Des pommes, du beurre, de la cassonade. Puis un soir o\u00f9 j&rsquo;avais des courgettes \u00e0 finir et des flocons d&rsquo;avoine dans le placard, j&rsquo;ai eu envie de tester la m\u00eame logique en version sal\u00e9e. La poudre d&rsquo;amande dans la p\u00e2te \u00e0 crumble, c&rsquo;est quelque chose que j&rsquo;utilise r\u00e9guli\u00e8rement en p\u00e2tisserie pour apporter du moelleux. En version sal\u00e9e, elle joue un r\u00f4le diff\u00e9rent : elle donne de la rondeur au crumble et compense le c\u00f4t\u00e9 parfois un peu aust\u00e8re des flocons d&rsquo;avoine seuls.<\/p>\n\n\n\n<p>Le r\u00e9sultat m&rsquo;a convaincue au premier essai. Les courgettes fondent sous la chaleur du four, les tomates cerises apportent une pointe d&rsquo;acidit\u00e9, et le crumble forme une cro\u00fbte dor\u00e9e et croustillante au-dessus. C&rsquo;est un accompagnement qui change des haricots verts vapeur et qui pla\u00eet m\u00eame aux personnes peu enthousiastes \u00e0 l&rsquo;id\u00e9e de manger des l\u00e9gumes.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi les flocons d&rsquo;avoine et la poudre d&rsquo;amande fonctionnent si bien ensemble<\/h3>\n\n\n\n<p>Dans un crumble sucr\u00e9, on utilise farine, beurre et sucre. En version sal\u00e9e, la farine peut \u00eatre remplac\u00e9e par des flocons d&rsquo;avoine, qui apportent du croquant et une l\u00e9g\u00e8re note toast\u00e9e \u00e0 la cuisson. La poudre d&rsquo;amande, elle, lie les flocons sans alourdir et donne cette texture friable caract\u00e9ristique du crumble, avec une saveur l\u00e9g\u00e8rement noisett\u00e9e qui se marie tr\u00e8s bien avec les l\u00e9gumes d&rsquo;\u00e9t\u00e9.<\/p>\n\n\n\n<p>Cette combinaison est aussi naturellement sans gluten si vous utilisez des flocons d&rsquo;avoine certifi\u00e9s sans gluten, ce qui en fait un accompagnement adapt\u00e9 \u00e0 un large public sans aucun ajustement suppl\u00e9mentaire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version proven\u00e7ale :<\/strong> ajoutez une cuill\u00e8re \u00e0 caf\u00e9 d&rsquo;herbes de Provence et une demi-gousse d&rsquo;ail r\u00e2p\u00e9e dans la garniture de courgettes avant d&rsquo;enfourner. Le parfum est imm\u00e9diatement plus m\u00e9ridional et s&rsquo;accorde bien avec un poisson grill\u00e9 ou des c\u00f4telettes d&rsquo;agneau.<\/p>\n\n\n\n<p><strong>Version fromage fondu :<\/strong> \u00e9miettez 60 g de feta ou de ch\u00e8vre frais sur les courgettes avant de r\u00e9partir le crumble. Le fromage fond \u00e0 la cuisson et cr\u00e9e une couche cr\u00e9meuse entre les l\u00e9gumes et le croustillant. Le cumin se marie particuli\u00e8rement bien avec les courgettes et donne une dimension plus chaude au plat.<\/p>\n\n\n\n<p><strong>Version poivron :<\/strong> remplacez la moiti\u00e9 des courgettes par des poivrons rouges coup\u00e9s en d\u00e9s. La douceur du poivron r\u00f4ti contraste bien avec le croustillant du crumble et la l\u00e9g\u00e8re acidit\u00e9 des tomates cerises.<\/p>\n\n\n\n<p><strong>Version plat complet :<\/strong> ajoutez une bo\u00eete de pois chiches \u00e9goutt\u00e9s dans la garniture de l\u00e9gumes : le crumble sal\u00e9 devient alors un plat v\u00e9g\u00e9tarien complet, suffisant pour un d\u00eener l\u00e9ger avec une salade verte.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Ne pas faire d\u00e9gorger les courgettes.<\/strong> Les courgettes contiennent beaucoup d&rsquo;eau. Sans d\u00e9gorgeage, elles rendent du jus \u00e0 la cuisson, d\u00e9trempe la base et ramollit le crumble par le dessous. Coupez-les en d\u00e9s, salez l\u00e9g\u00e8rement et laissez-les reposer 15 minutes dans une passoire. \u00c9gouttez et \u00e9pongez avec du papier absorbant avant d&rsquo;assembler le plat.<\/p>\n\n\n\n<p><strong>Utiliser le beurre trop chaud.<\/strong> Le beurre doit \u00eatre froid, sorti directement du r\u00e9frig\u00e9rateur, et incorpor\u00e9 en petits morceaux du bout des doigts. Un beurre ramolli ou fondu donne une p\u00e2te qui colle et qui ne s&rsquo;\u00e9miette pas correctement. Travaillez vite pour \u00e9viter que la chaleur des mains ne fasse fondre le beurre.<\/p>\n\n\n\n<p><strong>Faire le crumble trop \u00e9pais.<\/strong> Une couche de crumble de un centim\u00e8tre maximum suffit. Trop \u00e9pais, il reste mou \u00e0 l&rsquo;int\u00e9rieur m\u00eame quand la surface est dor\u00e9e. L&rsquo;objectif est une cro\u00fbte fine et uniform\u00e9ment croustillante, pas un couvercle compact.<\/p>\n\n\n\n<p><strong>Cuire \u00e0 temp\u00e9rature trop basse.<\/strong> Le crumble a besoin de 180-200\u00b0C pour dorer correctement. En dessous, les flocons d&rsquo;avoine restent mous et la poudre d&rsquo;amande ne d\u00e9veloppe pas ses ar\u00f4mes. Et si votre four a tendance \u00e0 chauffer peu, montez \u00e0 200\u00b0C et surveillez la coloration \u00e0 partir de 20 minutes.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce crumble sal\u00e9 a chang\u00e9 ma fa\u00e7on de voir les accompagnements de l\u00e9gumes.
