Et puis un soir, on se lance. Et on comprend qu&rsquo;on ne rach\u00e8tera plus jamais de buns industriels. Ces petites brioches molles avec leur go\u00fbt de rien, leurs additifs et leur texture qui s&rsquo;effondre d\u00e8s la premi\u00e8re bouch\u00e9e,  termin\u00e9. Ici, la p\u00e2te est brioch\u00e9e, le moelleux tient \u00e0 la cuisson, et les graines de s\u00e9same sur le dessus font leur petit effet. Mon seul conseil : pr\u00e9voyez les temps de pousse. C&rsquo;est \u00e7a, le vrai secret.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi faire ses buns maison plut\u00f4t qu&rsquo;en acheter ?<\/h2>\n\n\n\n<p>La diff\u00e9rence se sent d\u00e8s la premi\u00e8re bouch\u00e9e. Un bun brioch\u00e9 maison est plus dense, plus savoureux, et suffisamment solide pour tenir une garniture g\u00e9n\u00e9reuse sans se d\u00e9sagr\u00e9ger. Sans parler de la composition : farine, beurre, lait, levure, \u0153uf, c&rsquo;est tout. Pas d&rsquo;\u00e9mulsifiants, pas de conservateurs, pas d&rsquo;ar\u00f4mes artificiels.<br>Et une fois la technique ma\u00eetris\u00e9e, la recette est rapide \u00e0 pr\u00e9parer : 15 minutes actives, le reste c&rsquo;est la p\u00e2te qui travaille toute seule.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter les buns<\/h2>\n\n\n\n<p>Version plus l\u00e9g\u00e8re : remplacez jusqu&rsquo;\u00e0 la moiti\u00e9 de la farine blanche par de la farine compl\u00e8te T110. La texture sera l\u00e9g\u00e8rement plus dense mais le go\u00fbt plus prononc\u00e9, avec un vrai caract\u00e8re.<br>Version sans lactose : le lait peut \u00eatre remplac\u00e9 par du lait d&rsquo;avoine ou de soja, et le beurre par une margarine v\u00e9g\u00e9tale. Le r\u00e9sultat est un peu moins brioch\u00e9 mais tout \u00e0 fait satisfaisant.<br>Pour les graines : s\u00e9same dor\u00e9 pour le classique, pavot pour un c\u00f4t\u00e9 plus raffin\u00e9, graines de courge pour une touche originale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p>Ne pas respecter les temps de pousse. C&rsquo;est la premi\u00e8re lev\u00e9e qui donne de l&rsquo;alv\u00e9ol\u00e9 \u00e0 la mie, et la deuxi\u00e8me qui garantit des buns bien gonfl\u00e9s. Pr\u00e9cipiter ces \u00e9tapes donne un r\u00e9sultat compact et peu a\u00e9rien.<br>Utiliser une levure trop chaude ou trop froide. Le lait doit \u00eatre ti\u00e8de, autour de 30-35\u00b0C. Trop chaud, il tue la levure. Trop froid, il ralentit la pousse de fa\u00e7on excessiv<br>Trop fariner le plan de travail. La p\u00e2te \u00e0 brioche est naturellement collante. R\u00e9sistez \u00e0 l&rsquo;envie d&rsquo;ajouter de la farine : c&rsquo;est ce qui fait le moelleux.<br>Oublier de baisser la temp\u00e9rature. On pr\u00e9chauffe \u00e0 200\u00b0C, puis on baisse \u00e0 180\u00b0C en enfournant. Cuire \u00e0 200\u00b0C tout du long donne des buns trop color\u00e9s \u00e0 l&rsquo;ext\u00e9rieur et pas assez cuits \u00e0 l&rsquo;int\u00e9rieur.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/sommerfoodle.com\/wp-content\/uploads\/2025\/12\/Burger-maison-edited-scaled.jpg\" alt=\"\" class=\"wp-image-3182\" style=\"width:328px;height:auto\"\/><\/figure>\n\n\n\n<p>Ces buns, une fois qu&rsquo;on les a faits, on ne revient plus en arri\u00e8re.
