Les courges d&rsquo;hiver, la patate douce, les carottes, le chou-fleur&#8230; Une plaque, un filet d&rsquo;huile d&rsquo;olive, un peu de sel et le four fait tout le travail. Alors quand la saison des asperges est arriv\u00e9e, je me suis demand\u00e9 pourquoi je n&rsquo;avais pas essay\u00e9 plus t\u00f4t. La r\u00e9ponse honn\u00eate ? Je pensais que l&rsquo;asperge, \u00e7a se cuisait \u00e0 la vapeur ou sous vide, avec quelques herbes et de l&rsquo;huile d&rsquo;olive. Technique qui fonctionne parfaitement mais tout le monde n&rsquo;a pas un appareil de cuisson sous vide \u00e0 la maison. Le four, lui, tout le monde l&rsquo;a. Et le r\u00e9sultat m&rsquo;a surprise : les pointes caram\u00e9lisent l\u00e9g\u00e8rement, les tiges restent tendres. Avec une petite sauce yaourt au miso blanc et citron, \u00e7a devient un plat \u00e0 part enti\u00e8re.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Pourquoi r\u00f4tir les asperges au four plut\u00f4t que les cuire \u00e0 l&rsquo;eau ?<\/strong><\/p>\n\n\n\n<p>La cuisson \u00e0 l&rsquo;eau, c&rsquo;est le r\u00e9flexe classique. Et pourtant, elle a un d\u00e9faut : elle dilue une partie des ar\u00f4mes dans l&rsquo;eau de cuisson. Le four, lui, concentre les saveurs. La chaleur s\u00e8che \u00e0 haute temp\u00e9rature caram\u00e9lise l\u00e9g\u00e8rement les sucres naturels de l&rsquo;asperge. C&rsquo;est ce qui donne ces petites pointes dor\u00e9es si app\u00e9tissantes. La texture est diff\u00e9rente aussi : ferme \u00e0 c\u0153ur, presque fondante \u00e0 la tige, avec un l\u00e9ger croquant en surface.<\/p>\n\n\n\n<p>Autre avantage non n\u00e9gligeable : vous n&rsquo;avez rien \u00e0 surveiller. On enfourne, on pr\u00e9pare la sauce, on dresse. Vingt minutes en tout.<\/p>\n\n\n\n<p>Pour les valeurs nutritionnelles : l&rsquo;asperge est l&rsquo;un des l\u00e9gumes les plus int\u00e9ressants du printemps. Tr\u00e8s faible en calories, riche en folates (vitamine B9), en vitamine C et en fibres. Elle est naturellement compatible avec un r\u00e9gime k\u00e9to, sans gluten, et convient parfaitement aux v\u00e9g\u00e9tariens : <a href=\"https:\/\/ciqual.anses.fr\/\">https:\/\/ciqual.anses.fr\/<\/a><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>La sauce yaourt miso et citron \u2014 pourquoi c&rsquo;est une bonne id\u00e9e<\/strong><\/p>\n\n\n\n<p>Le miso blanc (shiro miso), c&rsquo;est ma petite touche d&rsquo;originalit\u00e9 dans cette recette. On ne l&rsquo;attend pas avec des asperges, et pourtant il s&rsquo;y marie tr\u00e8s bien. Contrairement au miso fonc\u00e9 qui est fort et sal\u00e9, le miso blanc est doux, l\u00e9g\u00e8rement sucr\u00e9, presque cr\u00e9meux. Il apporte de la profondeur \u00e0 la sauce sans l&rsquo;alourdir. Une cuill\u00e8re \u00e0 caf\u00e9 suffit.<\/p>\n\n\n\n<p>M\u00e9lang\u00e9 \u00e0 du yaourt grec, du zeste de citron et un peu d&rsquo;ail r\u00e2p\u00e9, il donne une sauce fra\u00eeche et umami qu&rsquo;on a envie de finir \u00e0 la cuill\u00e8re. Et si vous n&rsquo;avez pas de miso blanc sous la main, une cuill\u00e8re de tahini fonctionne tr\u00e8s bien en substitution. Le r\u00e9sultat est diff\u00e9rent mais tout aussi bon.