J&rsquo;ai longtemps travaill\u00e9 cette tarte \u00e0 la rhubarbe meringu\u00e9e en cherchant ce petit truc en plus qui ferait la diff\u00e9rence. La cardamome s&rsquo;est impos\u00e9e naturellement. Florale, l\u00e9g\u00e8rement camphr\u00e9, elle attrape l&rsquo;acidit\u00e9 de la rhubarbe et la tire vers quelque chose de plus complexe.<\/p>\n\n\n\n<p>Cette tarte \u00e9tait l&rsquo;une de mes r\u00e9guli\u00e8res au Jolant. Elle revenait \u00e0 chaque saison de rhubarbe, de mai \u00e0 juillet, et elle partait vite. L&rsquo;\u00e9quilibre entre la garniture acidul\u00e9e et la meringue l\u00e9g\u00e8rement craquante en surface est ce qui la rend addictive : chaque bouch\u00e9e joue sur les deux registres \u00e0 la fois.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi la cardamome change tout<\/h3>\n\n\n\n<p>La rhubarbe est un fruit exigeant. Son acidit\u00e9 prononc\u00e9e demande du sucre pour \u00eatre apprivois\u00e9e, mais trop de sucre et on perd ce qui fait son int\u00e9r\u00eat. La cardamome r\u00e9sout cette tension autrement : elle n&rsquo;adoucit pas, elle complexifie. Son parfum floral cr\u00e9e un troisi\u00e8me registre de go\u00fbt qui fait oublier l&rsquo;acidit\u00e9 sans la masquer.<\/p>\n\n\n\n<p>C&rsquo;est le m\u00eame principe que dans les confitures de Christine Ferber, o\u00f9 l&rsquo;\u00e9pice ne se sent pas franchement mais o\u00f9 l&rsquo;on per\u00e7oit imm\u00e9diatement que quelque chose est diff\u00e9rent. La cardamome, ici, c&rsquo;est le petit truc en plus que les gens ne savent pas nommer mais qu&rsquo;ils remarquent.<\/p>\n\n\n\n<p>Utilisez de la cardamome fra\u00eechement moulue si vous le pouvez. Les gousses enti\u00e8res, ouvertes et moulues au mortier juste avant utilisation, ont un parfum sans commune mesure avec la poudre en pot.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version rhubarbe fraise :<\/strong> la fraise adoucit naturellement la garniture et r\u00e9duit le sucre n\u00e9cessaire. Comptez 300 g de rhubarbe et 200 g de fraises. La cardamome fonctionne tout aussi bien avec ce m\u00e9lange, un classique de la confiserie alsacienne justement.<\/p>\n\n\n\n<p><strong>Version p\u00e2te sabl\u00e9e amande :<\/strong> remplacez une partie de la farine par de la poudre d&rsquo;amande dans la p\u00e2te (80 g farine \/ 40 g poudre d&rsquo;amande). La p\u00e2te est plus friable, plus riche, et tient mieux face \u00e0 l&rsquo;humidit\u00e9 de la garniture rhubarbe.<\/p>\n\n\n\n<p><strong>Version sans gluten :<\/strong> utilisez un mix de farine de riz et de f\u00e9cule de ma\u00efs pour la p\u00e2te. La texture change l\u00e9g\u00e8rement mais reste tr\u00e8s acceptable pour une tarte \u00e0 garnir.<\/p>\n\n\n\n<p><strong>Version individuelle :<\/strong> fa\u00e7onnez des tartelettes de 8 cm. Le temps de cuisson de la garniture descend \u00e0 20 minutes, et la meringue se dresse plus facilement en petites touches \u00e0 la poche \u00e0 douille. Si vous l&rsquo;incorporez directement sans la faire d\u00e9gorger avec du sucre, la garniture va rendre du jus \u00e0 la cuisson et d\u00e9tremper la p\u00e2te. Comptez 30 minutes de d\u00e9gorgeage minimum apr\u00e8s avoir sucr\u00e9 les tron\u00e7ons.<\/p>\n\n\n\n<p><strong>Monter les blancs dans un bol humide ou gras.<\/strong> La meringue fran\u00e7aise est capricieuse sur ce point. Une trace de gras ou d&rsquo;humidit\u00e9 dans le bol emp\u00eache les blancs de monter correctement. Essuyez le bol et le fouet avec du papier absorbant imbib\u00e9 de jus de citron avant de commencer.<\/p>\n\n\n\n<p><strong>Incorporer le sucre trop t\u00f4t.<\/strong> Attendez que les blancs commencent \u00e0 mousser avant d&rsquo;ajouter le sucre. Si vous sucrez trop t\u00f4t, la meringue sera moins ferme et moins volumineuse. Le sucre s&rsquo;incorpore en trois fois, progressivement.<\/p>\n\n\n\n<p><strong>Dresser la meringue sur une garniture chaude.<\/strong> La garniture doit \u00eatre refroidie avant de dresser la meringue, sinon elle retombe. Sortez la tarte du four, laissez-la revenir \u00e0 temp\u00e9rature ambiante, puis dressez et repassez bri\u00e8vement au four ou au chalumeau.<\/p>\n\n\n\n<p><strong>Cuire la meringue trop longtemps.<\/strong> L&rsquo;objectif est une meringue l\u00e9g\u00e8rement craquante en surface, souple et fondante \u00e0 l&rsquo;int\u00e9rieur. Quelques minutes sous le grill du four suffisent pour colorer et fixer la surface. Trop longtemps et la meringue durcit compl\u00e8tement et se r\u00e9tracte des bords.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Cette tarte a quelque chose que peu de desserts ont : elle surprend \u00e0 chaque bouch\u00e9e. L&rsquo;acidit\u00e9, le craquant, la cardamome en fond. Elle m\u00e9rite qu&rsquo;on la fasse au moins une fois par saison de rhubarbe.
