Plut\u00f4t que de le jeter ou de faire une meringue basique, j&rsquo;ai eu envie de tester quelque chose. Le matcha \u00e9tait l\u00e0, sur l&rsquo;\u00e9tag\u00e8re. J&rsquo;ai pens\u00e9 que le sucr\u00e9 de la meringue devait pouvoir \u00eatre compens\u00e9 par l&rsquo;amertume du Matcha. La r\u00e9ponse : une meringue qui sent vraiment le th\u00e9 vert, avec cette petite note l\u00e9g\u00e8rement am\u00e8re que j&rsquo;adore. J&rsquo;ai ajout\u00e9 un peu de colorant naturel en poudre pour le plaisir des yeux, et j&rsquo;ai fait des mini formats \u2014 parce qu&rsquo;avec le matcha, c&rsquo;est par petite touche que \u00e7a fonctionne. Le r\u00e9sultat ? Une bouch\u00e9e qui surprend, l\u00e9g\u00e8re comme de l&rsquo;air, avec ce parfum discret qui change tout. Servies avec une salade de fraises, c&rsquo;est une base de <a href=\"https:\/\/sommerfoodle.com\/recipe\/pavlova-meringue-creme-fouettee\/\" type=\"recipe\" id=\"932\">pavlova <\/a>vraiment originale.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi faire des mini meringues au matcha ?<\/h2>\n\n\n\n<p>Le matcha a un caract\u00e8re prononc\u00e9 \u2014 l\u00e9g\u00e8rement amer, v\u00e9g\u00e9tal, persistant. En grande quantit\u00e9 dans une meringue classique, ce serait \u00e9touffant. En mini format, il joue parfaitement son r\u00f4le : il parfume sans dominer, il intrigue sans agresser.<\/p>\n\n\n\n<p>Il y a aussi l&rsquo;aspect visuel. Le vert naturel du matcha donne une teinte p\u00e2le et un peu ind\u00e9finie \u00e0 la meringue cuite \u2014 en ajoutant un colorant naturel en poudre (spiruline verte ou chlorophylle), on obtient un vert franc et app\u00e9tissant qui reste coh\u00e9rent avec l&rsquo;ingr\u00e9dient. Rien d&rsquo;artificiel dans l&rsquo;assiette.<\/p>\n\n\n\n<p>Et enfin, l&rsquo;anti-gaspi. Un blanc d&rsquo;\u0153uf seul, c&rsquo;est souvent le reste d&rsquo;une recette qui en utilisait uniquement les jaunes. Cette recette est taill\u00e9e pour \u00e7a.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Sans colorant.<\/strong> La meringue au matcha nature a une couleur cr\u00e8me l\u00e9g\u00e8rement verd\u00e2tre \u00e0 la sortie du four \u2014 tout \u00e0 fait joli, juste plus discret.<\/p>\n\n\n\n<p><strong>Avec du matcha de c\u00e9r\u00e9monie vs. culinaire.<\/strong> Le matcha culinaire (moins cher) convient bien ici \u2014 la chaleur du four att\u00e9nue les nuances fines. Inutile d&rsquo;utiliser votre matcha de c\u00e9r\u00e9monie pour cette recette.<\/p>\n\n\n\n<p><strong>En base de <a href=\"https:\/\/sommerfoodle.com\/recipe\/pavlova-meringue-creme-fouettee\/\" type=\"recipe\" id=\"932\">pavlova<\/a> individuelle.<\/strong> Former des nids plut\u00f4t que des mini d\u00f4mes \u2014 creuser l\u00e9g\u00e8rement le centre avant cuisson pour accueillir une cuill\u00e8re de cr\u00e8me fouett\u00e9e et des fraises fra\u00eeches.<\/p>\n\n\n\n<p><strong>Aromatiser autrement.<\/strong> Une pointe de zeste de citron vert dans la meringue fait ressortir le c\u00f4t\u00e9 v\u00e9g\u00e9tal du matcha. \u00c0 tester si tu aimes les associations plus franches.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas utiliser des blancs froids directement sortis du r\u00e9frig\u00e9rateur.<\/strong> Les blancs montent mieux \u00e0 temp\u00e9rature ambiante \u2014 les sortir 30 minutes avant.<\/p>\n\n\n\n<p><strong>Ajouter le sucre trop vite.<\/strong> Si tu verses le sucre d\u00e8s le d\u00e9but, la meringue ne monte pas correctement. Attendre que les blancs soient mousseux avant d&rsquo;incorporer le sucre en filet, progressivement.<\/p>\n\n\n\n<p><strong>Ne pas tamiser le matcha.<\/strong> La poudre de matcha forme facilement des grumeaux qui cr\u00e9ent des points verts fonc\u00e9s dans la meringue. Toujours tamiser avant d&rsquo;incorporer.<\/p>\n\n\n\n<p><strong>Cuire trop chaud ou trop vite.<\/strong> La meringue se fait \u00e0 basse temp\u00e9rature (90-100\u00b0C) sur une dur\u00e9e longue. Une chaleur trop forte la craquelle et la colore en beige \u2014 elle perd son moelleux int\u00e9rieur.<\/p>\n\n\n\n<p><strong>Ouvrir le four en cours de cuisson.<\/strong> La variation de temp\u00e9rature fait retomber les meringues. Patience.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ces petites meringues au matcha sont devenues ma r\u00e9ponse pr\u00e9f\u00e9r\u00e9e au blanc d&rsquo;\u0153uf orphelin. L\u00e9g\u00e8res, parfum\u00e9es, avec ce vert qui attire l&rsquo;\u0153il \u2014 elles transforment une simple salade de fraises en quelque chose qui ressemble vraiment \u00e0 un dessert.