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong> Variantes pour adapter la recette<\/strong><\/p>\n\n\n\n<p>Cette recette est une bonne base, modulable \u00e0 l&rsquo;envie :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Version parmesan<\/strong> : parsemer les asperges de copeaux de parmesan dans les 3 derni\u00e8res minutes de cuisson. Les pointes gratinent l\u00e9g\u00e8rement. Un classique qui pla\u00eet \u00e0 tout le monde.<\/li>\n\n\n\n<li><strong>Version vegan<\/strong> : remplacer le yaourt grec par un yaourt de soja nature (texture identique) et v\u00e9rifier que votre miso ne contient pas de bonite s\u00e9ch\u00e9e, certains misos traditionnels en contiennent.<\/li>\n\n\n\n<li><strong>Version repas complet<\/strong> : servir les asperges et leur sauce sur un lit de riz complet ou quinoa fa\u00e7on bowl, avec un <a href=\"https:\/\/sommerfoodle.com\/recipe\/oeuf-basse-temperature-sans-thermometre\/\" type=\"recipe\" id=\"3403\">\u0153uf poch\u00e9 ou mollet<\/a> pos\u00e9 dessus.<\/li>\n\n\n\n<li><strong>Version ap\u00e9ro<\/strong> : couper les asperges r\u00f4ties en tron\u00e7ons de 5 cm et servir la sauce en dip. \u00c7a part toujours tr\u00e8s vite.<\/li>\n\n\n\n<li><strong>En accompagnement<\/strong> : ces asperges r\u00f4ties accompagnent tr\u00e8s bien un poisson blanc au four ou des <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/cuisses-de-poulet-marinees-et-roties-au-four\/\">cuisses de poulet marin\u00e9es et r\u00f4ties<\/a>.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong> Erreurs \u00e0 \u00e9viter<\/strong><\/p>\n\n\n\n<p><strong>Ne pas s\u00e9cher les asperges avant d&rsquo;enfourner.<\/strong> Si elles sortent du robinet encore humides, la vapeur va les cuire \u00e0 l&rsquo;\u00e9touff\u00e9e plut\u00f4t que les r\u00f4tir. R\u00e9sultat : molles et sans couleur. Un passage dans un torchon propre ou quelques minutes \u00e0 l&rsquo;air suffisent.<\/p>\n\n\n\n<p><strong>Choisir des asperges trop fines.<\/strong> Les tr\u00e8s fines cuiront trop vite et risquent de br\u00fbler avant d&rsquo;\u00eatre cuite \u00e0 c\u0153ur. Visez une \u00e9paisseur d&rsquo;environ 1 cm \u00e0 la tige. Si vous avez des calibres mixtes sur votre plaque, surveillez les plus fines d\u00e8s 10 minutes.<\/p>\n\n\n\n<p><strong>Trop charger la plaque.<\/strong> Les asperges ont besoin d&rsquo;espace pour r\u00f4tir, pas cuire \u00e0 la vapeur. Si elles se superposent, elles rendent leur eau et le r\u00e9sultat est d\u00e9cevant. Mieux vaut utiliser deux plaques plut\u00f4t qu&rsquo;une seule trop pleine.<\/p>\n\n\n\n<p><strong>Pr\u00e9parer la sauce trop \u00e0 l&rsquo;avance avec l&rsquo;ail cru.<\/strong> L&rsquo;ail r\u00e2p\u00e9 devient tr\u00e8s puissant pass\u00e9 une heure. Si vous pr\u00e9parez la sauce \u00e0 l&rsquo;avance, ajoutez l&rsquo;ail au dernier moment ou utilisez de l&rsquo;ail en poudre pour une version plus douce.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Le four a d\u00e9cid\u00e9ment tout bon avec les l\u00e9gumes de printemps. Si vous avez d\u00e9j\u00e0 succomb\u00e9 aux courges et aux patates douces r\u00f4ties, les asperges vont vous r\u00e9concilier avec ce l\u00e9gume souvent r\u00e9serv\u00e9 aux grandes occasions. Vite faite, l\u00e9g\u00e8re, et cette sauce au miso qui surprend \u00e0 chaque fois.
