Pas de cr\u00e8me mousseline au beurre, pas de p\u00e2te d&rsquo;amande, pas de d\u00e9coration parfaite fa\u00e7on vitrine de p\u00e2tisserie. Juste une g\u00e9noise ultra l\u00e9g\u00e8re \u00e0 la ma\u00efzena, de la chantilly et des fraises fra\u00eeches. C&rsquo;est a\u00e9rien, peu sucr\u00e9, et \u00e7a ressemble exactement \u00e0 ces g\u00e2teaux aux fraises qu&rsquo;on voit dans les boulangeries japonaises \u2014 simples, \u00e9l\u00e9gants, sans fioriture.<\/p>\n\n\n\n<p>J&rsquo;ai d\u00e9couvert la finition yema dans une recette catalane traditionnelle \u2014 le massini, un g\u00e2teau \u00e0 base de g\u00e9noise et cr\u00e8me, recouvert d&rsquo;un caramel d&rsquo;\u0153ufs br\u00fbl\u00e9 au chalumeau. La yema c&rsquo;est une cr\u00e8me \u00e0 base de jaunes d&rsquo;\u0153ufs et de sucre cuite \u00e0 la casserole, qu&rsquo;on \u00e9tale sur le dessert et qu&rsquo;on br\u00fble comme une cr\u00e8me br\u00fbl\u00e9e. Sur un fraisier aussi peu sucr\u00e9, cette cro\u00fbte caram\u00e9lis\u00e9e l\u00e9g\u00e8rement am\u00e8re fait un contraste parfait. Le coup de chalumeau final transforme un g\u00e2teau simple en quelque chose de vraiment spectaculaire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi le biscuit japonais change tout<\/h2>\n\n\n\n<p>La g\u00e9noise japonaise n&rsquo;a rien \u00e0 voir avec une g\u00e9noise classique. Elle est mont\u00e9e sur blancs en neige avec de la ma\u00efzena \u00e0 la place de la farine \u2014 ce qui lui donne une texture cotonneuse, presque mousseuse, qui fond en bouche. Naturellement sans gluten et sans beurre, elle est bien plus l\u00e9g\u00e8re qu&rsquo;une g\u00e9noise traditionnelle tout en \u00e9tant plus moelleuse.<\/p>\n\n\n\n<p>C&rsquo;est ce biscuit qui fait le caract\u00e8re du fraisier japonais \u2014 avec une chantilly l\u00e9g\u00e8re et des fraises fra\u00eeches, le r\u00e9sultat est d&rsquo;une l\u00e9g\u00e8ret\u00e9 surprenante pour un dessert aussi gourmand.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter ce fraisier japonais ?<\/h2>\n\n\n\n<p><strong>Version matcha<\/strong> Ajoute 1 cuill\u00e8re \u00e0 caf\u00e9 de matcha en poudre dans la p\u00e2te \u00e0 g\u00e9noise \u2014 le biscuit prend une belle couleur verte qui contraste avec la chantilly blanche et les fraises. C&rsquo;est l&rsquo;angle japonais pouss\u00e9 \u00e0 son maximum, visuellement tr\u00e8s fort.<\/p>\n\n\n\n<p><strong>Version framboises<\/strong> Remplace les fraises par des framboises fra\u00eeches \u2014 le r\u00e9sultat est plus acidul\u00e9 et tout aussi beau visuellement. Si tu aimes les desserts aux framboises sans sucre, jette un \u0153il \u00e0 mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/framboisier-sans-sucre\/\">framboisier sans sucre<\/a> \u2014 m\u00eame biscuit l\u00e9ger, version k\u00e9to.<\/p>\n\n\n\n<p><strong>Version chantilly mascarpone<\/strong> Remplace 50ml de cr\u00e8me par 100g de mascarpone pour une chantilly plus ferme et plus stable \u2014 id\u00e9ale si le fraisier doit attendre plusieurs heures avant d&rsquo;\u00eatre servi.<\/p>\n\n\n\n<p><strong>Version grands formats<\/strong> La m\u00eame recette peut se faire dans un moule \u00e0 manqu\u00e9 de 18-20 cm \u2014 double les proportions du biscuit et de la chantilly. La yema reste identique.<\/p>\n\n\n\n<p><strong>Version sans finition yema<\/strong> Si tu n&rsquo;as pas de chalumeau, saupoudre simplement de sucre glace ou d\u00e9core avec quelques fraises fra\u00eeches. Le fraisier est tout aussi bon sans la finition caram\u00e9lis\u00e9e.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas bien monter les blancs en neige<\/strong> Le biscuit japonais repose enti\u00e8rement sur les blancs en neige \u2014 c&rsquo;est eux qui donnent la texture cotonneuse. Des blancs insuffisamment mont\u00e9s donnent un biscuit plat et dense. Monte-les jusqu&rsquo;\u00e0 ce qu&rsquo;ils forment des pics fermes avant de les incorporer d\u00e9licatement.<\/p>\n\n\n\n<p><strong>Incorporer les blancs trop brutalement<\/strong> Le geste doit \u00eatre d\u00e9licat \u2014 spatule, mouvements circulaires du bas vers le haut. Si tu m\u00e9langes vigoureusement, les blancs retombent et le biscuit perd toute sa l\u00e9g\u00e8ret\u00e9.<\/p>\n\n\n\n<p><strong>Br\u00fbler la yema trop t\u00f4t<\/strong> La yema doit \u00eatre appliqu\u00e9e froide sur le fraisier, puis br\u00fbl\u00e9e au dernier moment juste avant de servir. Si tu la br\u00fbles \u00e0 l&rsquo;avance, la cro\u00fbte ramollit et perd son effet cr\u00e8me br\u00fbl\u00e9e.<\/p>\n\n\n\n<p><strong>Cuire la yema \u00e0 feu trop fort<\/strong> La yema cuit \u00e0 feu doux en remuant constamment \u2014 si le feu est trop fort, les jaunes coagulent et la cr\u00e8me est grumeleuse. La texture doit \u00eatre lisse et nappante avant de la retirer du feu.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un fraisier japonais qui se mange sans culpabilit\u00e9 \u2014 l\u00e9ger, peu sucr\u00e9, avec juste ce qu&rsquo;il faut de gourmandise dans la finition yema caram\u00e9lis\u00e9e.
