p><strong>Cuire les p\u00e2tes al dente, pas plus.<\/strong> Les p\u00e2tes vont encore cuire 10 minutes sous le gril. Si tu les cuis trop longtemps en premi\u00e8re cuisson, elles finissent molles et sans texture dans le plat final. Sors-les 2 minutes avant le temps indiqu\u00e9 sur le paquet.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p>Ce mac &amp; cheese au potimarron est devenu un incontournable de mes automnes en Andorre. C&rsquo;est exactement le genre de plat que j&rsquo;aime cuisiner \u2014 r\u00e9confortant, color\u00e9, et bien plus l\u00e9ger qu&rsquo;il n&rsquo;y para\u00eet. Et cette couleur orang\u00e9e dans l&rsquo;assiette, avec le fromage qui file \u00e0 la d\u00e9coupe&#8230; personne ne r\u00e9siste.<\/p>\n\n\n\n<p>Et toi, tu le fais avec quel fromage ?
