C&rsquo;est lui qui monte \u00e0 500\u00b0C en quelques minutes, qui fait gonfler la p\u00e2te napolitaine en 90 secondes, qui donne ces bords leopard\u00e9s et ce fond croustillant qu&rsquo;on cherche. C&rsquo;est une vraie joie.<\/p>\n\n\n\n<p>En Andorre, j&rsquo;ai un four classique. Performant, honn\u00eate, mais plafonn\u00e9 \u00e0 250\u00b0C \u2014 largement insuffisant pour une vraie pizza napolitaine. Pendant longtemps, j&rsquo;ai fait avec, r\u00e9sign\u00e9e \u00e0 une pizza correcte mais loin de ce que la p\u00e2te m\u00e9rite.<\/p>\n\n\n\n<p>Et puis un soir, j&rsquo;ai sorti ma po\u00eale en fonte. Chauff\u00e9e \u00e0 blanc sur le feu, elle atteint des temp\u00e9ratures que mon four ne verra jamais. J&rsquo;ai \u00e9tal\u00e9 la p\u00e2te tr\u00e8s finement, je l&rsquo;ai pos\u00e9e dedans sans garniture \u2014 et quelques secondes plus tard, les premi\u00e8res bulles sont apparues. Ce gonflement rapide de la p\u00e2te, ces cloques dor\u00e9es en surface, c&rsquo;est exactement ce que cherche \u00e0 provoquer la chaleur intense d&rsquo;un four \u00e0 pizza.<\/p>\n\n\n\n<p>Le r\u00e9sultat m&rsquo;a franchement surprise. Pas identique \u00e0 l&rsquo;Ooni \u2014 rien ne l&rsquo;est \u2014 mais une pizza fine, croustillante, avec une p\u00e2te vivante qui a vraiment cuit comme elle devait cuire. Et surtout, une m\u00e9thode qui marche m\u00eame sans four du tout.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi la po\u00eale en fonte change tout pour la pizza maison ?<\/h3>\n\n\n\n<p>La pizza napolitaine a besoin de chaleur intense et instantan\u00e9e. C&rsquo;est ce choc thermique qui cr\u00e9e les bulles caract\u00e9ristiques dans la p\u00e2te, qui saisit le fond en quelques secondes, et qui donne ce contraste croustillant-moelleux qu&rsquo;on ne retrouve jamais avec un four domestique classique.<\/p>\n\n\n\n<p>La fonte est le seul mat\u00e9riau de cuisine courante qui accumule et restitue la chaleur avec cette intensit\u00e9. Contrairement \u00e0 une po\u00eale antiadh\u00e9sive ou inox qui chauffe vite mais perd sa chaleur d\u00e8s qu&rsquo;on pose quelque chose de froid dessus, la fonte garde sa temp\u00e9rature m\u00eame quand la p\u00e2te la refroidit l\u00e9g\u00e8rement. C&rsquo;est cette inertie thermique qui fait toute la diff\u00e9rence.<\/p>\n\n\n\n<p>La technique en deux temps \u2014 po\u00eale d&rsquo;abord, four pour finir \u2014 r\u00e9sout aussi le probl\u00e8me du fromage : il est impossible de faire fondre la garniture en m\u00eame temps que la p\u00e2te cuit si vite. On cuit la p\u00e2te seule \u00e0 la po\u00eale, on la garnie, on passe au four \u00e0 250\u00b0C en mode gril quelques minutes. Le fromage fond, la garniture chauffe, la p\u00e2te reste croustillante.<\/p>\n\n\n\n<p>Si tu n&rsquo;as pas de four du tout, un couvercle adapt\u00e9 pos\u00e9 sur la po\u00eale apr\u00e8s avoir ajout\u00e9 la garniture fonctionne aussi \u2014 la vapeur emprisonn\u00e9e fait fondre le fromage en 2-3 minutes. Je n&rsquo;avais pas de couvercle \u00e0 la bonne taille ce soir-l\u00e0, donc four \u2014 mais les deux options marchent.<\/p>\n\n\n\n<p>Et pour ceux qui se posent la question : oui, cette m\u00e9thode fonctionne aussi au barbecue avec une pierre \u00e0 pizza pos\u00e9e sur la grille chaude, et probablement \u00e0 la plancha. Si vous avez essay\u00e9, dites-moi en commentaire !<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour la garniture<\/h3>\n\n\n\n<p>La beaut\u00e9 de cette m\u00e9thode, c&rsquo;est qu&rsquo;elle se pr\u00eate \u00e0 toutes les garnitures du frigo. La p\u00e2te cuit seule, donc tu peux garnir selon ce que tu as sous la main apr\u00e8s cuisson.