Victoire totale, sauf qu&rsquo;ils les r\u00e9ussissent maintenant mieux que moi. Leurs bosses sont parfaites, r\u00e9guli\u00e8res, fi\u00e8res. Les miennes sont plus&#8230; personnelles. Peu importe, dans les deux cas elles disparaissent en moins de dix minutes. Cette version citron-gingembre, c&rsquo;est celle qui a le plus de caract\u00e8re dans ma collection. Le citron apporte la fra\u00eecheur, le gingembre le peps. Vous trouverez sur le blog plusieurs recettes de madeleines, toutes test\u00e9es, toutes approuv\u00e9es, mais celle-l\u00e0 a une place \u00e0 part.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Pourquoi le gingembre dans des madeleines ?<\/strong><\/p>\n\n\n\n<p>Le gingembre est une \u00e9pice aux multiples vertus. Reconnu pour ses propri\u00e9t\u00e9s digestives et anti-inflammatoires, il apporte surtout en p\u00e2tisserie une chaleur douce et l\u00e9g\u00e8rement piquante qui contraste tr\u00e8s bien avec l&rsquo;acidit\u00e9 du citron. Le duo fonctionne exactement comme dans un th\u00e9 citron-gingembre : vivifiant, \u00e9quilibr\u00e9, jamais agressif.<\/p>\n\n\n\n<p>Vous pouvez utiliser du gingembre en poudre ou du gingembre frais. Personnellement, j&rsquo;utilise presque toujours le frais. Le parfum est incomparablement plus vif. Deux techniques : la r\u00e2pe fine, ou couper le gingembre en petits morceaux et le presser au presse-ail pour en extraire le jus directement dans la p\u00e2te. Cette deuxi\u00e8me m\u00e9thode donne un r\u00e9sultat plus intense sans morceau en bouche.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Le secret de la bosse des madeleines<\/strong><\/p>\n\n\n\n<p>La bosse, c&rsquo;est le Saint Graal de la madeleine. Mes enfants l&rsquo;ont compris avant moi. Le secret tient en deux points :<\/p>\n\n\n\n<p><strong>Le choc thermique.<\/strong> La p\u00e2te doit \u00eatre froide et le four tr\u00e8s chaud. Pr\u00e9parez la p\u00e2te la veille ou laissez-la reposer au moins 1 heure au r\u00e9frig\u00e9rateur. Pr\u00e9chauffez le four \u00e0 220\u00b0C, enfournez, puis baissez \u00e0 180\u00b0C apr\u00e8s 4-5 minutes. C&rsquo;est ce brutal changement de temp\u00e9rature qui cr\u00e9e la bosse.<\/p>\n\n\n\n<p><strong>Des moules bien beurr\u00e9s et farin\u00e9s.<\/strong> M\u00eame avec des moules en silicone, un l\u00e9ger beurrage aide la p\u00e2te \u00e0 accrocher et \u00e0 monter. Et ne remplissez les alv\u00e9oles qu&rsquo;aux trois quarts, la p\u00e2te a besoin d&rsquo;espace pour gonfler.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Variantes pour adapter les madeleines<\/strong><\/p>\n\n\n\n<p><strong>Version sans gluten :<\/strong> remplacez la farine par un m\u00e9lange farine de riz et f\u00e9cule de ma\u00efs (50\/50). La texture est l\u00e9g\u00e8rement diff\u00e9rente mais le moelleux reste l\u00e0.<\/p>\n\n\n\n<p><strong>Version plus douce :<\/strong> r\u00e9duisez le gingembre de moiti\u00e9 et ajoutez une pinc\u00e9e de cardamome. Plus subtil, tr\u00e8s parfum\u00e9.<\/p>\n\n\n\n<p><strong>Version gla\u00e7age citron :<\/strong> m\u00e9langez du sucre glace avec quelques gouttes de jus de citron et nappez les madeleines refroidies. Effet visuel garanti et intensit\u00e9 citron d\u00e9cupl\u00e9e.<\/p>\n\n\n\n<p><strong>Pour les go\u00fbters d&rsquo;enfants :<\/strong> divisez par deux la quantit\u00e9 de gingembre. Le citron suffit \u00e0 donner du caract\u00e8re sans surprendre les petits palais.<\/p>\n\n\n\n<p>Ces madeleines s&rsquo;accompagnent tr\u00e8s bien d&rsquo;un <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/cake-marbre\/\">cake marbr\u00e9<\/a> pour un go\u00fbter vari\u00e9. Les deux se conservent plusieurs jours et se pr\u00e9parent \u00e0 l&rsquo;avance.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Erreurs \u00e0 \u00e9viter<\/strong><\/p>\n\n\n\n<p><strong>Ne pas laisser reposer la p\u00e2te.<\/strong> C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente. Une p\u00e2te non repos\u00e9e donne des madeleines plates, sans bosse et moins moelleuses. Minimum 1 heure au frigo, id\u00e9alement une nuit.<\/p>\n\n\n\n<p><strong>Trop zester le citron.<\/strong> Arr\u00eatez-vous \u00e0 la partie jaune du zeste, la partie blanche en dessous est am\u00e8re et g\u00e2che le parfum d\u00e9licat du citron.<\/p>\n\n\n\n<p><strong>Surcuire les madeleines.<\/strong> Une madeleine trop cuite est s\u00e8che le jour m\u00eame et rassie d\u00e8s le lendemain. Surveillez la cuisson : d\u00e8s que les bords sont dor\u00e9s et la bosse bien form\u00e9e, sortez-les. Elles finissent de cuire hors du four.<\/p>\n\n\n\n<p><strong>D\u00e9mouler trop tard.<\/strong> D\u00e9moulez d\u00e8s la sortie du four, 2 minutes maximum. Une madeleine qui refroidit dans son moule transpire et perd son croustillant.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Depuis que mes enfants m&rsquo;ont d\u00e9pass\u00e9e sur les bosses, j&rsquo;ai arr\u00eat\u00e9 de me battre.
