R\u00e9sultat : je n&rsquo;en fais jamais \u00e0 la maison. C&rsquo;est un peu ironique quand on sait que c&rsquo;est exactement le genre de dessert que j&rsquo;aurais mis sur toutes les cartes de mes restaurants sans h\u00e9siter une seconde. Facile, rapide, \u00e9conomique, sans gluten, adaptable en version v\u00e9gane, la panna cotta coche toutes les cases du dessert de restaurateur id\u00e9al. Alors pour une fois, je passe outre l&rsquo;avis du jury familial. Cette version de panna cotta v\u00e9gane \u00e0 l&rsquo;agar-agar, c&rsquo;est la mienne. Pas de g\u00e9latine animale, une texture l\u00e9g\u00e8rement diff\u00e9rente de la version classique, plus ferme, plus nette, et un coulis de fruits qui change avec les saisons.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Agar-agar ou g\u00e9latine : quelle diff\u00e9rence dans la panna cotta ?<\/strong><\/h2>\n\n\n\n<p>La recette traditionnelle utilise de la g\u00e9latine animale, extraite de peaux et d&rsquo;os de porc ou de b\u0153uf. L&rsquo;agar-agar est son \u00e9quivalent v\u00e9g\u00e9tal, extrait d&rsquo;algues rouges. Naturellement sans gluten, sans go\u00fbt, sans odeur.<\/p>\n\n\n\n<p>La diff\u00e9rence se sent \u00e0 la texture : l&rsquo;agar-agar donne une panna cotta l\u00e9g\u00e8rement plus ferme et plus nette \u00e0 la coupe que la g\u00e9latine. Certains la trouvent moins soyeuse, c&rsquo;est vrai. Mais elle se d\u00e9moule parfaitement, tient bien m\u00eame par temps chaud, et convient \u00e0 tout le monde \u00e0 table, v\u00e9ganes compris.<\/p>\n\n\n\n<p>Une r\u00e8gle \u00e0 retenir : l&rsquo;agar-agar doit \u00eatre port\u00e9 \u00e0 \u00e9bullition pour \u00eatre actif. Contrairement \u00e0 la g\u00e9latine qui se r\u00e9hydrate \u00e0 froid, l&rsquo;agar-agar ne g\u00e9lifie qu&rsquo;apr\u00e8s avoir bouilli au moins 30 secondes dans le liquide. C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente sur cette recette.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Quel lait v\u00e9g\u00e9tal choisir pour la panna cotta v\u00e9gane \u00e0 l&rsquo;agar agar ?<\/strong><\/h2>\n\n\n\n<p>Le lait d&rsquo;amande est mon choix de base : neutre, l\u00e9g\u00e8rement sucr\u00e9, il laisse la place au coulis de fruits sans masquer les ar\u00f4mes. Associ\u00e9 \u00e0 la cr\u00e8me de soja, il donne une texture cr\u00e9meuse proche de la version classique.<\/p>\n\n\n\n<p>Autres options selon vos pr\u00e9f\u00e9rences :<\/p>\n\n\n\n<p><strong>Lait de coco :<\/strong> plus riche, d\u00e9j\u00e0 l\u00e9g\u00e8rement sucr\u00e9 et gras. Il remplace \u00e0 lui seul le lait d&rsquo;amande et la cr\u00e8me de soja : r\u00e9duisez ou supprimez le sucre en cons\u00e9quence. La note exotique fonctionne tr\u00e8s bien avec un coulis de mangue.<\/p>\n\n\n\n<p><strong>Lait d&rsquo;avoine :<\/strong> plus neutre que le lait de coco, l\u00e9g\u00e8rement plus \u00e9pais que le lait d&rsquo;amande. Bon compromis si vous n&rsquo;avez pas de cr\u00e8me de soja sous la main.