Pas une recette all\u00e9g\u00e9e, pas une version r\u00e9invent\u00e9e, un vrai clafoutis cr\u00e9meux, avec des poires poch\u00e9es dans un sirop \u00e0 la cannelle, \u00e0 l&rsquo;anis \u00e9toil\u00e9 et au gingembre. La salle sentait bon d\u00e8s la sortie du four. Il est naturellement sans gluten : la ma\u00efzena remplace la farine classique et donne un appareil encore plus fondant, plus soyeux. Pas par souci di\u00e9t\u00e9tique,  juste parce que c&rsquo;est meilleur comme \u00e7a.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Pourquoi pocher les poires avant de les mettre dans le clafoutis ?<\/strong><\/p>\n\n\n\n<p>C&rsquo;est le geste qui change tout. Une poire crue dans un appareil \u00e0 clafoutis rend de l&rsquo;eau \u00e0 la cuisson et d\u00e9trempe la p\u00e2te. Une poire poch\u00e9e, elle, a d\u00e9j\u00e0 absorb\u00e9 les ar\u00f4mes du sirop \u00e9pic\u00e9 : cannelle, anis \u00e9toil\u00e9, gingembre, et tient parfaitement \u00e0 la cuisson sans ramollir l&rsquo;appareil.<\/p>\n\n\n\n<p>Le sirop de pochage n&rsquo;est pas perdu non plus : filtr\u00e9 et r\u00e9duit quelques minutes, il devient un nappage brillant et parfum\u00e9 \u00e0 verser sur le clafoutis au moment de servir.<\/p>\n\n\n\n<p>C&rsquo;est une technique de restauration accessible \u00e0 la maison. Elle demande 15 minutes de plus, mais elle fait toute la diff\u00e9rence sur le r\u00e9sultat final.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Pourquoi la ma\u00efzena plut\u00f4t que la farine ?<\/strong><\/p>\n\n\n\n<p>Dans un clafoutis, la farine sert \u00e0 lier l&rsquo;appareil et lui donner de la tenue. La ma\u00efzena fait exactement la m\u00eame chose, avec un r\u00e9sultat plus fin et plus fondant, l&rsquo;appareil est presque cr\u00e9meux \u00e0 c\u0153ur, avec une texture qui rappelle davantage un flan p\u00e2tissier que le clafoutis rustique classique.<\/p>\n\n\n\n<p>C&rsquo;est aussi naturellement sans gluten, ce qui rend la recette accessible aux intol\u00e9rants sans aucun compromis sur le go\u00fbt. Pour les personnes c\u0153liaques, v\u00e9rifiez simplement que votre ma\u00efzena est certifi\u00e9e sans gluten, certaines sont produites dans des usines qui traitent aussi du bl\u00e9.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Variantes pour adapter le clafoutis<\/strong><\/p>\n\n\n\n<p><strong>Version plus l\u00e9g\u00e8re :<\/strong> remplacez la cr\u00e8me par du lait entier ou un m\u00e9lange lait-cr\u00e8me 50\/50. La texture sera moins riche mais toujours fondante.<\/p>\n\n\n\n<p><strong>Version sans lactose :<\/strong> cr\u00e8me de coco \u00e0 la place de la cr\u00e8me enti\u00e8re. Elle apporte une note exotique qui fonctionne tr\u00e8s bien avec le gingembre et l&rsquo;anis \u00e9toil\u00e9.<\/p>\n\n\n\n<p><strong>Autres fruits :<\/strong> cette base de clafoutis \u00e0 la ma\u00efzena fonctionne tr\u00e8s bien avec des pommes poch\u00e9es, des coings en automne, ou des p\u00eaches en \u00e9t\u00e9. Le sirop \u00e9pic\u00e9 s&rsquo;adapte \u00e0 chaque fruit.<\/p>\n\n\n\n<p><strong>Version individuelle :<\/strong> divisez la recette en ramequins individuels pour un service en restaurant ou un d\u00eener. Apr\u00e8s le pochage, \u00e9gouttez-les soigneusement et \u00e9pongez-les avec du papier absorbant avant de les disposer dans le moule.<\/p>\n\n\n\n<p><strong>Cuire \u00e0 temp\u00e9rature trop \u00e9lev\u00e9e.<\/strong> Un clafoutis se cuit doucement :180\u00b0C maximum. Trop chaud, l&rsquo;appareil gonfle puis retombe en sortant du four et la texture devient caoutchouteuse.<\/p>\n\n\n\n<p><strong>Ouvrir le four en cours de cuisson.<\/strong> Comme pour tous les appareils \u00e0 base d&rsquo;\u0153ufs, un choc d&rsquo;air froid fait retomber le clafoutis. R\u00e9sistez \u00e0 la tentation avant 30 minutes.<\/p>\n\n\n\n<p><strong>Le servir trop froid.<\/strong> Un clafoutis sorti du r\u00e9frig\u00e9rateur perd toute sa texture fondante. Servez-le ti\u00e8de ou \u00e0 temp\u00e9rature ambiante \u2014 jamais glac\u00e9.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce clafoutis, je l&rsquo;ai servi des centaines de fois au Jolant. Il n&rsquo;a pas pris une ride. La cr\u00e8me, les poires poch\u00e9es aux \u00e9pices, le gingembre frais \u2014 c&rsquo;est une combinaison qui fonctionne \u00e0 tous les coups.
