L&rsquo;id\u00e9e me trottait depuis longtemps et je voulais absolument tester avec des cranberries. Pour un r\u00e9sultat plus l\u00e9ger, j&rsquo;ai opt\u00e9 pour de la ricotta \u00e0 la place du mascarpone. Pos\u00e9 sur une planche avec quelques noix et des <a href=\"https:\/\/sommerfoodle.com\/recipe\/crackers-keto-aux-graines\/\" type=\"recipe\" id=\"2180\">crackers keto<\/a>. Mes invit\u00e9s ont cru que j&rsquo;avais pass\u00e9 du temps en cuisine. Ce n&rsquo;\u00e9tait pas le cas.<\/p>\n\n\n\n<p>Ce camembert fourr\u00e9 aux fruits secs froid, c&rsquo;est une entr\u00e9e fromag\u00e8re qui joue sur les contrastes. La douceur cr\u00e9meuse de la ricotta, l&rsquo;acidit\u00e9 l\u00e9g\u00e8rement sucr\u00e9e des cranberries, le croquant des noix et des noisettes, et la cro\u00fbte fleurie du camembert qui tient l&rsquo;ensemble comme un \u00e9crin. Servi avec des crackers rustiques, du pain de seigle grill\u00e9 ou simplement des noix suppl\u00e9mentaires, il se suffit \u00e0 lui-m\u00eame pour une entr\u00e9e ou un plateau fromages original.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi la ricotta est la garniture id\u00e9ale<\/h3>\n\n\n\n<p>La ricotta a une texture l\u00e9g\u00e8re et a\u00e9rienne qui ne prend pas le dessus sur le go\u00fbt du camembert. Contrairement \u00e0 un fromage frais plus dense ou \u00e0 un ch\u00e8vre qui dominerait, elle joue un r\u00f4le de liant neutre qui met en valeur les cranberries et les fruits secs. Sa l\u00e9g\u00e8re acidit\u00e9 naturelle \u00e9quilibre la richesse du camembert affin\u00e9.<\/p>\n\n\n\n<p>Elle a aussi l&rsquo;avantage de se travailler facilement \u00e0 la fourchette sans mat\u00e9riel particulier, et de tenir au froid sans rendre d&rsquo;eau, ce qui est essentiel pour que la garniture reste bien en place au moment de servir.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Comment choisir son camembert<\/h3>\n\n\n\n<p>Un camembert trop fait, tr\u00e8s coulant, est difficile \u00e0 \u00e9vider proprement et ne se tient pas bien une fois referm\u00e9. Choisissez un camembert \u00e0 point ou l\u00e9g\u00e8rement ferme au c\u0153ur : la cro\u00fbte fleurie est bien form\u00e9e, la p\u00e2te souple mais pas liquide. Un camembert de Normandie AOP au lait cru donnera le meilleur r\u00e9sultat en termes de go\u00fbt, mais un camembert de qualit\u00e9 courante fonctionne tr\u00e8s bien pour cette recette.<\/p>\n\n\n\n<p>En Andorre, vous trouvez de bons camemberts au rayon fromagerie des supermarch\u00e9s locaux et chez les \u00e9piceries fines qui proposent des fromages fran\u00e7ais import\u00e9s.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version figue et pistache :<\/strong> remplacez les cranberries par des figues s\u00e8ches coup\u00e9es en petits d\u00e9s et les noisettes par des pistaches non sal\u00e9es concass\u00e9es. Plus doux, moins acidul\u00e9, tr\u00e8s adapt\u00e9 \u00e0 un plateau de f\u00eates.<\/p>\n\n\n\n<p><strong>Version miel et noix de p\u00e9can :<\/strong> supprimez les cranberries et ajoutez un filet de miel dans la ricotta avec des noix de p\u00e9can concass\u00e9es. Servez avec un filet de miel suppl\u00e9mentaire sur le dessus au moment de table. Version plus sucr\u00e9e, parfaite en fin de repas sur un plateau fromages.