La version sans gluten est tr\u00e8s l\u00e9g\u00e8re, et je l&rsquo;ai adopt\u00e9e pour toutes mes recettes. En revanche un biscuit \u00e0 la cuill\u00e8re keto et sans gluten me semblait plus technique. Le sucre semblait irrempla\u00e7able pour obtenir cette texture \u00e0 la fois l\u00e9g\u00e8re et l\u00e9g\u00e8rement absorbante qui fait tout l&rsquo;int\u00e9r\u00eat du biscuit cuill\u00e8re dans un tiramisu ou un framboisier.<\/p>\n\n\n\n<p>Et puis j&rsquo;ai test\u00e9 avec la poudre d&rsquo;amandes. Pas convaincu au premier essai, je l&rsquo;admets. Mais au troisi\u00e8me, j&rsquo;avais trouv\u00e9 les bonnes proportions. Le r\u00e9sultat est moelleux, l\u00e9g\u00e8rement dor\u00e9, et il absorbe parfaitement un sirop ou une cr\u00e8me sans se d\u00e9sint\u00e9grer. Mon tiramisu k\u00e9to et mon framboisier sans sucre ne pourraient plus s&rsquo;en passer.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi ce biscuit cuill\u00e8re k\u00e9to fonctionne vraiment<\/h2>\n\n\n\n<p>La poudre d&rsquo;amandes ne se comporte pas comme la farine de bl\u00e9. Elle est plus grasse, plus dense, et elle n&rsquo;a pas de gluten pour structurer la p\u00e2te. C&rsquo;est l\u00e0 qu&rsquo;intervient la technique des blancs en neige, emprunt\u00e9e directement au biscuit cuill\u00e8re traditionnel.<\/p>\n\n\n\n<p>Les blancs mont\u00e9s en neige ferme apportent la l\u00e9g\u00e8ret\u00e9 et la structure que la farine ne peut plus donner. C&rsquo;est le m\u00eame principe que pour une g\u00e9noise, mais adapt\u00e9 aux contraintes du k\u00e9to.<\/p>\n\n\n\n<p>Ce biscuit pr\u00e9sente plusieurs avantages concrets :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sans gluten naturellement, sans substitut compliqu\u00e9<\/li>\n\n\n\n<li>Sucr\u00e9 \u00e0 l&rsquo;\u00e9rythritol glace, qui se dissout bien dans les blancs sans les faire retomber<\/li>\n\n\n\n<li>Compatible avec tous les r\u00e9gimes k\u00e9to, low-carb et sans gluten<\/li>\n\n\n\n<li>Polyvalent : tiramisu, framboisier, charlotte, ou simplement \u00e0 d\u00e9guster avec un caf\u00e9<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Pour un tiramisu k\u00e9to<\/strong> C&rsquo;est l&rsquo;usage le plus \u00e9vident. Ces biscuits absorbent bien le caf\u00e9 et l&rsquo;amaretto sans se d\u00e9sint\u00e9grer, exactement comme leurs homologues traditionnels. La texture ne change pas.<\/p>\n\n\n\n<p><strong>Version aromatis\u00e9e<\/strong> Ajoutez le zeste d&rsquo;un citron non trait\u00e9 ou une cuill\u00e8re \u00e0 caf\u00e9 d&rsquo;extrait de vanille dans les jaunes pour parfumer subtilement la p\u00e2te. Tr\u00e8s bien avec un framboisier aux fruits rouges.<\/p>\n\n\n\n<p><strong>Sans \u00e9rythritol glace<\/strong> L&rsquo;\u00e9rythritol glace est vraiment pr\u00e9f\u00e9rable ici car il se dissout bien et ne laisse pas de texture granuleuse. Si vous n&rsquo;en avez pas, mixez de l&rsquo;\u00e9rythritol ordinaire en poudre fine avant utilisation.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas tamiser la poudre d&rsquo;amandes.<\/strong> La poudre d&rsquo;amandes a tendance \u00e0 former des grumeaux. Si vous ne la tamisez pas, vous obtiendrez des petits blocs dans la p\u00e2te qui alourdissent le biscuit. Deux minutes de tamisage font vraiment la diff\u00e9rence sur la texture finale.<\/p>\n\n\n\n<p><strong>Monter les blancs trop fermes.<\/strong> Des blancs trop fermes, au stade \u00ab\u00a0bec d&rsquo;oiseau rigide\u00a0\u00bb, sont difficiles \u00e0 incorporer sans les casser. Arr\u00eatez-vous au stade \u00ab\u00a0bec souple\u00a0\u00bb, quand la pointe retombe l\u00e9g\u00e8rement. C&rsquo;est l\u00e0 que la magie op\u00e8re.<\/p>\n\n\n\n<p><strong>Incorporer les blancs trop vite.<\/strong> La technique du \u00ab\u00a0macaronnage\u00a0\u00bb s&rsquo;applique ici.
