Chez moi, c&rsquo;est le signal. Pas pour les jeter, mais pour sortir le moule \u00e0 cake. Le banana bread, c&rsquo;est ma recette r\u00e9flexe quand les bananes ont atteint ce stade o\u00f9 elles ne se mangent plus telles quelles mais o\u00f9 elles sont, paradoxalement, au meilleur de leur saveur pour la p\u00e2tisserie. Plus la banane est m\u00fbre, plus elle est sucr\u00e9e, plus le g\u00e2teau est parfum\u00e9.<\/p>\n\n\n\n<p>Cette version, je l&rsquo;ai all\u00e9g\u00e9e par rapport aux recettes classiques : pas de beurre, remplac\u00e9 par de l&rsquo;huile d&rsquo;olive, du sucre de coco \u00e0 indice glyc\u00e9mique plus faible que le sucre blanc, et de la poudre d&rsquo;amande qui apporte du moelleux et des prot\u00e9ines. Le r\u00e9sultat est dense, humide, avec des p\u00e9pites de chocolat noir \u00e0 70% qui fondent \u00e0 la cuisson. Rien de r\u00e9volutionnaire, juste une version que l&rsquo;on peut manger sans culpabilit\u00e9 au petit-d\u00e9jeuner ou au go\u00fbter.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi cette version est moins sucr\u00e9e et plus nourrissante<\/h3>\n\n\n\n<p>La banane tr\u00e8s m\u00fbre apporte d\u00e9j\u00e0 une douceur naturelle prononc\u00e9e. Inutile donc de charger la recette en sucre ajout\u00e9. Le sucre de coco que j&rsquo;utilise ici a un go\u00fbt l\u00e9g\u00e8rement caram\u00e9lis\u00e9 qui se marie bien avec la banane et le chocolat, et son indice glyc\u00e9mique est inf\u00e9rieur au sucre blanc classique, ce qui ralentit l&rsquo;absorption des glucides.<\/p>\n\n\n\n<p>L&rsquo;huile d&rsquo;olive remplace le beurre sans alourdir la texture. On ne la sent pas au go\u00fbt une fois le g\u00e2teau cuit, contrairement \u00e0 ce que l&rsquo;on pourrait craindre. La poudre d&rsquo;amande, elle, joue un double r\u00f4le : elle apporte du moelleux \u00e0 la mie et augmente la teneur en prot\u00e9ines et en bonnes graisses de la recette, ce qui en fait un petit-d\u00e9jeuner plus rassasiant qu&rsquo;un cake classique.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version chocolat intense :<\/strong> remplacez 30 g de farine par 30 g de cacao non sucr\u00e9 en poudre. Le g\u00e2teau devient plus sombre, plus dense, avec un go\u00fbt de chocolat prononc\u00e9.<\/p>\n\n\n\n<p><strong>Version noix et cannelle :<\/strong> supprimez les p\u00e9pites de chocolat et ajoutez 50 g de cerneaux de noix grossi\u00e8rement concass\u00e9s et une cuill\u00e8re \u00e0 caf\u00e9 de cannelle. Plus rustique, id\u00e9al pour l&rsquo;automne.<\/p>\n\n\n\n<p><strong>Version sans gluten :<\/strong> remplacez la farine T65 par un mix de farine de riz et de farine de sarrasin (75 g \/ 75 g). La texture sera l\u00e9g\u00e8rement plus compacte mais le go\u00fbt reste tr\u00e8s proche. Deux recettes pour le prix d&rsquo;un r\u00e9gime de bananes.<\/p>\n\n\n\n<p><strong>Version avec toppings :<\/strong> parsemez le dessus de la p\u00e2te de flocons d&rsquo;avoine, de noix de p\u00e9can ou d&rsquo;une banane coup\u00e9e en deux dans la longueur avant d&rsquo;enfourner. La banane caram\u00e9lise l\u00e9g\u00e8rement \u00e0 la cuisson et donne un effet visuel soign\u00e9 avec peu d&rsquo;efforts.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Utiliser des bananes pas assez m\u00fbres.<\/strong> C&rsquo;est l&rsquo;erreur la plus fr\u00e9quente. Une banane encore jaune, ferme, donne un g\u00e2teau fade et insuffisamment sucr\u00e9. Attendez vraiment que la peau soit tachet\u00e9e de brun, voire enti\u00e8rement noire. C&rsquo;est \u00e0 ce stade que la banane d\u00e9veloppe toute sa douceur et son ar\u00f4me.<\/p>\n\n\n\n<p><strong>Trop travailler la p\u00e2te.<\/strong> Une fois la farine incorpor\u00e9e, on m\u00e9lange juste assez pour homog\u00e9n\u00e9iser, pas davantage. Trop m\u00e9langer d\u00e9veloppe le gluten et donne un g\u00e2teau caoutchouteux au lieu d&rsquo;\u00eatre moelleux. Quelques tours de spatule suffisent.<\/p>\n\n\n\n<p><strong>Cuire \u00e0 temp\u00e9rature trop \u00e9lev\u00e9e.<\/strong> Le banana bread cuit \u00e0 160\u00b0C, pas \u00e0 180\u00b0C. Une chaleur trop forte grille l&rsquo;ext\u00e9rieur avant que l&rsquo;int\u00e9rieur soit cuit. La cuisson douce et longue est ce qui donne cette mie humide et dense caract\u00e9ristique.<\/p>\n\n\n\n<p><strong>D\u00e9mouler trop t\u00f4t.<\/strong> Le g\u00e2teau doit ti\u00e9dir 10 \u00e0 15 minutes dans le moule avant d\u00e9moulage. Chaud, il est encore fragile et peut se casser. La patience est r\u00e9compens\u00e9e.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce banana bread fait partie des recettes que je pr\u00e9pare presque les yeux ferm\u00e9s maintenant.