<\/p>\n\n\n\n<p><strong>Version herbes fra\u00eeches :<\/strong> remplacez les cranberries par de la ciboulette et du persil finement cisel\u00e9s. Le camembert fourr\u00e9 aux herbes est une version plus fra\u00eeche et moins sucr\u00e9e, qui accompagne tr\u00e8s bien des crudit\u00e9s \u00e0 l&rsquo;ap\u00e9ritif.<\/p>\n\n\n\n<p><strong>Version ap\u00e9ritif individuel :<\/strong> utilisez de petits fromages type camembert miniature ou rocamadour. \u00c9videz-les d\u00e9licatement, garnissez de la m\u00eame pr\u00e9paration et servez un fromage par convive. L&rsquo;effet visuel est soign\u00e9 et le service est simplifi\u00e9.<\/p>\n\n\n\n<p>Pour rester dans l&rsquo;esprit ap\u00e9ritif et plateau fromages original, vous appr\u00e9cierez aussi mes <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/crackers-aux-graines\/\">crackers rustiques aux graines<\/a> \u2014 la base id\u00e9ale pour accompagner ce camembert.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter pour le camembert fourr\u00e9 aux fruits secs<\/h3>\n\n\n\n<p><strong>Utiliser une ricotta trop humide.<\/strong> Certaines ricottas industrielles rendent beaucoup d&rsquo;eau. \u00c9gouttez-la dans une passoire fine 30 minutes avant utilisation si elle vous semble trop liquide. Une garniture trop humide d\u00e9trempe la cro\u00fbte du camembert et la garniture ne se tient pas \u00e0 la d\u00e9coupe. J&rsquo;utilise <a href=\"https:\/\/fr.openfoodfacts.org\/produit\/3564707128117\/ricotta-bio-8-mat-gr-bio-village\">la ricotta bio : bio village <\/a>que l&rsquo;on trouve au Leclerc d&rsquo;Andorre la Vieille, elle est parfaite.<\/p>\n\n\n\n<p><strong>Garnir trop longtemps \u00e0 l&rsquo;avance.<\/strong> Le camembert fourr\u00e9 se pr\u00e9pare id\u00e9alement 2 \u00e0 4 heures \u00e0 l&rsquo;avance au maximum. Au-del\u00e0, l&rsquo;humidit\u00e9 de la ricotta peut commencer \u00e0 ramollir la cro\u00fbte (mais ce n&rsquo;est pas syst\u00e9matique : il me reste souvent du camembert et le lendemain, il est encore tr\u00e8s bon). Pr\u00e9parez la garniture la veille si vous voulez gagner du temps, et assemblez le camembert le jour m\u00eame.<\/p>\n\n\n\n<p><strong>Servir trop froid.<\/strong> Un fromage sorti directement du r\u00e9frig\u00e9rateur est sans go\u00fbt. Sortez le camembert fourr\u00e9 20 \u00e0 30 minutes avant de servir. La ricotta reste fra\u00eeche, la cro\u00fbte du camembert d\u00e9veloppe ses ar\u00f4mes et la texture est bien plus agr\u00e9able \u00e0 temp\u00e9rature l\u00e9g\u00e8rement ambiante.<\/p>\n\n\n\n<p><strong>Couper des cranberries trop grosses.<\/strong> Des cranberries enti\u00e8res dans la garniture cr\u00e9ent des poches d&rsquo;air et la garniture ne tient pas bien dans le camembert \u00e9vid\u00e9. Coupez-les en deux ou en trois selon leur taille pour une r\u00e9partition homog\u00e8ne qui se tient \u00e0 la d\u00e9coupe.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ce camembert fourr\u00e9 aux fruits secs est devenu une de mes solutions favorites quand je re\u00e7ois sans avoir envie de passer des heures en cuisine.
