Celle-ci en fait partie. J&rsquo;avais un reste de mozzarella, du chorizo qui attendait depuis deux jours, un pot de pesto basilic ouvert \u2014 et l&rsquo;envie d&rsquo;une focaccia sans me lancer dans quelque chose de compliqu\u00e9.<\/p>\n\n\n\n<p>La p\u00e2te fathead, que j&rsquo;utilise d\u00e9j\u00e0 comme base pour ma <a href=\"https:\/\/sommerfoodle.com\/recipe\/pate-keto-sans-farine-la-recette-de-base\/\" type=\"recipe\" id=\"4116\">p\u00e2te fathead<\/a>, s&rsquo;est impos\u00e9e naturellement. Moelleuse, l\u00e9g\u00e8rement \u00e9lastique, elle tient parfaitement la garniture sans se d\u00e9tremper. Le chorizo grille en surface, le pesto parfume toute la p\u00e2te, et la roquette ajout\u00e9e \u00e0 la sortie du four apporte ce petit c\u00f4t\u00e9 frais et poivr\u00e9 qui change tout.<\/p>\n\n\n\n<p>Le r\u00e9sultat est g\u00e9n\u00e9reux, go\u00fbteux, et franchement personne ne devine que c&rsquo;est k\u00e9to.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi la p\u00e2te fathead est parfaite pour une focaccia k\u00e9to ?<\/h3>\n\n\n\n<p>La p\u00e2te fathead \u2014 mozzarella fondue + farine d&rsquo;amande + \u0153uf \u2014 est la base k\u00e9to la plus polyvalente qui soit. Elle imite bien mieux la texture d&rsquo;une p\u00e2te lev\u00e9e qu&rsquo;une simple farine d&rsquo;amande seule, gr\u00e2ce \u00e0 l&rsquo;\u00e9lasticit\u00e9 naturelle de la mozzarella fondue.<\/p>\n\n\n\n<p>Pour une focaccia, c&rsquo;est id\u00e9al : on l&rsquo;\u00e9tale en rectangle \u00e9pais, on creuse des petits puits avec les doigts comme une vraie focaccia, et elle gonfle l\u00e9g\u00e8rement au four en formant cette texture alv\u00e9ol\u00e9e caract\u00e9ristique. Elle est suffisamment robuste pour supporter une garniture g\u00e9n\u00e9reuse sans ramollir.<\/p>\n\n\n\n<p>C\u00f4t\u00e9 glucides : la farine d&rsquo;amande et la mozzarella restent tr\u00e8s pauvres en glucides nets, ce qui en fait une base parfaitement compatible avec un r\u00e9gime k\u00e9to ou low-carb.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Changer la garniture selon les saisons<\/strong> Le chorizo-pesto-roquette fonctionne tr\u00e8s bien, mais cette focaccia accueille toutes les garnitures g\u00e9n\u00e9reuses. En \u00e9t\u00e9 : tomates cerises + basilic frais + parmesan. En hiver : gorgonzola + noix + poire (si tu tol\u00e8res un peu de glucides). Pour rester k\u00e9to : jambon cru + burrata + roquette, ou tapenade + anchois + olives.<\/p>\n\n\n\n<p><strong>Chorizo doux ou fort ?<\/strong> Les deux fonctionnent. Le chorizo doux laisse le pesto s&rsquo;exprimer davantage. Le chorizo fort prend le dessus et donne un caract\u00e8re plus affirm\u00e9 \u00e0 l&rsquo;ensemble. Si tu utilises du chorizo ib\u00e9rique tranch\u00e9 fin, pose-le apr\u00e8s cuisson comme la roquette \u2014 il n&rsquo;a pas besoin de cuire et reste plus fondant.<\/p>\n\n\n\n<p><strong>Pesto maison ou du commerce ?<\/strong> Un pesto basilic du commerce de bonne qualit\u00e9 fonctionne tr\u00e8s bien ici. Si tu veux le faire maison, une version simplifi\u00e9e basilic + pignons + parmesan + huile d&rsquo;olive suffit \u2014 pas besoin de sortir le grand jeu pour une recette du quotidien. Il est possible de faire du pesto avec de la poudre d&rsquo;amandes, plus \u00e9conomique que les pignons. J&rsquo;ai m\u00eame test\u00e9 une version<a href=\"https:\/\/sommerfoodle.com\/recipe\/pesto-roquette-coco\/\" type=\"recipe\" id=\"1695\"> pesto-coco<\/a>.<\/p>\n\n\n\n<p><strong>Version ap\u00e9ro<\/strong> D\u00e9coupe la focaccia en petits rectangles pour un ap\u00e9ro k\u00e9to original. Elle se tient bien \u00e0 la main et se mange sans assiette \u2014 pratique pour partager. Pour d&rsquo;autres id\u00e9es ap\u00e9ro sans gluten, va voir mon <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/caviar-aubergine-maison\/\">caviar d&rsquo;aubergine maison<\/a>.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Ne pas bien essorer la mozzarella.<\/strong> C&rsquo;est l&rsquo;\u00e9tape que tout le monde zappe et qui ruine la p\u00e2te fathead. La mozzarella contient beaucoup d&rsquo;eau \u2014 si tu ne la fais pas fondre doucement en \u00e9liminant l&rsquo;exc\u00e8s de liquide, ta p\u00e2te sera collante et ne se tiendra pas. Fais-la fondre au micro-ondes en plusieurs fois, en remuant entre chaque passage.<\/p>\n\n\n\n<p><strong>\u00c9taler la p\u00e2te trop fine.<\/strong> Une focaccia, m\u00eame k\u00e9to, doit avoir de l&rsquo;\u00e9paisseur \u2014 minimum 1 cm. Trop fine, elle s\u00e8che au four et perd tout son moelleux. N&rsquo;h\u00e9site pas \u00e0 la faire \u00e9paisse et \u00e0 marquer les puits avec les doigts avant d&rsquo;enfourner.<\/p>\n\n\n\n<p><strong>Poser la roquette avant cuisson.<\/strong> La roquette se fl\u00e9trit et br\u00fble en quelques minutes au four. Elle se pose toujours \u00e0 la sortie du four, sur la focaccia encore chaude \u2014 elle tombe l\u00e9g\u00e8rement, parfume la garniture et garde son croquant.<\/p>\n\n\n\n<p><strong>N\u00e9gliger l&rsquo;huile d&rsquo;olive en finition.<\/strong> Un filet d&rsquo;huile d&rsquo;olive sur la focaccia chaude \u00e0 la sortie du four, c&rsquo;est ce qui donne ce brillant et ce go\u00fbt g\u00e9n\u00e9reux. Ne l&rsquo;oublie pas \u2014 c&rsquo;est une petite touche qui change vraiment le r\u00e9sultat.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Conclusion<\/h3>\n\n\n\n<p>Cette focaccia, je la fais maintenant en rotation r\u00e9guli\u00e8re \u2014 c&rsquo;est une de ces recettes qui demandent peu, donnent beaucoup, et qu&rsquo;on adapte en fonction de ce qu&rsquo;il y a dans le frigo. Le chorizo peut devenir du jambon cru, la roquette peut laisser place au basilic frais, et le pesto peut changer de version selon la saison.<\/p>\n\n\n\n<p>Et toi, tu garnirais ta focaccia k\u00e9to avec quoi ?
