Quand arrive le dessert, tout le monde est d\u00e9j\u00e0 bien install\u00e9 et la derni\u00e8re chose dont on a besoin c&rsquo;est un g\u00e2teau lourd et cr\u00e9meux au beurre. J&rsquo;ai voulu faire quelque chose de festif, de joli, mais de vraiment l\u00e9ger. Un nid de P\u00e2ques qui fait l&rsquo;effet sans faire regretter.<\/p>\n\n\n\n<p>Le biscuit cuill\u00e8re \u00e0 la ma\u00efzena remplace avantageusement une g\u00e9noise au beurre, il est a\u00e9rien, fondant, et naturellement sans gluten. La cr\u00e8me pralinoise fouett\u00e9e avec de l&rsquo;agar-agar tient parfaitement sans \u00eatre lourde. C&rsquo;est plus digeste, plus l\u00e9ger et franchement, \u00e7a ne se voit pas.<\/p>\n\n\n\n<p>Si tu cherches aussi une id\u00e9e de plat pour le repas, mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/pate-de-paques-vegetarien\/\">p\u00e2t\u00e9 de P\u00e2ques v\u00e9g\u00e9tarien<\/a> fait toujours son petit effet sur la table.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi ce nid de P\u00e2ques est diff\u00e9rent ?<\/h2>\n\n\n\n<p>La plupart des nids de P\u00e2ques sont des g\u00e9noises au beurre recouvertes de cr\u00e8me au beurre ou de ganache. Gourmand, certes mais \u00e9crasant apr\u00e8s un repas de f\u00eate.<\/p>\n\n\n\n<p>Cette version coche toutes les cases :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sans gluten<\/strong> \u2192 biscuit cuill\u00e8re \u00e0 la ma\u00efzena, naturellement sans farine de bl\u00e9<\/li>\n\n\n\n<li><strong>Sans beurre<\/strong> \u2192 ni dans le biscuit, ni dans la cr\u00e8me<\/li>\n\n\n\n<li><strong>L\u00e9ger<\/strong> \u2192 cr\u00e8me fouett\u00e9e pralinoise, pas de ganache ni de cr\u00e8me au beurre<\/li>\n\n\n\n<li><strong>Festif<\/strong> \u2192 la d\u00e9coration nid + \u0153ufs en chocolat fait tout l&rsquo;effet<\/li>\n\n\n\n<li><strong>Pr\u00eat en 45 minutes<\/strong> \u2192 r\u00e9alisable le matin m\u00eame<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter ce nid de P\u00e2ques ?<\/h2>\n\n\n\n<p><strong>Version encore plus l\u00e9g\u00e8re<\/strong> Remplace la pralinoise par du chocolat noir fondu + une cuill\u00e8re de pralin\u00e9. Moins sucr\u00e9, plus intense. Si tu es fan de pralinoise, jette un \u0153il \u00e0 mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/paris-brest-a-la-pralinoise\/\">Paris-Brest \u00e0 la pralinoise<\/a>, m\u00eame univers gourmand, version plus classique.<\/p>\n\n\n\n<p><strong>Version sans sucre<\/strong> Utilise un sucrant comme l&rsquo;\u00e9rythritol dans le biscuit et une pralinoise sans sucre. La texture reste identique.<\/p>\n\n\n\n<p><strong>Version individuelle<\/strong> Dresse le biscuit en petits disques individuels et forme des mini-nids, parfait pour les buffets ou les tables de f\u00eate o\u00f9 chacun a son assiette.<\/p>\n\n\n\n<p><strong>Pour la d\u00e9coration<\/strong> Les petits \u0153ufs en chocolat du commerce fonctionnent tr\u00e8s bien. Pour une version maison, des noisettes caram\u00e9lis\u00e9es ou des framboises fra\u00eeches remplacent joliment les \u0153ufs en chocolat.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Trop cuire le biscuit cuill\u00e8re<\/strong> Le biscuit cuill\u00e8re cuit vite : 12 \u00e0 15 minutes \u00e0 180\u00b0. S&rsquo;il commence \u00e0 dorer sur les bords, sors-le imm\u00e9diatement. Trop cuit, il devient sec et cassant au lieu d&rsquo;\u00eatre fondant.<\/p>\n\n\n\n<p><strong>Ne pas respecter la dose d&rsquo;agar-agar<\/strong> L&rsquo;agar-agar se dose pr\u00e9cis\u00e9ment : 4g pour 200ml de cr\u00e8me liquide. Trop peu et la cr\u00e8me ne tient pas, trop et elle devient ferme comme un flan. Pesez bien, ne pas estimer \u00e0 l&rsquo;\u0153il.<\/p>\n\n\n\n<p><strong>Incorporer l&rsquo;agar-agar sans le chauffer<\/strong> L&rsquo;agar-agar doit \u00eatre dissous dans la cr\u00e8me chaude avant de fouetter. S&rsquo;il est ajout\u00e9 directement \u00e0 la cr\u00e8me froide, il ne prend pas et la cr\u00e8me reste liquide.<\/p>\n\n\n\n<p><strong>Monter la cr\u00e8me trop ferme<\/strong> La cr\u00e8me pralinoise doit \u00eatre fouett\u00e9e en chantilly souple, pas trop ferme. Une chantilly trop mont\u00e9e devient granuleuse et difficile \u00e0 dresser.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un dessert de P\u00e2ques qui fait l&rsquo;effet sans alourdir la fin du repas, c&rsquo;est exactement ce que je cherchais.
