J&rsquo;avais envie de retrouver exactement cette sensation, mais sans viande. L&rsquo;aubergine s&rsquo;est impos\u00e9e naturellement : sa chair dense et fondante \u00e0 la cuisson supporte parfaitement la panure et enveloppe la mozzarella comme un vrai cordon bleu.<\/p>\n\n\n\n<p>Le r\u00e9sultat est bluffant. La panure croustille, la mozzarella fond, les herbes parfument \u2014 et personne \u00e0 table ne r\u00e9clame le poulet.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi l&rsquo;aubergine est parfaite pour un cordon bleu v\u00e9g\u00e9tarien<\/h2>\n\n\n\n<p>L&rsquo;aubergine a une qualit\u00e9 rare parmi les l\u00e9gumes : sa chair devient fondante et presque cr\u00e9meuse \u00e0 la cuisson, sans se d\u00e9sagr\u00e9ger. La panure est dor\u00e9e et croustillante, la mozzarella bien fondue. C&rsquo;est la version que je recommande si tu veux une assiette \u00e9quilibr\u00e9e.<\/p>\n\n\n\n<p><strong>Version po\u00eale \u2014 plus gourmande<\/strong> Fais chauffer un filet d&rsquo;huile d&rsquo;olive \u00e0 feu moyen et cuis les cordons bleus 4-5 minutes de chaque c\u00f4t\u00e9 jusqu&rsquo;\u00e0 belle coloration dor\u00e9e. La panure est plus croustillante et le fromage plus coulant. Termine 5 minutes au four si l&rsquo;aubergine te semble encore ferme au centre.<\/p>\n\n\n\n<p><strong>Version mixte \u2014 le meilleur des deux<\/strong> Saisis \u00e0 la po\u00eale 2-3 minutes de chaque c\u00f4t\u00e9 pour colorer, puis termine au four \u00e0 180\u00b0 pendant 10 minutes. C&rsquo;est ma version pr\u00e9f\u00e9r\u00e9e \u2014 panure croustillante et c\u0153ur parfaitement cuit.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas saler l&rsquo;aubergine avant de la farcir<\/strong> L&rsquo;aubergine contient beaucoup d&rsquo;eau. Si tu ne la sales pas et ne la laisses pas d\u00e9gorger 15-20 minutes, elle rendra de l&rsquo;eau \u00e0 la cuisson et d\u00e9trempera la panure. Tranche-la, sale les tranches, laisse d\u00e9gorger puis tamponne avec du papier absorbant avant de farcir.<\/p>\n\n\n\n<p><strong>Couper les tranches trop fines<\/strong> Des tranches de moins d&rsquo;1 cm se cassent au moment de plier l&rsquo;aubergine autour de la farce. Vise 1,5 cm d&rsquo;\u00e9paisseur minimum pour avoir une tranche souple et solide.<\/p>\n\n\n\n<p><strong>Mettre trop de mozzarella<\/strong> La mozzarella fond beaucoup et s&rsquo;\u00e9chappe facilement si la quantit\u00e9 est trop g\u00e9n\u00e9reuse. Une belle tranche suffit \u2014 pas besoin d&rsquo;en mettre plus pour que \u00e7a soit bon.<\/p>\n\n\n\n<p><strong>Ne pas bien appuyer la panure<\/strong> La panure doit adh\u00e9rer partout \u2014 appuie bien avec les mains apr\u00e8s avoir tremp\u00e9 dans la chapelure. Une panure mal fix\u00e9e se d\u00e9tache \u00e0 la cuisson et le fromage s&rsquo;\u00e9chappe.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un cordon bleu v\u00e9g\u00e9tarien qui ne fait pas de compromis sur le croustillant ni sur le fromage fondu \u2014 c&rsquo;est exactement ce que je cherchais.
