J&rsquo;avais ma version cuite, test\u00e9e et retest\u00e9e depuis Le Jolant : ferme, bien caram\u00e9lis\u00e9e sur les bords, tr\u00e8s new-yorkaise. Et puis un soir, j&rsquo;ai voulu quelque chose de plus l\u00e9ger, presque a\u00e9rien. J&rsquo;avais du mascarpone \u00e0 finir, de la cr\u00e8me, mes incontournables poudre d&rsquo;amande et \u00e9rythritol. Et un sachet d&rsquo;agar-agar qui attendait dans le placard.<\/p>\n\n\n\n<p>R\u00e9sultat : une texture qui n&rsquo;a rien \u00e0 envier \u00e0 l&rsquo;original. Cr\u00e9meuse, fondante, avec ce l\u00e9ger tremblement du g\u00e2teau bien froid quand on le sort du moule. Une alternative pour la saison estivale.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi cette version sans cuisson est diff\u00e9rente<\/h2>\n\n\n\n<p>La version cuite donne une texture dense et ferme, c&rsquo;est sa force. Mais quand on cherche quelque chose de plus frais, de plus d\u00e9licat, le cheesecake sans cuisson a un avantage d\u00e9cisif : la cr\u00e8me reste vivante, le mascarpone garde tout son moelleux.<\/p>\n\n\n\n<p>L&rsquo;agar-agar est la cl\u00e9. Contrairement \u00e0 la g\u00e9latine animale, il fonctionne \u00e0 chaud et prend en refroidissant  et il est totalement compatible avec un mode de vie v\u00e9g\u00e9tarien. La texture obtenue est l\u00e9g\u00e8rement plus ferme que la g\u00e9latine, ce qui est exactement ce qu&rsquo;on veut ici pour un d\u00e9moulage net.<\/p>\n\n\n\n<p>C\u00f4t\u00e9 profil k\u00e9to :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Z\u00e9ro farine<\/strong> dans la base (poudre d&rsquo;amande + \u00e9rythritol + beurre)<\/li>\n\n\n\n<li><strong>Z\u00e9ro sucre<\/strong> dans la garniture (\u00e9rythritol en poudre fine, qui se dissout mieux)<\/li>\n\n\n\n<li><strong>Riche en bonnes graisses<\/strong> : mascarpone + cr\u00e8me enti\u00e8re = sati\u00e9t\u00e9 r\u00e9elle<\/li>\n\n\n\n<li><strong>Sans cuisson<\/strong> = index glyc\u00e9mique stable, pas de d\u00e9gradation des mati\u00e8res grasses \u00e0 la chaleur<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Une base croustillante rapide:<\/strong> utiliser 140 gr des biscuits \u00e9cras\u00e9s sans sucre, et rajouter 85 gr de beurre (fondu au micro-ondes). Foncer le fond du moule en tassant bien.<\/p>\n\n\n\n<p><strong>Version vanille intense :<\/strong> remplacer l&rsquo;extrait de vanille par une demi-gousse gratt\u00e9e. Le r\u00e9sultat est plus parfum\u00e9, plus g\u00e9n\u00e9reux.<\/p>\n\n\n\n<p><strong>Version framboises k\u00e9to :<\/strong> d\u00e9poser des framboises fra\u00eeches au fond du moule avant de couler l&rsquo;appareil. Elles remontent l\u00e9g\u00e8rement \u00e0 la surface,  effet visuel tr\u00e8s r\u00e9ussi, et les framboises restent parmi les fruits les moins sucr\u00e9s.<\/p>\n\n\n\n<p><strong>Sans produits laitiers :<\/strong> remplacer le mascarpone par de la cr\u00e8me de cajou maison (cajous tremp\u00e9s mix\u00e9s) et la cr\u00e8me enti\u00e8re par de la cr\u00e8me de coco \u00e9paisse. La texture change un peu mais reste tr\u00e8s agr\u00e9able. Pour un dessert sans lactose qui reste cr\u00e9meaux, c&rsquo;est une belle option, pour un cheesecake v\u00e9g\u00e9talien \u00e0 la noix de cajou.<\/p>\n\n\n\n<p><strong>Avec une base plus croustillante :<\/strong> ajouter 30 g de noix de p\u00e9can concass\u00e9es \u00e0 la poudre d&rsquo;amande. Le croquant r\u00e9siste bien au froid et apporte une dimension suppl\u00e9mentaire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas faire bouillir l&rsquo;agar-agar assez longtemps.<\/strong> C&rsquo;est l&rsquo;erreur la plus courante. L&rsquo;agar-agar doit fr\u00e9mir au moins 2 minutes pour \u00eatre actif, en dessous, la prise est al\u00e9atoire et vous obtenez un appareil qui ne se tient pas. Ne vous fiez pas \u00e0 la couleur ou \u00e0 l&rsquo;aspect : il faut vraiment respecter ce temps.<\/p>\n\n\n\n<p><strong>Incorporer l&rsquo;agar-agar trop chaud dans l&rsquo;appareil froid.<\/strong> Si la pr\u00e9paration agar est encore tr\u00e8s chaude quand vous la versez sur la mascarpone froide, elle peut faire grainer le fromage. Laissez-la ti\u00e9dir 3-4 minutes (sans qu&rsquo;elle fige) avant d&rsquo;incorporer.<\/p>\n\n\n\n<p><strong>Tasser la base trop l\u00e9g\u00e8rement.<\/strong> Une base mal compacte s&rsquo;effrite au d\u00e9moulage. Utilisez le dos d&rsquo;une cuill\u00e8re ou le fond d&rsquo;un verre pour bien presser, elle doit \u00eatre dense et uniforme.<\/p>\n\n\n\n<p><strong>Utiliser de l&rsquo;\u00e9rythritol en cristaux (pas en poudre).<\/strong> Les cristaux ne fondent pas \u00e0 froid et laissent une sensation granuleuse d\u00e9sagr\u00e9able en bouche. Prenez de l&rsquo;\u00e9rythritol en poudre fine, ou mixez-le quelques secondes avant utilisation.<\/p>\n\n\n\n<p><strong>D\u00e9mouler trop t\u00f4t.<\/strong> Minimum 4 heures au r\u00e9frig\u00e9rateur, id\u00e9alement une nuit. L&rsquo;agar-agar prend bien en moins de 2 heures, mais la texture se stabilise vraiment dans la dur\u00e9e.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce cheesecake k\u00e9to sans cuisson, c&rsquo;est ma r\u00e9ponse \u00e0 tous ceux qui pensent que dessert sans sucre rime forc\u00e9ment avec frustration.
