C&rsquo;est dans ce contexte que j&rsquo;ai d\u00e9couvert la p\u00e2te \u00e0 pain keto sans farine, ou \u00ab\u00a0fathead dough\u00a0\u00bb comme l&rsquo;appellent nos amis anglophones.<\/p>\n\n\n\n<p>L&rsquo;id\u00e9e m&rsquo;intriguait depuis longtemps. Une p\u00e2te \u00e0 base de mozzarella fondue ? Sans farine, sans gluten, sans sucre ? J&rsquo;avais du mal \u00e0 y croire. Et puis j&rsquo;ai test\u00e9. Le r\u00e9sultat m&rsquo;a surprise : une texture souple, l\u00e9g\u00e8rement \u00e9lastique, qui se travaille vraiment bien \u00e0 la main. Pas de p\u00e9trin, pas de temps de repos, pas de lev\u00e9e. Juste une p\u00e2te polyvalente, keto, et franchement bluffante.<\/p>\n\n\n\n<p>Cette recette est ma base. Celle que je d\u00e9cline ensuite en focaccia, en pizza, en bagels, en cinnamon rolls. Z\u00e9ro farine de bl\u00e9, z\u00e9ro sucre, mais toute la satisfaction d&rsquo;une vraie p\u00e2te travaill\u00e9e.<\/p>\n\n\n\n<p>Ce qui la rend particuli\u00e8re :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Elle est <strong>sans gluten<\/strong> : naturellement, sans substitut compliqu\u00e9<\/li>\n\n\n\n<li>Elle est <strong>rapide<\/strong> : 15 minutes de pr\u00e9paration, pas de lev\u00e9e<\/li>\n\n\n\n<li>Elle est <strong>polyvalente<\/strong> : sal\u00e9e comme sucr\u00e9e, fine comme \u00e9paisse<\/li>\n\n\n\n<li>Elle est <strong>accessible<\/strong> : les ingr\u00e9dients se trouvent partout<\/li>\n<\/ul>\n\n\n\n<p>Le secret ? La mozzarella fondue. En refroidissant l\u00e9g\u00e8rement, elle cr\u00e9e une structure \u00e9lastique qui remplace le r\u00e9seau de gluten de la farine traditionnelle. C&rsquo;est surprenant, et \u00e7a fonctionne. C&rsquo;est le m\u00eame principe qui rend mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/fondant-au-chocolat-vegan-et-sans-gluten\/\">fondant chocolat vegan et sans gluten<\/a> si moelleux sans farine. La chimie des ingr\u00e9dients fait le travail \u00e0 ta place.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Yaourt de brebis ou cream cheese ?<\/strong> Les deux fonctionnent. Le cream cheese donne une p\u00e2te l\u00e9g\u00e8rement plus grasse et plus souple. Le yaourt de brebis apporte une note acidul\u00e9e et une texture un peu plus l\u00e9g\u00e8re. Si ta p\u00e2te est trop humide avec le yaourt, ajoute simplement 1 cs de farine d&rsquo;amandes suppl\u00e9mentaire.<\/p>\n\n\n\n<p><strong>Farine d&rsquo;amandes ou farine de coco ?<\/strong> La recette combine les deux et c&rsquo;est intentionnel. La farine d&rsquo;amandes apporte du moelleux, la farine de coco absorbe l&rsquo;humidit\u00e9. Si tu es allergique aux amandes, tu peux augmenter l\u00e9g\u00e8rement la farine de coco mais le r\u00e9sultat sera plus dense.<\/p>\n\n\n\n<p><strong>Version sal\u00e9e ou sucr\u00e9e ?<\/strong> Pour une version sucr\u00e9e, ajoute 1 cs d&rsquo;\u00e9rythritol et 1 cc d&rsquo;extrait de vanille \u00e0 la p\u00e2te de base. Pour une version sal\u00e9e, les herbes de Provence, l&rsquo;origan ou le romarin se marient parfaitement avec la mozzarella.<\/p>\n\n\n\n<p><strong>Sans micro-ondes ?<\/strong> Tu peux faire fondre la mozzarella et le yaourt au bain-marie \u00e0 feu doux. Le r\u00e9sultat est identique, juste un peu plus long.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas trop chauffer la mozzarella d&rsquo;un coup.<\/strong> Le secret du micro-ondes en 3 fois, c&rsquo;est d&rsquo;\u00e9viter que le fromage br\u00fble ou devienne trop liquide. Si tu surchauffes, la p\u00e2te sera grasse et difficile \u00e0 travailler. 30 secondes, on m\u00e9lange, on recommence.<\/p>\n\n\n\n<p><strong>Ajouter l&rsquo;\u0153uf trop t\u00f4t.<\/strong> Si tu ajoutes l&rsquo;\u0153uf directement dans la mozzarella trop chaude, il cuit partiellement et tu te retrouves avec des grumeaux d&rsquo;\u0153uf brouill\u00e9 dans ta p\u00e2te. Laisse ti\u00e9dir 2 minutes avant d&rsquo;incorporer l&rsquo;\u0153uf.<\/p>\n\n\n\n<p><strong>Trop fariner.<\/strong> La tentation est grande d&rsquo;ajouter de la farine d&rsquo;amandes si la p\u00e2te colle. Mais une p\u00e2te l\u00e9g\u00e8rement collante est normale et pr\u00e9f\u00e9rable \u00e0 une p\u00e2te trop s\u00e8che qui se craqu\u00e8le \u00e0 l&rsquo;\u00e9talage. Travaille avec les mains l\u00e9g\u00e8rement huil\u00e9es plut\u00f4t qu&rsquo;en ajoutant de la farine.<\/p>\n\n\n\n<p><strong>Ne pas \u00e9taler entre deux feuilles de papier cuisson.<\/strong> Cette p\u00e2te colle facilement sur le plan de travail. Deux feuilles de papier sulfuris\u00e9 et un rouleau \u00e0 p\u00e2tisserie et tu obtiens une \u00e9paisseur r\u00e9guli\u00e8re sans gal\u00e8re.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment utiliser cette p\u00e2te keto sans farine<\/h2>\n\n\n\n<p>C&rsquo;est l\u00e0 que \u00e7a devient vraiment int\u00e9ressant. Cette base se d\u00e9cline \u00e0 l&rsquo;infini :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Focaccia keto<\/strong> \u2014 \u00e9tal\u00e9e \u00e9paisse, garnie de pesto et chorizo, quelques minutes au four<\/li>\n\n\n\n<li><strong>Pizza keto<\/strong> \u2014 fine et croustillante, garnie selon tes envies<\/li>\n\n\n\n<li><strong>Bagels keto<\/strong> \u2014 fa\u00e7onn\u00e9s en anneaux, dor\u00e9s au four<\/li>\n\n\n\n<li><strong>Cinnamon rolls keto<\/strong> \u2014 roul\u00e9e avec beurre, cannelle et \u00e9rythritol<\/li>\n\n\n\n<li><strong>Pain plat<\/strong> \u2014 nature, avec du fromage fondu ou de l&rsquo;avocat<\/li>\n<\/ul>\n\n\n\n<p>La fathead dough est d&rsquo;ailleurs devenue une r\u00e9f\u00e9rence mondiale dans la communaut\u00e9 keto depuis sa popularisation sur les blogs anglophones \u2014 ce qui prouve que la contrainte \u00ab\u00a0sans farine\u00a0\u00bb n&#8217;emp\u00eache pas la gourmandise.
