Je ne sais pas si c&rsquo;est la nostalgie qui joue, mais depuis ce jour-l\u00e0, je n&rsquo;en ai jamais trouv\u00e9 de meilleure. Pas de technique compliqu\u00e9e, pas d&rsquo;ingr\u00e9dient introuvable, juste un cake qui sent bon le chocolat et la vanille, avec ce marbrage un peu al\u00e9atoire qui fait tout le charme. Mon moule \u00e0 cake, un peu de patience pour le pochage, et c&rsquo;est parti. Le seul vrai conseil : attendez le lendemain pour le couper. Il est encore meilleur.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Pourquoi ce cake marbr\u00e9 est inratable ?<\/strong><\/p>\n\n\n\n<p>La recette repose sur une base de p\u00e2te \u00e0 cake classique divis\u00e9e en deux : une moiti\u00e9 vanill\u00e9e, une moiti\u00e9 cacaot\u00e9e. Pas besoin de robot, pas besoin de technique particuli\u00e8re. Ce qui fait le r\u00e9sultat :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Une texture l\u00e9g\u00e8rement dense, comme il faut, qui se tient bien \u00e0 la coupe<\/li>\n\n\n\n<li>Le cacao non sucr\u00e9 qui \u00e9quilibre sans \u00e9craser le go\u00fbt vanille<\/li>\n\n\n\n<li>Le beurre fondu plut\u00f4t que pommade, pour un moelleux qui dure plusieurs jours<\/li>\n\n\n\n<li>Le marbrage \u00e0 la fourchette ou au couteau, imparfait, et c&rsquo;est exactement \u00e7a qui est beau<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Variantes pour personnaliser le marbr\u00e9<\/strong><\/p>\n\n\n\n<p><strong>Version zestes d&rsquo;orange :<\/strong> ajoutez le zeste d&rsquo;une orange non trait\u00e9e dans la p\u00e2te vanille. L&rsquo;association chocolat-orange est une valeur s\u00fbre.<\/p>\n\n\n\n<p><strong>Version p\u00e9pites de chocolat :<\/strong> parsemez des p\u00e9pites dans la p\u00e2te cacaot\u00e9e avant d&rsquo;enfourner pour encore plus de gourmandise.<\/p>\n\n\n\n<p><strong>Version gla\u00e7age :<\/strong> une fois le cake refroidi, nappez d&rsquo;un gla\u00e7age chocolat noir fondu avec une noix de beurre. Effet garanti.<\/p>\n\n\n\n<p><strong>Pour les go\u00fbters d&rsquo;enfants :<\/strong> j&rsquo;utilise parfois des <a href=\"https:\/\/boutique.guydemarle.com\/moule-en-silicone\/4576-moule-12-oursons-ohra.html\">petits moules en silicone en forme d&rsquo;oursons Guy Demarle<\/a> \u00e0 la place du moule \u00e0 cake. La cuisson est plus rapide (environ 20 min) et le r\u00e9sultat fait son effet sur une table de go\u00fbter.<\/p>\n\n\n\n<p>Si vous aimez les go\u00fbters de l&rsquo;enfance, les <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/madeleines-inratables-irresistibles\/\">madeleines inratables<\/a> sont dans le m\u00eame esprit : moelleuses, rapides, et impossibles \u00e0 rater.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Erreurs \u00e0 \u00e9viter<\/strong><\/p>\n\n\n\n<p><strong>Trop m\u00e9langer apr\u00e8s l&rsquo;ajout de la farine.<\/strong> Une fois la farine incorpor\u00e9e, on m\u00e9lange juste ce qu&rsquo;il faut pour homog\u00e9n\u00e9iser. Trop insister d\u00e9veloppe le gluten et donne un cake compact et caoutchouteux.<\/p>\n\n\n\n<p><strong>Ouvrir le four avant 40 minutes.<\/strong> Le cake a besoin de chaleur stable pour gonfler et former sa cro\u00fbte dor\u00e9e. Une ouverture pr\u00e9matur\u00e9e fait retomber la p\u00e2te.<\/p>\n\n\n\n<p><strong>N\u00e9gliger le d\u00e9moulage.<\/strong> Attendez au moins 10 minutes avant de d\u00e9mouler. Un cake sorti trop chaud du moule se casse facilement, la texture n&rsquo;est pas encore stabilis\u00e9e.<\/p>\n\n\n\n<p><strong>Le couper encore chaud.<\/strong> Je sais, l&rsquo;odeur est irr\u00e9sistible. Mais un cake marbr\u00e9 coup\u00e9 chaud a une mie collante et se d\u00e9fait. Froid ou le lendemain, la tranche est nette et le go\u00fbt plus d\u00e9velopp\u00e9.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Certaines recettes n&rsquo;ont pas besoin d&rsquo;\u00eatre r\u00e9invent\u00e9es. Celle-l\u00e0, je la fais depuis mes 12 ans et je ne changerai rien.
