Ma version aux lentilles corail a eu un vrai succ\u00e8s sur le blog, et plusieurs d&rsquo;entre vous m&rsquo;ont demand\u00e9 une alternative pour varier les prot\u00e9ines v\u00e9g\u00e9tales. J&rsquo;avais envie de tester avec du tofu, et l&rsquo;id\u00e9e du tofu fum\u00e9 s&rsquo;est impos\u00e9e assez vite : il a ce petit go\u00fbt grill\u00e9 qui rappelle la viande sans jamais essayer de l&rsquo;imiter compl\u00e8tement. Pour la b\u00e9chamel, j&rsquo;ai voulu pousser l&rsquo;exercice plus loin en rempla\u00e7ant le lait et le beurre par du tofu soyeux mix\u00e9. Le r\u00e9sultat est \u00e9tonnamment proche d&rsquo;une vraie b\u00e9chamel, en plus l\u00e9ger et plus prot\u00e9in\u00e9. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi cette version tofu vaut le d\u00e9tour<\/h2>\n\n\n\n<p>Le tofu fum\u00e9 apporte une texture ferme qui tient bien \u00e0 la cuisson, contrairement aux lentilles corail qui fondent dans la sauce. \u00c9miett\u00e9 \u00e0 la fourchette puis revenu \u00e0 la po\u00eale avant d&rsquo;\u00eatre incorpor\u00e9 \u00e0 la sauce tomate, il garde du mordant. C&rsquo;est un plat qui a plus de m\u00e2che que la version aux lentilles, pour ceux qui cherchent une texture qui se rapproche davantage d&rsquo;une moussaka classique \u00e0 la viande.<\/p>\n\n\n\n<p>La b\u00e9chamel au tofu soyeux est la vraie nouveaut\u00e9 de cette recette. Mix\u00e9 avec un peu de lait v\u00e9g\u00e9tal, de la muscade et un trait de jus de citron, le tofu soyeux donne une texture cr\u00e9meuse et nappante tr\u00e8s proche d&rsquo;une b\u00e9chamel traditionnelle, sans roux, sans beurre. Elle gratine bien au four et dore en surface presque comme l&rsquo;originale.<\/p>\n\n\n\n<p>Niveau prot\u00e9ines, cette version a un net avantage. Le tofu fum\u00e9 et le tofu soyeux cumul\u00e9s apportent davantage de prot\u00e9ines compl\u00e8tes que les lentilles corail, ce qui en fait un plat particuli\u00e8rement int\u00e9ressant pour un repas v\u00e9g\u00e9tarien qui doit vraiment caler.<\/p>\n\n\n\n<p>Et si vous testiez ma <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/moussaka-vegetarienne-lentilles-corail\/\">version aux lentilles corail <\/a>?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h2>\n\n\n\n<p><strong>Version plus fum\u00e9e :<\/strong> ajoutez une demi-cuill\u00e8re \u00e0 caf\u00e9 de paprika fum\u00e9 dans la sauce tomate en plus du tofu fum\u00e9. L&rsquo;effet \u00ab\u00a0barbecue\u00a0\u00bb se renforce sans d\u00e9naturer le plat.<\/p>\n\n\n\n<p><strong>Sans tofu soyeux :<\/strong> si vous n&rsquo;en trouvez pas, une b\u00e9chamel classique au lait et \u00e0 la farine fonctionne tr\u00e8s bien aussi. La texture sera plus dense, mais le r\u00e9sultat reste excellent.<\/p>\n\n\n\n<p><strong>Version sans gluten :<\/strong> utilisez de la f\u00e9cule de ma\u00efs \u00e0 la place de la farine si vous optez pour une b\u00e9chamel classique. La version au tofu soyeux est naturellement sans gluten.<\/p>\n\n\n\n<p><strong>Pour plus de m\u00e2che :<\/strong> coupez le tofu fum\u00e9 en petits d\u00e9s plut\u00f4t que de l&rsquo;\u00e9mietter. La texture se rapproche encore davantage d&rsquo;un plat traditionnel \u00e0 la viande hach\u00e9e.<\/p>\n\n\n\n<p><strong>Version \u00e9pic\u00e9e :<\/strong> une pinc\u00e9e de cannelle dans la sauce tomate, comme dans la recette grecque traditionnelle. C&rsquo;est subtil mais \u00e7a change vraiment le profil aromatique du plat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h2>\n\n\n\n<p><strong>Ne pas faire d\u00e9gorger les aubergines.<\/strong> Les tranches d&rsquo;aubergine rendent beaucoup d&rsquo;eau \u00e0 la cuisson si elles ne sont pas d\u00e9gorg\u00e9es au sel au pr\u00e9alable. Sans cette \u00e9tape, la moussaka risque d&rsquo;\u00eatre d\u00e9tremp\u00e9e et l&rsquo;aubergine moins fondante. Trente minutes de d\u00e9gorgement font toute la diff\u00e9rence.<\/p>\n\n\n\n<p><strong>Ne pas trop ass\u00e9cher le tofu fum\u00e9 avant de l&rsquo;incorporer.<\/strong> Si le tofu est trop press\u00e9 et sec, il devient granuleux dans la sauce. \u00c9miettez-le sans exc\u00e8s de pression et laissez-le simplement bien dorer \u00e0 la po\u00eale, \u00e7a suffit pour qu&rsquo;il reste agr\u00e9able en bouche.<\/p>\n\n\n\n<p><strong>Ne pas mixer la b\u00e9chamel au tofu soyeux trop longtemps.<\/strong> Un mixage trop pouss\u00e9 rend la texture presque mousseuse, ce qui complique le nappage. Mixez juste assez pour obtenir une texture lisse et homog\u00e8ne, sans insister.<\/p>\n\n\n\n<p><strong>Ne pas oublier d&rsquo;assaisonner g\u00e9n\u00e9reusement la b\u00e9chamel.<\/strong> Le tofu soyeux a un go\u00fbt neutre qui a besoin de muscade, de sel et de poivre pour se rapprocher du go\u00fbt d&rsquo;une vraie b\u00e9chamel. Go\u00fbtez avant de napper, c&rsquo;est le moment de rectifier.<\/p>\n\n\n\n<p><strong>Ne pas servir la moussaka tout de suite \u00e0 la sortie du four.<\/strong> Comme la version classique, elle a besoin de reposer 10 \u00e0 15 minutes avant la d\u00e9coupe pour que les couches se tiennent bien.
