Le matcha s&rsquo;est impos\u00e9 naturellement \u2014 cette poudre de th\u00e9 vert qui donne au biscuit une couleur jade intense et un go\u00fbt l\u00e9g\u00e8rement amer, en contraste parfait avec la douceur de la chantilly vanill\u00e9e et des fraises.<\/p>\n\n\n\n<p>Le r\u00e9sultat est visuellement saisissant : le vert profond du biscuit, le blanc de la chantilly, le rouge des fraises et la cro\u00fbte dor\u00e9e de la yema caram\u00e9lis\u00e9e. C&rsquo;est la version que je sers quand je veux vraiment impressionner \u2014 et pourtant, la technique est exactement la m\u00eame que pour le fraisier classique.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi le matcha change tout<\/h2>\n\n\n\n<p>Le matcha n&rsquo;est pas juste un colorant \u2014 c&rsquo;est un ingr\u00e9dient \u00e0 part enti\u00e8re qui apporte une note l\u00e9g\u00e8rement am\u00e8re et herbac\u00e9e au biscuit. Cette amertume subtile \u00e9quilibre parfaitement la douceur de la chantilly vanill\u00e9e et cr\u00e9e un contraste de saveurs qui rend le dessert moins \u00e9c\u0153urant qu&rsquo;un fraisier classique.<\/p>\n\n\n\n<p>Une cuill\u00e8re \u00e0 soupe de matcha pour 4 \u0153ufs \u2014 c&rsquo;est la dose id\u00e9ale. Moins et la couleur est trop p\u00e2le, plus et le go\u00fbt domine trop. J&rsquo;ajoute une pointe de colorant vert pour intensifier la couleur jade sans augmenter la dose de matcha.<\/p>\n\n\n\n<p>Comme le fraisier classique, ce biscuit est naturellement <strong>sans gluten et sans beurre<\/strong> \u2014 mont\u00e9 sur blancs en neige avec de la ma\u00efzena, il est a\u00e9rien et cotonner, et supporte parfaitement le go\u00fbt prononc\u00e9 du matcha.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Comment adapter ce fraisier matcha ?<\/h2>\n\n\n\n<p><strong>Version sans finition yema<\/strong> Si tu n&rsquo;as pas de chalumeau, saupoudre simplement de matcha en poudre tamis\u00e9 sur la chantilly \u2014 l&rsquo;effet visuel est diff\u00e9rent mais tout aussi beau. Quelques fraises fra\u00eeches en d\u00e9coration compl\u00e8tent le tout (ou un coulis).<\/p>\n\n\n\n<p><strong>Version avec cr\u00e8me mascarpone<\/strong> Remplace la chantilly nature par une chantilly mascarpone (100g mascarpone + 20cl cr\u00e8me) pour plus de tenue et de richesse. Id\u00e9ale si le fraisier doit attendre plusieurs heures avant d&rsquo;\u00eatre servi.<\/p>\n\n\n\n<p><strong>Version grand format<\/strong> Double les proportions pour un moule \u00e0 manqu\u00e9 de 18cm \u2014 parfait pour 6-8 personnes. La finition yema est encore plus spectaculaire sur un grand format.<\/p>\n\n\n\n<p><strong>Version framboises<\/strong> Les framboises se marient encore mieux que les fraises avec le matcha \u2014 leur acidit\u00e9 contraste magnifiquement avec l&rsquo;amertume du th\u00e9 vert. Pour d&rsquo;autres id\u00e9es avec les framboises, jette un \u0153il \u00e0 mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/framboisier-sans-sucre\/\">framboisier sans sucre<\/a>.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Les erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Doser le matcha \u00e0 l&rsquo;\u0153il<\/strong> Un gramme de trop et le biscuit est amer et la couleur trop fonc\u00e9e. Utilise une vraie cuill\u00e8re \u00e0 soupe rase \u2014 pas bomb\u00e9e.<\/p>\n\n\n\n<p><strong>Utiliser un matcha de mauvaise qualit\u00e9<\/strong> Le matcha culinaire bon march\u00e9 donne une couleur olive terne et un go\u00fbt d\u00e9sagr\u00e9able. Investis dans un matcha de qualit\u00e9 correcte \u2014 la diff\u00e9rence de couleur et de go\u00fbt est imm\u00e9diate.<\/p>\n\n\n\n<p><strong>Incorporer les blancs trop brutalement<\/strong> Le biscuit repose enti\u00e8rement sur les blancs en neige pour sa l\u00e9g\u00e8ret\u00e9. Des mouvements d\u00e9licats \u00e0 la spatule \u2014 si tu m\u00e9langes vigoureusement, le biscuit sera plat et dense.<\/p>\n\n\n\n<p><strong>Br\u00fbler la yema trop longtemps<\/strong> La yema caram\u00e9lise tr\u00e8s vite au chalumeau \u2014 quelques secondes de trop et elle br\u00fble et devient am\u00e8re. Passe le chalumeau en mouvement continu, sans s&rsquo;attarder au m\u00eame endroit. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pour finir<\/h2>\n\n\n\n<p>Un fraisier japonais au matcha qui fait l&rsquo;effet garanti \u00e0 table \u2014 le vert du biscuit, le blanc de la chantilly, le rouge des fraises et la cro\u00fbte caram\u00e9lis\u00e9e de la yema.
