J&rsquo;ai tout de suite pens\u00e9 \u00e0 cette fameuse recette de <a href=\"https:\/\/sommerfoodle.com\/wp-content\/uploads\/2024\/01\/cropped-Petits-moelleux-pistache-framboise-2-scaled-1.jpg\">moelleux \u00e0 la pistache<\/a> inspir\u00e9e de Christophe Felder, une vraie merveille ! Pour une version plus l\u00e9g\u00e8re, je me lance dans une recette sans beurre, mais toujours aussi gourmande : des muffins k\u00e9to aux fruits rouges.<\/p>\n\n\n\n<p>J\u2019ai donc sorti mes ingr\u00e9dients f\u00e9tiches du moment : <strong>poudre d\u2019amande<\/strong>, <strong>\u00e9rythritol<\/strong> (pour sucrer sans culpabilit\u00e9) et une <strong>bonne huile v\u00e9g\u00e9tale<\/strong> au go\u00fbt neutre. Le r\u00e9sultat ? Des <strong>muffins k\u00e9to ultra moelleux<\/strong>, dor\u00e9s \u00e0 souhait, avec une texture fondante gr\u00e2ce aux \u0153ufs et \u00e0 la poudre d\u2019amande.<\/p>\n\n\n\n<p>Je les ai cuits dans mes <strong>petits moules \u00e0 muffins trop mignons d\u00e9nich\u00e9s chez Action<\/strong> \u2014 impossible de ne pas craquer ! Ils donnent tout de suite un air de f\u00eate \u00e0 ces petits g\u00e2teaux pourtant tr\u00e8s simples \u00e0 pr\u00e9parer.<\/p>\n\n\n\n<p>Ce que j\u2019adore dans cette recette, c\u2019est son \u00e9quilibre : on garde la g\u00e9n\u00e9rosit\u00e9 de Felder, mais on l\u2019adapte \u00e0 une version plus saine, parfaite pour le go\u00fbter ou le petit d\u00e9jeuner. Avec un bon caf\u00e9, c\u2019est juste le bonheur.<\/p>\n\n\n\n<p>Pour les framboises, je vous conseille d&rsquo;utiliser des fruits surgel\u00e9s. Moins chers et disponibles toute l&rsquo;ann\u00e9e, elles supportent tr\u00e8s bien la cuisson.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter pour des muffins k\u00e9to r\u00e9ussis<\/h2>\n\n\n\n<p><strong>Trop m\u00e9langer la p\u00e2te<\/strong> Contrairement \u00e0 une p\u00e2te classique, la p\u00e2te \u00e0 muffins k\u00e9to ne doit pas \u00eatre trop travaill\u00e9e. M\u00e9lange juste assez pour incorporer les ingr\u00e9dients \u2014 une p\u00e2te trop m\u00e9lang\u00e9e donne des muffins denses et caoutchouteux.<\/p>\n\n\n\n<p><strong>Utiliser des fruits rouges d\u00e9congel\u00e9s<\/strong> Les fruits d\u00e9congel\u00e9s rendent beaucoup d&rsquo;eau \u00e0 la cuisson et d\u00e9trempe la p\u00e2te .La m\u00e9thode la plus simple : incorpore-les directement congel\u00e9s dans la p\u00e2te sans d\u00e9congeler \u2014 ils rendront moins de jus \u00e0 la cuisson. Sinon pensez \u00e0 bien les \u00e9goutter. <\/p>\n\n\n\n<p><strong>Cuire \u00e0 temp\u00e9rature trop \u00e9lev\u00e9e<\/strong> La farine d&rsquo;amande colore plus vite que la farine de bl\u00e9. \u00c0 180\u00b0C, surveille \u00e0 partir de 18 minutes \u2014 si le dessus dore trop vite, couvre d&rsquo;un carr\u00e9 de papier aluminium et continue la cuisson.<\/p>\n\n\n\n<p><strong>Sous-doser l&rsquo;\u00e9dulcorant<\/strong> La poudre d&rsquo;amande a naturellement un go\u00fbt neutre qui absorbe les saveurs.
