Cette ann\u00e9e, j&rsquo;ai relev\u00e9 le d\u00e9fi du p\u00e2t\u00e9 de P\u00e2ques. P\u00e2te feuillet\u00e9e dor\u00e9e, m\u00eame \u0153uf dur au centre, m\u00eame tranche qui se d\u00e9coupe nettement mais une farce 100% v\u00e9g\u00e9tarienne \u00e0 base de quinoa et de champignons.<\/p>\n\n\n\n<p>Le r\u00e9sultat a surpris tout le monde \u00e0 table. Bonne nouvelle pour l&rsquo;organisation : ce p\u00e2t\u00e9 se pr\u00e9pare id\u00e9alement la veille. La farce se fige au r\u00e9frig\u00e9rateur, la coupe est nette, et le jour J il ne reste plus qu&rsquo;\u00e0 sortir le plat. Exactement ce qu&rsquo;il faut pour un repas de P\u00e2ques sans stress.<\/p>\n\n\n\n<p>La farce quinoa-champignons mix\u00e9s a une texture dense et fondante, tr\u00e8s proche d&rsquo;une farce \u00e0 viande. Les feuilles de chou romanesco \u2014 r\u00e9cup\u00e9r\u00e9es de mes l\u00e9gumes de la semaine, anti-gaspi oblige \u2014 isolent la farce de la p\u00e2te et apportent une touche de vert app\u00e9tissante \u00e0 la coupe. Si vous n&rsquo;avez pas de romanesco, des pousses d&rsquo;\u00e9pinard frais font parfaitement l&rsquo;affaire.<br><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi cette recette fonctionne sans viande<\/h2>\n\n\n\n<p>Le secret, c&rsquo;est la combinaison quinoa + champignons mix\u00e9s. Les champignons, une fois cuits et mix\u00e9s avec l&rsquo;oignon, d\u00e9veloppent une texture charnue et un go\u00fbt umami profond \u2014 c&rsquo;est ce qui se rapproche le plus de la farce traditionnelle. Le quinoa, lui, apporte de la tenue : sans lui, la farce serait trop humide et s&rsquo;effondrerait \u00e0 la coupe.<\/p>\n\n\n\n<p>Le quinoa est aussi un alli\u00e9 nutritionnel de premier choix pour une recette v\u00e9g\u00e9tarienne : c&rsquo;est l&rsquo;une des rares plantes \u00e0 contenir les 9 acides amin\u00e9s essentiels, ce qui en fait une source de prot\u00e9ines compl\u00e8tes. Combin\u00e9 aux champignons et aux \u0153ufs, ce p\u00e2t\u00e9 est bien plus nourrissant qu&rsquo;il n&rsquo;y para\u00eet.<\/p>\n\n\n\n<p>L&rsquo;autre astuce : les feuilles de chou romanesco ou les \u00e9pinards en barri\u00e8re entre la farce et la p\u00e2te. Sans cette couche, l&rsquo;humidit\u00e9 de la farce d\u00e9trempait la p\u00e2te feuillet\u00e9e \u00e0 la cuisson. Avec, la p\u00e2te reste bien feuillet\u00e9e et dor\u00e9e, et la coupe est nette.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter pour un p\u00e2t\u00e9 de P\u00e2ques r\u00e9ussi<\/h2>\n\n\n\n<p><strong>Bien \u00e9goutter les champignons apr\u00e8s cuisson.<\/strong> Les champignons rendent beaucoup d&rsquo;eau \u00e0 la po\u00eale. Si vous les mixez sans les \u00e9goutter, la farce sera trop humide et la p\u00e2te se d\u00e9trempe \u00e0 la cuisson. Faites-les revenir \u00e0 feu vif jusqu&rsquo;\u00e0 \u00e9vaporation compl\u00e8te du liquide, puis laissez refroidir avant de mixer.<\/p>\n\n\n\n<p><strong>Ne pas trop mixer la farce.<\/strong> On cherche une texture grossi\u00e8re, pas une pur\u00e9e lisse. Quelques impulsions au mixeur suffisent \u2014 la farce doit rester avec de petits morceaux identifiables, comme une farce \u00e0 viande hach\u00e9e.<\/p>\n\n\n\n<p><strong>Bien souder les bords de la p\u00e2te.<\/strong> C&rsquo;est la cl\u00e9 pour que le p\u00e2t\u00e9 ne s&rsquo;ouvre pas \u00e0 la cuisson. Humidifiez l\u00e9g\u00e8rement les bords avec de l&rsquo;eau avant de souder, et appuyez fermement .<\/p>\n\n\n\n<p><strong>Faire une chemin\u00e9e sur le dessus.<\/strong> Une petite chemin\u00e9e en papier aluminium roul\u00e9 plant\u00e9e dans la p\u00e2te permet \u00e0 la vapeur de s&rsquo;\u00e9chapper pendant la cuisson, sans \u00e7a, la p\u00e2te gonfle et se d\u00e9forme. Mais si la farce n&rsquo;est pas trop humide, on peut s&rsquo;en passer.<\/p>\n\n\n\n<p><strong>Laisser refroidir avant de d\u00e9couper.<\/strong> La farce a besoin de se figer pour que la coupe soit nette. Id\u00e9alement, pr\u00e9parez le p\u00e2t\u00e9 la veille et d\u00e9coupez-le froid. Le r\u00e9sultat visuel est bien meilleur.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes et adaptations<\/h2>\n\n\n\n<p><strong>La farce :<\/strong> vous pouvez enrichir la farce avec des noix ou des noisettes concass\u00e9es pour du croquant, ou ajouter une cuill\u00e8re de moutarde ancienne pour plus de caract\u00e8re. Des herbes fra\u00eeches  :, ciboulette, thym apportent de la fra\u00eecheur.<\/p>\n\n\n\n<p><strong>La feuille isolante :<\/strong> feuilles de chou romanesco, pousses d&rsquo;\u00e9pinard frais, feuilles de blettes, feuilles de chou vert, tout fonctionne. L&rsquo;essentiel est que la feuille soit fine et souple pour bien envelopper la farce.<\/p>\n\n\n\n<p><strong>Les champignons :<\/strong> champignons de Paris pour un go\u00fbt classique, pleurotes pour plus de caract\u00e8re, shiitake pour un go\u00fbt umami plus prononc\u00e9. Un m\u00e9lange fonctionne tr\u00e8s bien aussi.<\/p>\n\n\n\n<p><strong>Version sans \u0153uf dur au centre :<\/strong> si vous pr\u00e9f\u00e9rez une version v\u00e9gane, remplacez les \u0153ufs durs par des billes de mozzarella ou supprimez-les simplement, la farce se tient sans.<\/p>\n\n\n\n<p>Pour compl\u00e9ter votre repas de P\u00e2ques v\u00e9g\u00e9tarien, mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/steak-daubergine-pane\/\">steak d&rsquo;aubergine pan\u00e9<\/a> peut faire une belle entr\u00e9e, et le <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/steak-de-chou-rouge-roti\/\">steak de chou rouge r\u00f4ti<\/a> s&rsquo;int\u00e8gre parfaitement en accompagnement color\u00e9.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Un p\u00e2t\u00e9 de P\u00e2ques qui respecte la tradition dans la forme : p\u00e2te feuillet\u00e9e dor\u00e9e, \u0153uf dur au centre, tranche qui se d\u00e9coupe nettement mais v\u00e9g\u00e9tarien dans le fond.