<\/p>\n\n\n\n<p><strong>La classique improvis\u00e9e<\/strong> Sauce tomate maison ou en bo\u00eete r\u00e9duite \u00e0 la po\u00eale, mozzarella, basilic frais. C&rsquo;est la base, et c&rsquo;est souvent la meilleure. Un filet d&rsquo;huile d&rsquo;olive \u00e0 la sortie du four, et c&rsquo;est tout.<\/p>\n\n\n\n<p><strong>La version fond de frigo<\/strong> Restes de l\u00e9gumes r\u00f4tis, fromage qui tra\u00eene (comt\u00e9, ch\u00e8vre, feta), quelques olives, une poign\u00e9e de roquette pos\u00e9e \u00e0 cru apr\u00e8s le four. C&rsquo;est souvent comme \u00e7a que naissent les meilleures pizzas \u2014 sans plan, avec ce qu&rsquo;il y a. Pour inspiration, va voir mon <a href=\"https:\/\/sommerfoodle.com\/recipe\/caviar-daubergine-maison\/\" type=\"recipe\" id=\"1821\">caviar d&rsquo;aubergine<\/a> maison qui fait une base de pizza exceptionnelle \u00e0 la place de la sauce tomate.<\/p>\n\n\n\n<p><strong>La version blanche<\/strong> Cr\u00e8me fra\u00eeche \u00e9paisse + ail + mozzarella + lardons ou champignons. Pas de tomate. La p\u00e2te napolitaine supporte tr\u00e8s bien les pizzas blanches et le r\u00e9sultat est souvent plus surprenant qu&rsquo;une margherita classique.<\/p>\n\n\n\n<p><strong>Sans four pour finir<\/strong> Si tu n&rsquo;as vraiment pas de four, pose la garniture sur la p\u00e2te cuite \u00e0 la po\u00eale, recouvre d&rsquo;un couvercle et laisse sur feu tr\u00e8s doux 2 \u00e0 3 minutes. Le fromage fond \u00e0 la vapeur. Ce n&rsquo;est pas identique au gratin du four mais \u00e7a fonctionne \u2014 et c&rsquo;est la solution id\u00e9ale en camping ou en location de vacances sans four.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Ne pas assez chauffer la po\u00eale.<\/strong> C&rsquo;est l&rsquo;erreur principale. La po\u00eale en fonte doit \u00eatre chauff\u00e9e \u00e0 vide sur feu vif pendant 3 \u00e0 5 minutes minimum avant de poser la p\u00e2te. Si tu poses la p\u00e2te sur une fonte ti\u00e8de, elle ne bulle pas, elle s\u00e8che lentement et devient dure. La chaleur doit \u00eatre intense et imm\u00e9diate.<\/p>\n\n\n\n<p><strong>\u00c9taler la p\u00e2te trop \u00e9paisse.<\/strong> Une p\u00e2te napolitaine \u00e0 la po\u00eale doit \u00eatre tr\u00e8s fine \u2014 2 \u00e0 3 mm maximum. Plus \u00e9paisse, elle ne cuit pas correctement au centre et reste p\u00e2teuse. N&rsquo;h\u00e9site pas \u00e0 \u00e9tirer jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit presque translucide.<\/p>\n\n\n\n<p><strong>Garder la p\u00e2te trop longtemps \u00e0 la po\u00eale.<\/strong> 60 \u00e0 90 secondes suffisent pour la premi\u00e8re face. D\u00e8s que les bulles apparaissent et que le fond est l\u00e9g\u00e8rement dor\u00e9, retourne ou garnis et passe au four. Une seconde de trop et la p\u00e2te devient trop rigide.<\/p>\n\n\n\n<p><strong>Utiliser de l&rsquo;eau trop chaude pour la p\u00e2te.<\/strong> La levure napolitaine est utilis\u00e9e en tr\u00e8s petite quantit\u00e9 et travaille lentement au froid. De l&rsquo;eau chaude acc\u00e9l\u00e8re la fermentation de fa\u00e7on incontr\u00f4l\u00e9e et donne une p\u00e2te qui gonfle trop vite, sans d\u00e9velopper les ar\u00f4mes. Utilise toujours de l&rsquo;eau froide.<\/p>\n\n\n\n<p><strong>Trop fariner le plan de travail.<\/strong> Un peu de farine \u00e9vite que la p\u00e2te colle, mais trop de farine s\u00e8che la surface et emp\u00eache les bulles de se former correctement \u00e0 la cuisson.
