Les noisettes concass\u00e9es apportent le croquant qui manquerait sans elles.<\/p>\n\n\n\n<p>C&rsquo;est un plat complet pour un d\u00eener l\u00e9ger, ou une belle entr\u00e9e \u00e0 partager. Et il est difficile de faire plus simple.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi la butternut r\u00f4tie enti\u00e8re change tout<\/h3>\n\n\n\n<p>La plupart des recettes de courge r\u00f4tie la coupent en cubes. \u00c7a fonctionne, mais r\u00f4tir la butternut dans la longueur, en deux moiti\u00e9s, a un avantage concret : la chair se concentre dans sa propre humidit\u00e9, elle devient fondante \u00e0 c\u0153ur sans s\u00e9cher en surface. Le quadrillage au couteau avant d&rsquo;enfourner permet \u00e0 l&rsquo;huile d&rsquo;olive et aux \u00e9pices de p\u00e9n\u00e9trer et acc\u00e9l\u00e8re l\u00e9g\u00e8rement la cuisson.<\/p>\n\n\n\n<p>La feta arrive en fin de cuisson seulement, \u00e9miett\u00e9e sur la chair chaude et pass\u00e9e trois \u00e0 cinq minutes sous le grill. Si vous l&rsquo;ajoutez d\u00e8s le d\u00e9but, elle s\u00e8che et perd toute sa texture cr\u00e9meuse.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version \u00e9pices chaudes :<\/strong> ajoutez une demi-cuill\u00e8re \u00e0 caf\u00e9 de cumin et une pinc\u00e9e de paprika fum\u00e9 dans l&rsquo;assaisonnement avant d&rsquo;enfourner. Le cumin se marie particuli\u00e8rement bien avec la douceur naturelle de la butternut et donne une dimension plus orientale au plat.<\/p>\n\n\n\n<p><strong>Version miel et piment :<\/strong> \u00e0 la sortie du four, avant les noisettes, versez un filet de miel et quelques flocons de piment. Le contraste sucr\u00e9-sal\u00e9-piment\u00e9 avec la feta est assez remarquable.<\/p>\n\n\n\n<p><strong>Version v\u00e9gane :<\/strong> remplacez la feta par du tofu soyeux \u00e9miett\u00e9 assaisonn\u00e9 d&rsquo;un filet de citron et de sel. La texture change mais l&rsquo;id\u00e9e reste la m\u00eame. Une feta v\u00e9g\u00e9tale \u00e0 base de noix de cajou fonctionne aussi tr\u00e8s bien.<\/p>\n\n\n\n<p><strong>Version repas complet :<\/strong> servez la butternut r\u00f4tie sur un bol de quinoa chaud avec une poign\u00e9e de roquette et quelques graines de grenade en hiver. Un quadrillage superficiel donne un assaisonnement qui reste en surface et une chair fade \u00e0 c\u0153ur.<\/p>\n\n\n\n<p><strong>Mettre la feta d\u00e8s le d\u00e9but.<\/strong> La feta a besoin de trois \u00e0 cinq minutes sous le grill, pas quarante-cinq minutes au four. Ajout\u00e9e trop t\u00f4t, elle s\u00e8che compl\u00e8tement, perd son moelleux et devient granuleuse. \u00c9miettez-la uniquement quand la courge est cuite.<\/p>\n\n\n\n<p><strong>Utiliser une feta au lait de vache.<\/strong> La feta AOP grecque est obligatoirement au lait de brebis, parfois m\u00e9lang\u00e9e de lait de ch\u00e8vre. C&rsquo;est ce qui lui donne son caract\u00e8re et sa tenue \u00e0 la cuisson. Une feta au lait de vache fond diff\u00e9remment et a un go\u00fbt bien moins int\u00e9ressant. En Andorre, je trouve une bonne feta chez <a href=\"https:\/\/www.biocoopandorra.ad\/\">Biocoop Andorra<\/a> \u00e0 Andorre-la-Vieille.<\/p>\n\n\n\n<p><strong>Oublier les noisettes.<\/strong> Elles ne sont pas optionnelles. Sans elles, le plat manque de texture et reste monolithique en bouche. Torr\u00e9fiez-les deux minutes \u00e0 sec dans une po\u00eale avant de les concasser si vous avez le temps : le go\u00fbt est nettement meilleur.<\/p>\n\n\n\n<p><strong>Servir le plat directement \u00e0 la sortie du four.<\/strong> Deux \u00e0 trois minutes de repos permettent \u00e0 la chair de se d\u00e9tendre et \u00e0 la feta de finir de fondre doucement. Ce n&rsquo;est pas grand chose mais \u00e7a change la texture finale.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce plat fait partie de ceux que je refais chaque automne sans me poser de question. Il est l\u00e0, il fonctionne, il pla\u00eet \u00e0 tout le monde y compris aux personnes qui ne mangent pas v\u00e9g\u00e9tarien d&rsquo;habitude.
