Dans les granjas, ces caf\u00e9s-boulangeries espagnols o\u00f9 l&rsquo;on prend le petit-d\u00e9jeuner debout, elles tr\u00f4nent sous cloche, saupoudr\u00e9es de sucre glace, enroul\u00e9es en spirale. J&rsquo;en ai go\u00fbt\u00e9 plusieurs fois et la texture m&rsquo;a imm\u00e9diatement intrigu\u00e9e : a\u00e9rienne, filante, avec ce feuilletage l\u00e9ger qui n&rsquo;appartient qu&rsquo;\u00e0 cette brioche-l\u00e0.<\/p>\n\n\n\n<p>Evidemment, j&rsquo;ai voulu la faire moi-m\u00eame. La recette traditionnelle majorquine utilise du saindoux, ce qui explique en grande partie cette texture si particuli\u00e8re. Mes premiers essais avec du saindoux ont \u00e9t\u00e9 d\u00e9cevants, loin du r\u00e9sultat que j&rsquo;avais en t\u00eate. Puis un samedi, plus de beurre ni de saindoux en stock, une envie de p\u00e2tisser et de la levure fra\u00eeche \u00e0 utiliser. J&rsquo;ai tent\u00e9 avec de l&rsquo;huile v\u00e9g\u00e9tale. C&rsquo;\u00e9tait exactement ce que je cherchais depuis le d\u00e9but.<\/p>\n\n\n\n<p>Cette version n&rsquo;est pas conventionnelle, mais elle fonctionne. Et elle a l&rsquo;avantage d&rsquo;\u00eatre facilement v\u00e9gane avec du lait v\u00e9g\u00e9tal.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pourquoi l&rsquo;huile donne une meilleure texture que le beurre<\/h3>\n\n\n\n<p>C&rsquo;est contre-intuitif pour quelqu&rsquo;un form\u00e9 \u00e0 la p\u00e2tisserie fran\u00e7aise, o\u00f9 le beurre est roi. Mais dans une brioche de type ensaimada, l&rsquo;huile apporte quelque chose que le beurre ne peut pas donner : une l\u00e9g\u00e8ret\u00e9 filante, une mie qui s&rsquo;effiloche plut\u00f4t que de se couper. Le beurre, en solidifiant au froid, rigidifie la mie. L&rsquo;huile reste liquide et garde la brioche souple longtemps apr\u00e8s la sortie du four.<\/p>\n\n\n\n<p>Le saindoux traditionnel fonctionne sur le m\u00eame principe : une mati\u00e8re grasse qui reste fluide \u00e0 la manipulation de la p\u00e2te, mais l&rsquo;huile v\u00e9g\u00e9tale neutre donne un r\u00e9sultat comparable sans les contraintes d&rsquo;approvisionnement et sans go\u00fbt parasite.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variantes pour adapter la recette<\/h3>\n\n\n\n<p><strong>Version v\u00e9gane :<\/strong> remplacez le lait entier par du lait d&rsquo;avoine ou de soja. Le r\u00e9sultat est identique en texture. Le lait d&rsquo;amande fonctionne aussi, avec un l\u00e9ger go\u00fbt suppl\u00e9mentaire qui se marie bien avec le sucre glace.<\/p>\n\n\n\n<p><strong>Version garnie (ensaimada de cabello de \u00e1ngel) :<\/strong> la version traditionnelle majorquine la plus connue est garnie de cheveux d&rsquo;ange, une confiture de courge filamenteuse. \u00c9talez une fine couche sur la p\u00e2te avant de l&rsquo;enrouler en spirale. On en trouve en bocal dans les \u00e9piceries espagnoles et les grandes surfaces andorranes.<\/p>\n\n\n\n<p><strong>Version chocolat\u00e9e :<\/strong> \u00e9talez une fine couche de p\u00e2te \u00e0 tartiner sur les boudins avant de les enrouler. La p\u00e2te emprisonne le chocolat dans les couches de la spirale.<\/p>\n\n\n\n<p><strong>Version individuelle ou familiale :<\/strong> la recette donne 6 ensaimadas individuelles, mais vous pouvez aussi former une seule grande spirale dans un moule \u00e0 tarte pour une version \u00e0 partager, fa\u00e7on couronne.<\/p>\n\n\n\n<p>Si vous aimez les brioches du quotidien avec une touche ib\u00e9rique, vous appr\u00e9cierez aussi ma <a href=\"https:\/\/sommerfoodle.com\/fr\/recipe\/recette-coca-brioche-catalane\/\">coca catalane<\/a>, une autre viennoiserie typique que l&rsquo;on trouve en Andorre.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Erreurs \u00e0 \u00e9viter<\/h3>\n\n\n\n<p><strong>Utiliser du lait trop chaud pour la levure.<\/strong> La levure fra\u00eeche meurt au-dessus de 40\u00b0C. Un lait trop chaud tue les micro-organismes et la p\u00e2te ne l\u00e8ve pas. V\u00e9rifiez la temp\u00e9rature avec le poignet : le lait doit \u00eatre ti\u00e8de, pas chaud.<\/p>\n\n\n\n<p><strong>Ne pas p\u00e9trir assez longtemps.<\/strong> Dix minutes de p\u00e9trissage, c&rsquo;est le minimum pour d\u00e9velopper le r\u00e9seau de gluten qui va donner l&rsquo;\u00e9lasticit\u00e9 et le filant caract\u00e9ristiques de l&rsquo;ensaimada. Une p\u00e2te sous-p\u00e9trie donne une brioche dense et sans m\u00e2che. Au robot avec le crochet, comptez 8 \u00e0 10 minutes \u00e0 vitesse moyenne.<\/p>\n\n\n\n<p><strong>Pr\u00e9cipiter les temps de pousse.<\/strong> La premi\u00e8re lev\u00e9e doit durer au moins une heure, id\u00e9alement deux, jusqu&rsquo;au doublement du volume. La deuxi\u00e8me pousse apr\u00e8s fa\u00e7onnage est tout aussi importante. Raccourcir ces \u00e9tapes donne des brioches compactes. Si votre cuisine est froide, placez le bol dans un four \u00e9teint avec juste la lumi\u00e8re allum\u00e9e.<\/p>\n\n\n\n<p><strong>Trop serrer les spirales.<\/strong> En enroulant les boudins, laissez un peu d&rsquo;espace entre les spires. En levant, la p\u00e2te va gonfler et combler ces espaces naturellement. Si vous serrez trop, les spirales se d\u00e9forment \u00e0 la cuisson.<\/p>\n\n\n\n<p><strong>Saupoudrer le sucre glace sur une brioche encore chaude.<\/strong> Le sucre glace fond imm\u00e9diatement au contact de la chaleur et dispara\u00eet. Attendez que les ensaimadas soient compl\u00e8tement refroidies, le visuel est bien meilleur et le sucre reste en surface.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Ces ensaimadas font partie des recettes qui me rappellent pourquoi j&rsquo;aime vivre ici.