<\/p>\n\n\n\n<p>Pour une version k\u00e9to, remplacez le miel d&rsquo;acacia par de la st\u00e9via ou de l&rsquo;\u00e9rythritol, et choisissez un coulis de fruits rouges : les seuls fruits vraiment compatibles avec le r\u00e9gime c\u00e9tog\u00e8ne.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Quel coulis pour accompagner la panna cotta v\u00e9gane ?<\/strong><\/h2>\n\n\n\n<p>C&rsquo;est le coulis qui fait changer la panna cotta de saison. La base reste la m\u00eame toute l&rsquo;ann\u00e9e, c&rsquo;est l&rsquo;accompagnement qui s&rsquo;adapte :<\/p>\n\n\n\n<p><strong>Fruits rouges (toute l&rsquo;ann\u00e9e) :<\/strong> le grand classique. Fraises, framboises, myrtilles : frais en \u00e9t\u00e9, surgel\u00e9s le reste de l&rsquo;ann\u00e9e. Les fruits surgel\u00e9s fonctionnent tr\u00e8s bien \u00e0 condition de les cuire quelques minutes avec le sucre avant de mixer.<\/p>\n\n\n\n<p><strong>Mangue (\u00e9t\u00e9-automne) :<\/strong> mix\u00e9e crue avec un filet de citron vert, elle donne un coulis onctueux et lumineux. Parfait avec un lait de coco en base.<\/p>\n\n\n\n<p><strong>Fruits de saison :<\/strong> abricots au printemps, fruits de la passion en hiver, poires poch\u00e9es en automne, les possibilit\u00e9s sont infinies. Cuisez toujours les fruits avant de mixer pour un coulis homog\u00e8ne.<\/p>\n\n\n\n<p>Ces fruits rouges se retrouvent aussi dans mes <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/meringues-vegan\/\">meringues v\u00e9ganes<\/a>, un accompagnement croquant qui contraste tr\u00e8s bien avec la texture cr\u00e9meuse de la panna cotta.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Erreurs \u00e0 \u00e9viter<\/strong><\/h2>\n\n\n\n<p><strong>Ne pas faire bouillir l&rsquo;agar-agar.<\/strong> C&rsquo;est l&rsquo;erreur num\u00e9ro un. L&rsquo;agar-agar doit imp\u00e9rativement bouillir dans le liquide pendant au moins 30 secondes pour \u00eatre actif. Une panna cotta pr\u00e9par\u00e9e avec de l&rsquo;agar-agar simplement chauff\u00e9 ne prendra pas.<\/p>\n\n\n\n<p><strong>Doser l&rsquo;agar-agar \u00e0 la louche.<\/strong> 2 g pour 400 ml de liquide, c&rsquo;est pr\u00e9cis. Trop peu et la panna cotta ne tient pas ; trop et elle devient \u00e9lastique et granuleuse. Utilisez une balance de cuisine, pas une cuill\u00e8re \u00e0 caf\u00e9 approximative.<\/p>\n\n\n\n<p><strong>D\u00e9mouler trop t\u00f4t.<\/strong> La panna cotta a besoin d&rsquo;au moins 2 heures au r\u00e9frig\u00e9rateur pour \u00eatre bien prise. Une nuit, c&rsquo;est encore mieux. Ne pr\u00e9cipitez pas cette \u00e9tape.<\/p>\n\n\n\n<p><strong>Servir trop froide.<\/strong> Sortez les verrines ou les moules 10 minutes avant de servir. Une panna cotta glac\u00e9e perd en texture et en ar\u00f4mes, elle doit \u00eatre fra\u00eeche, pas froide.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Mon mari ne changera probablement pas d&rsquo;avis sur la panna cotta. Mais pour tous les autres, et pour tous ceux qui cherchent un dessert \u00e0 pr\u00e9parer \u00e0 l&rsquo;avance sans stress, cette version de panna cotta v\u00e9gane \u00e0 l&rsquo;agar-agar est une valeur s\u00fbre.
