La version \u00e0 la po\u00eale m&rsquo;a donn\u00e9 du fil \u00e0 retordre : p\u00e2te qui accroche, impossible \u00e0 retourner proprement malgr\u00e9 un huilage g\u00e9n\u00e9reux. Pas tr\u00e8s encourageant.<\/p>\n\n\n\n<p>Alors j&rsquo;ai essay\u00e9 au four. Et l\u00e0, tout s&rsquo;est simplifi\u00e9 : pas de retournement, pas de surveillance permanente, pas de p\u00e2te qui colle. 10 \u00e0 15 minutes \u00e0 180\u00b0 et c&rsquo;est pr\u00eat. Le r\u00e9sultat est moelleux, l\u00e9g\u00e8rement dor\u00e9, et franchement meilleur que ce que j&rsquo;avais obtenu \u00e0 la po\u00eale. C&rsquo;est devenu ma m\u00e9thode par d\u00e9faut.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi la cuisson au four change tout<\/h2>\n\n\n\n<p>Le pancake \u00e0 la po\u00eale demande de la technique : la p\u00e2te sans \u0153uf est plus fragile, elle accroche facilement et le retournement est d\u00e9licat. Au four, ces probl\u00e8mes disparaissent compl\u00e8tement.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pas de retournement<\/strong> \u2192 la chaleur enveloppe le pancake de tous les c\u00f4t\u00e9s<\/li>\n\n\n\n<li><strong>Cuisson uniforme<\/strong> \u2192 pas de c\u00f4t\u00e9 br\u00fbl\u00e9, pas de centre cru<\/li>\n\n\n\n<li><strong>Plus healthy<\/strong> \u2192 pas besoin d&rsquo;huile pour la cuisson<\/li>\n\n\n\n<li><strong>Plus rapide<\/strong> \u2192 une seule fourn\u00e9e pour l&rsquo;\u00e9quivalent de 4 pancakes<\/li>\n\n\n\n<li><strong>Sans surveillance<\/strong> \u2192 on pr\u00e9pare le reste du petit d\u00e9jeuner pendant ce temps<\/li>\n<\/ul>\n\n\n\n<p>Le psyllium et la graine de lin jouent ici un r\u00f4le cl\u00e9 : ils remplacent l&rsquo;\u0153uf comme liant et donnent une texture qui tient \u00e0 la cuisson sans se d\u00e9faire. Je les utilise \u00e9galement pour ma version de <a href=\"https:\/\/sommerfoodle.com\/recipe\/crackers-keto-aux-graines\/\" type=\"recipe\" id=\"2180\">crackers k\u00e9to aux graines.<\/a><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter ce pancake g\u00e9ant ?<\/h2>\n\n\n\n<p><strong>Version plus sucr\u00e9e<\/strong> Utilise une banane bien m\u00fbre, voire noircie, qui sucre naturellement davantage. Tu peux r\u00e9duire ou supprimer le sucre complet selon la maturit\u00e9 de ta banane.<\/p>\n\n\n\n<p><strong>Version sans sucre ajout\u00e9<\/strong> Supprime le sucre complet et mise uniquement sur la banane m\u00fbre. Ajoute une pinc\u00e9e de cannelle pour renforcer la douceur naturelle.<\/p>\n\n\n\n<p><strong>Version avec toppings<\/strong> Pars\u00e8me de myrtilles, de framboises ou de p\u00e9pites de chocolat noir avant d&rsquo;enfourner. Ils s&rsquo;incorporent dans la p\u00e2te \u00e0 la cuisson et caram\u00e9lisent l\u00e9g\u00e8rement.<\/p>\n\n\n\n<p><strong>Version lait v\u00e9g\u00e9tal<\/strong> Le lait d&rsquo;amande, de coco ou d&rsquo;avoine fonctionne parfaitement \u00e0 la place du lait classique pour une version 100% v\u00e9gane.<\/p>\n\n\n\n<p><strong>Version mix de farines<\/strong> Le mix sans gluten peut \u00eatre remplac\u00e9 par de la farine de sarrasin seule pour un go\u00fbt plus rustique, ou par de la farine de riz pour une texture plus l\u00e9g\u00e8re.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Utiliser une banane trop ferme<\/strong> Une banane encore verte ou \u00e0 peine m\u00fbre ne s&rsquo;\u00e9crase pas bien et ne sucre pas suffisamment la p\u00e2te. Attends qu&rsquo;elle soit bien m\u00fbre, avec des taches brunes sur la peau, c&rsquo;est l\u00e0 qu&rsquo;elle est la plus sucr\u00e9e et la plus facile \u00e0 \u00e9craser.<\/p>\n\n\n\n<p><strong>Ne pas bien \u00e9craser la banane<\/strong> Des morceaux de banane dans la p\u00e2te cr\u00e9ent des zones humides qui emp\u00eachent la cuisson uniforme. \u00c9crase-la \u00e0 la fourchette jusqu&rsquo;\u00e0 obtenir une pur\u00e9e lisse, sans grumeaux. Un mixer plongeur est id\u00e9al.<\/p>\n\n\n\n<p><strong>Ouvrir le four trop t\u00f4t<\/strong> Avant 10 minutes, le pancake n&rsquo;est pas encore pris : le four fait retomber la p\u00e2te. R\u00e9siste \u00e0 la tentation et attends que les bords soient l\u00e9g\u00e8rement dor\u00e9s avant de v\u00e9rifier.<\/p>\n\n\n\n<p><strong>Mettre la p\u00e2te trop \u00e9paisse<\/strong> Une p\u00e2te trop \u00e9paisse reste humide au centre. \u00c9tale-la sur environ 1,5 cm d&rsquo;\u00e9paisseur dans un moule ou sur une plaque, pas plus.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un pancake g\u00e9ant au four en 20 minutes, sans \u0153uf, sans gluten et surtout sans prise de t\u00eate.
