La poche \u00e0 douille intimide, la texture a\u00e9rienne para\u00eet fragile \u00e0 obtenir, et on finit par acheter le paquet au supermarch\u00e9. Pendant des ann\u00e9es, c&rsquo;est ce que j&rsquo;ai fait moi aussi, m\u00eame apr\u00e8s mon CAP, il m&rsquo;a fallu un moment avant de me lancer vraiment.<\/p>\n\n\n\n<p>Et puis j&rsquo;ai eu envie d&rsquo;un tiramisu matcha. Un vrai, avec une base maison. Pas question d&rsquo;utiliser des biscuits industriels pour quelque chose d&rsquo;aussi pr\u00e9cis. J&rsquo;ai donc refait la recette du biscuit \u00e0 la cuill\u00e8re en partant de la base classique : blancs mont\u00e9s, jaunes blanchis, f\u00e9cule \u00e0 la place de la farine,  et j&rsquo;ai int\u00e9gr\u00e9 le matcha directement dans la masse. Le r\u00e9sultat : un biscuit vert p\u00e2le, l\u00e9g\u00e8rement parfum\u00e9, qui fonctionne seul comme base d&rsquo;entremets. La texture est un peu moins a\u00e9rienne que la recette de base mais que j&rsquo;appr\u00e9cie particuli\u00e8rement quand je l&rsquo;utilise pour mes entremets, notamment <a href=\"https:\/\/sommerfoodle.com\/recipe\/fraisier-japonais-matcha\/\" type=\"recipe\" id=\"4175\">mon fraisier matcha.<\/a><\/p>\n\n\n\n<p>La version sans gluten s&rsquo;est impos\u00e9e naturellement : la ma\u00efzena remplace la farine sans aucun compromis sur la texture. En fait, elle donne m\u00eame un biscuit plus fin et plus d\u00e9licat que la version classique.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi la ma\u00efzena change tout<\/h2>\n\n\n\n<p>Le biscuit \u00e0 la cuill\u00e8re traditionnel se fait avec de la farine ordinaire. La ma\u00efzena, elle, est pure f\u00e9cule : pas de gluten, pas de prot\u00e9ines qui viendraient alourdir la structure. Le r\u00e9sultat est un biscuit plus l\u00e9ger, qui fond davantage en bouche, avec une surface l\u00e9g\u00e8rement craquante sous le sucre glace et un int\u00e9rieur mousseux.<\/p>\n\n\n\n<p>Pour les personnes intol\u00e9rantes au gluten, c&rsquo;est la solution la plus simple et la plus efficace : aucun m\u00e9lange de farines, aucun additif, juste de la ma\u00efzena. Et pour tout le monde, c&rsquo;est franchement meilleur que la version farine.<\/p>\n\n\n\n<p>Le matcha s&rsquo;int\u00e8gre directement dans les jaunes d&rsquo;\u0153ufs blanchis. Il parfume sans dominer, on sent le th\u00e9 vert en fond, l\u00e9g\u00e8rement amer, qui \u00e9quilibre la douceur du biscuit. Visuellement, la teinte vert p\u00e2le est \u00e9l\u00e9gante et reconnaissable imm\u00e9diatement.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Version nature :<\/strong> supprimez simplement le matcha. Vous obtenez un biscuit \u00e0 la cuill\u00e8re classique sans gluten, polyvalent, utilisable pour n&rsquo;importe quel entremets.<\/p>\n\n\n\n<p><strong>Version cacao :<\/strong> remplacez le matcha par 10 g de cacao en poudre non sucr\u00e9. Le biscuit prend une teinte brune et un go\u00fbt chocolat\u00e9 l\u00e9ger, parfait pour une base de tiramisu classique ou une charlotte au chocolat.<\/p>\n\n\n\n<p><strong>Version citron :<\/strong> ajoutez le zeste d&rsquo;un citron jaune dans les jaunes blanchis \u00e0 la place du matcha. Plus printanier, tr\u00e8s frais, id\u00e9al pour une charlotte aux framboises.<\/p>\n\n\n\n<p><strong>Usage en entremets :<\/strong> ces biscuits sont la base id\u00e9ale pour un tiramisu matcha, imbib\u00e9s d&rsquo;un sirop au th\u00e9 vert l\u00e9g\u00e8rement sucr\u00e9 \u00e0 la place du caf\u00e9. Ils fonctionnent aussi en charlotte, en fond de verrine ou simplement \u00e0 croquer avec une tasse de th\u00e9. Je reviendrai sur le tiramisu matcha dans un prochain article.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas incorporer la ma\u00efzena en une seule fois.<\/strong> Ajoutez-la en pluie fine, tamis\u00e9e, en deux ou trois fois, en soulevant d\u00e9licatement la masse \u00e0 la maryse. Si vous versez tout d&rsquo;un coup et m\u00e9langez vigoureusement, les blancs retombent et le biscuit perd toute sa l\u00e9g\u00e8ret\u00e9.<\/p>\n\n\n\n<p><strong>Ne pas n\u00e9gliger le tamisage du matcha.<\/strong> Le matcha forme facilement des grumeaux. Tamisez-le avec la ma\u00efzena avant incorporation : vous \u00e9viterez les points verts dans la p\u00e2te et obtiendrez une couleur homog\u00e8ne.<\/p>\n\n\n\n<p><strong>Ne pas dresser sur une plaque froide.<\/strong> La plaque doit \u00eatre \u00e0 temp\u00e9rature ambiante, recouverte de papier cuisson. Une plaque froide provoque un choc thermique qui affaisse les biscuits avant m\u00eame qu&rsquo;ils entrent au four.<\/p>\n\n\n\n<p><strong>Ne pas ouvrir le four pendant la cuisson.<\/strong> Le biscuit \u00e0 la cuill\u00e8re est sensible aux variations de temp\u00e9rature. Les 10-12 premi\u00e8res minutes, on ne touche \u00e0 rien. Une porte ouverte trop t\u00f4t fait s&rsquo;effondrer la structure.<\/p>\n\n\n\n<p><strong>Saupoudrer le sucre glace deux fois.<\/strong> C&rsquo;est le geste qui fait la diff\u00e9rence entre un biscuit plat et un biscuit qui gonfle bien : saupoudrez une premi\u00e8re couche de sucre glace, attendez 2 minutes qu&rsquo;elle soit absorb\u00e9e, saupoudrez \u00e0 nouveau. Cette double couche cr\u00e9e la fine cro\u00fbte craquante caract\u00e9ristique du vrai biscuit \u00e0 la cuill\u00e8re.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Et vous, vous les utiliseriez pour quelle recette ?
